6 chicken breasts or 6 chicken thighs, lightly poked all over with a knife
1 1/2 cups fresh lemon juice
1 teaspoon salt
1 teaspoon finely ground cayenne pepper
2 teaspoons paprika
1 teaspoon coriander powder
1 teaspoon cumin powder
1 1/2 cups melted ghee or 1 1/2 cups butter
1 1/2 cups cashews (hand chopped)
1 1/2 cups garlic cloves, thinly sliced in round pieces
1 1/2 teaspoons ground cayenne pepper
1 pinch salt
1 pinch black pepper
canola oil
3 tablespoons ghee or 3 tablespoons butter
2 tablespoons fresh lemon juice

Steps:

  • Thoroughly mix all the Marinade ingredients with the chicken in a large mixing bowl.
  • Cover and set aside in the refrigerator for at least three hours.
  • Preheat oven to 350º F GARLIC In a small baking tray, mix the garlic with salt, ground cayenne pepper and black pepper and approximately 1 teaspoon of canola oil.
  • Place garlic tray in oven.
  • Mix the garlic after 4 or 5 minutes and place back in oven for an additional 4 minutes.
  • Since all ovens vary in temperature, keep checking through oven window to make sure the garlic isn't burning.
  • CASHEWS In a small baking tray, place cashews in a single pile.
  • Place tray in oven.
  • Mix the cashews after 4 or 5 minutes and place back in oven for an additional 4 or 5 minutes.
  • Keep checking through the oven window to make sure the cashews aren't burning.
  • Mix the roasted garlic and cashews and set aside.
  • Heat the 2 tablespoons ghee in a heavy, small pot.
  • Add 2 tablespoons of fresh lemon juice and immediately reduce heat to low.
  • Grill the marinated chicken.
  • Once the chicken is cooked through, but while it is still on the grill, glaze both sides of the chicken with the ghee-lemon dressing.
  • Serve the garlic-cashew mixture over freshly grilled marinated chicken breasts.

1 tbsp groundnut oil or sunflower oil
340g pack of mini chicken breast fillets (sometimes called goujons)
2 garlic cloves , sliced
200g pack tender stem broccoli , stems halved if very long
200ml chicken stock
1 heaped tsp cornflour
1 tbsp clear honey or 2 tsp golden caster sugar
the zest of half a lemon and the juice of a whole one
a large handful of roasted cashews

Steps:

  • Heat the oil in a large frying pan or wok. Add the chicken and fry for 3-4 minutes until golden. Remove from the pan and add the garlic and broccoli. Stir fry for a minute or so then cover and cook for 2 minutes more, until almost tender.
  • Mix the stock, cornflour and honey or sugar well, then pour into the pan and stir until thickened. Tip the chicken back into the pan and let it heat through, then add the lemon zest and juice, and cashew nuts. Stir, then serve straight away with basmati rice or noodles.

A savory, fast weeknight meal, these drumsticks will roll off the broiler pan or grill juicy and burnished, and the cashew sauce is even more marvelous than most peanut satays. It has a salty, buttery richness that tames the heat from the chili, and a touch of sweetness from a dash of brown sugar.

1 cup roasted, salted cashew nuts
6 tablespoons chopped cilantro, with some stems
1/4 cup canola or safflower oil
4 garlic cloves, roughly chopped
2 tablespoons soy sauce
2 teaspoons brown sugar
1 to 2 jalapeño peppers, sliced (discard seeds or not, to taste)
Juice of 1 lime, plus lime wedges for garnish
Kosher salt and freshly ground black pepper
3 pounds chicken thighs and/or drumsticks

Steps:

  • In a blender or food processor, combine nuts, 2 tablespoons cilantro, oil, garlic, soy sauce, sugar, jalapeño, lime juice and 2 tablespoons water. Blend until smooth, scraping down sides as necessary. Taste and season with salt and pepper if desired.
  • Season chicken all over with salt and pepper. Smear on enough cashew mixture to thoroughly coat pieces. (Set aside any remaining mixture.) Let marinate at room temperature while you heat grill or broiler. Or refrigerate for up to 12 hours before cooking.
  • Preheat broiler or grill. Grill or broil chicken, turning frequently, until it is crisp and golden on outside and done on inside (cut a small nick to check), 20 to 30 minutes.
  • Sprinkle chicken with remaining cilantro and serve with lime wedges and remaining cashew mixture.
