⅓ cup extra virgin olive oil
⅓ cup red wine vinegar
1 teaspoon brown sugar
¼ teaspoon freshly ground black pepper
5 ounces mixed baby greens
2 green onions, chopped
½ cup chopped celery
1 carrot, julienned
½ cup broccoli florets
½ cup cauliflower florets
1 avocados - peeled, pitted and diced
1 teaspoon fresh lemon juice
2 ounces grated Asiago cheese
3 ounces pine nuts, toasted
4 ounces kumquats - rinsed, seeded and sliced

Steps:

  • To prepare the dressing, place extra virgin olive oil, red wine vinegar, brown sugar, and pepper in a small container with a lid. Shake well to blend.
  • In a medium bowl, toss together baby salad greens, green onions, celery, carrot, broccoli, and cauliflower. Sprinkle avocado with lemon juice, and toss into the mixture. Sprinkle mixture with Asiago cheese and pine nuts. Toss in kumquats. Serve with the olive oil dressing.

ASIAN CHICKEN WITH KUMQUAT SAUCE

Traditional roasted chicken meets nontraditional flavors of soy sauce, sherry and a citrus sauce. Tantalizing!

1 whole chicken (3 to 3 1/2 lb)
3 tablespoons dry sherry or orange juice
2 tablespoons soy sauce
1/2 teaspoon garlic powder
1/3 cup thinly sliced preserved kumquats
1/2 cup orange juice
3 tablespoons orange marmalade
1 tablespoon lemon juice
1/4 teaspoon ground ginger
1 tablespoon cold water
2 teaspoons cornstarch
2 tablespoons slivered almonds, toasted
1 tablespoon orange-flavored liqueur, if desired

Steps:

  • Heat oven to 375°F. Fold wings of chicken across back with tips touching. Tie or skewer drumsticks to tail. Place chicken, breast side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of inside thigh muscle and does not touch bone.
  • Roast uncovered 45 minutes. In small bowl, mix sherry, soy sauce and garlic powder; brush on chicken. Roast uncovered about 45 minutes longer, brushing once or twice with sherry mixture, until thermometer reads 180°F and juice is no longer pink when center of thigh is cut. Discard any remaining sherry mixture
  • Remove seeds from kumquats. In 1-quart saucepan, mix orange juice, orange marmalade, lemon juice and ginger. Heat to boiling. In small bowl, mix water and cornstarch; stir into orange juice mixture. Heat to boiling, stirring constantly. Boil and stir about 1 minute or until thickened. Stir in kumquats, almonds and liqueur. Serve chicken with sauce.

5 kumquats
4 handfuls baby arugula
1/2 cup flat-leaf parsley leaves
2 Medjool dates, pitted and diced
1/4 cup Parmesan shavings (made +++with a vegetable peeler)
2 teaspoons lemon juice
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Slice the kumquats into thin rounds, discarding the seeds. Combine the arugula, parsley, dates, kumquats and Parmesan in a large bowl. Whisk together the lemon juice and olive oil; season with salt and pepper. Pour over the salad and toss.

Grilled Chicken with Kumquat-Lemongrass Dressing image

1 teaspoon chili powder
2 teaspoons turmeric powder
1 tablespoon sugar
Coarse salt
4 boneless, skinless, chicken breast halves, skin on
Olive oil, for drizzling
Kumquat-Lemongrass Dressing
Cilantro leaves, thinly sliced
Steamed asparagus, for serving (optional)

Steps:

  • In a small bowl, mix together chile powder, turmeric, and sugar; season with salt. Rub chicken with spice mixture, place in a dish, cover, and refrigerate at least 2 hours or up to overnight.
  • Preheat oven to 450 degrees. Preheat grill pan over medium-high heat.
  • Drizzle chicken breasts on with olive oil and place on grill pan. Cook until browned, turning once. Transfer chicken to a baking sheet and continue cooking in the oven, until cooked through, 10 to 12 minutes. Divide asparagus between 4 serving plates. Top each with a chicken breast. Spoon dressing over chicken, garnish with cilantro, and serve.

MOROCCAN CHICKEN WITH KUMQUATS AND PRUNES



Moroccan Chicken with Kumquats and Prunes image

2 tablespoons olive oil
1 4-pound chicken, cut into 8 pieces
2 onions, chopped
1 1-pound butternut squash, peeled, seeded, cut into 3/4-inch pieces
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon saffron threads
2 cups chicken stock or canned low-salt broth
4 ounces kumquats, quartered lengthwise, seeded
4 ounces pitted prunes
2 tablespoons honey
Freshly cooked rice or couscous
Chopped fresh cilantro

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle chicken with salt and pepper, add to skillet and brown, about 7 minutes per side. Transfer chicken to plate. Pour off all but thin film of fat from skillet. Add onions, reduce heat to medium and sauté until very tender and beginning to brown, about 10 minutes. Add squash and stir 2 minutes. Add cinnamon, cumin and saffron and stir until fragrant, about 30 seconds. Add chicken stock and bring to boil, scraping up browned bits. Add chicken with any drippings on plate, kumquats, pitted prunes and honey.
  • Cover skillet and simmer until chicken is cooked through, turning occasionally, about 30 minutes. Uncover and boil until liquid thickens to sauce consistency if necessary. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Rewarm covered over medium heat.)
  • Mound rice or couscous on plates. Spoon chicken and sauce over. Sprinkle with cilantro and serve.
