CHICKEN PARMESAN HOAGIE SANDWICH

I made these for dinner last night and my husband LOVED them! In fact, my 22-month old daughter loved them, too! You can actually make a bunch of the chicken breasts ahead of time and freeze them. When ready to eat, just add the tomato sauce and mozzarella cheese and you're golden! Quick, easy, yummy chicken parm sandwiches. Perfect for Superbowl Sunday or any other time you need a great hoagy sandwich! We really liked these. Hope you do, too. :D Oh yeah, the chicken breasts I use are sliced to make them thinner and easier to cook evenly. If you have thicker breasts, you'll need to cook these longer in the oven. ENJOY!

4 boneless skinless chicken breast halves
1 egg, beaten
1/2 cup breadcrumbs
1/4 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 cup tomato sauce (I use Authentic Italian Tomato Sauce)
3/4 cup shredded mozzarella cheese
4 hoagie rolls
canned jalapeno (optional)
olive oil (for frying)

Steps:

  • Add the breadcrumbs, Parmesan cheese, oregano, paprika, garlic powder, salt and pepper to a Ziplock bag and shake to mix well.
  • Pour into a low flat bowl or onto some waxed paper.
  • Drop each chicken breast into the beaten egg and dredge in the breadcrumb, Parmesan cheese and herb mixture.
  • Heat a few tablespoons of olive oil over medium high heat in a pan.
  • Add the breaded chicken breasts, two at a time so as not to over-crowd the pan.
  • Cook on medium high heat for about 3 minutes per side.
  • Remove breasts to a paper towel-lined plate and fry the other two chicken breasts.
  • Place the cooked chicken breasts on a baking dish and cover each breast with 1/4 cup tomato sauce.
  • Sprinkle shredded mozzarella cheese over each one.
  • Place in a 400-degree oven for 8 to 10 minutes or long enough to melt the cheese and get the tomato sauce nice and hot.
  • I add the hoagie rolls to the oven when there is about 5 minutes left to get them nice and toasty and crusty.
  • Slice the hoagie rolls, add the chicken Parmesan breast and top with sliced jalapenos, if desired.
  • YUM!

1 1/2 lbs boneless skinless chicken breasts, sliced in strips
1 sliced large onion
1 -2 sliced green bell pepper
1 (8 ounce) can sliced mushrooms
2 tablespoons kraft zesty Italian dressing
2 tablespoons vegetable oil
4 -6 inches hoagie rolls
8 ounces sliced provolone cheese
1 tomatoes
2 cups shredded lettuce
mayonnaise, if desired

Steps:

  • Heat oil in skillet, add onions, peppers & mushrooms. Continue to stir occasionally. Until they are browned and onions start to carmelize.
  • While they are cooking, place chicken in a nonstick skillet and stir in italian dressing, cook on medium/high heat. Continue to stir as needed, until chicken is cooked throughly.
  • Pre-heat oven to 400°F.
  • Place hoagie buns open on a cookie sheet. Top each bun with 1/4 of chicken and 2oz of provolone.
  • Bake in oven for about 5 minutes, just until cheese is melted.
  • Top each with pepper mixture, lettuce, tomato and mayo if desired.

3/4 cup hot sauce (I like Frank's)
8 tablespoons (1 stick) unsalted butter
1 rotisserie chicken, skin discarded and meat shredded
1 rotisserie chicken, skin discarded and meat shredded
One 2-foot Italian bread loaf, sliced in half lengthwise
1 stalk celery, thinly sliced
1 small head iceberg lettuce, shredded
Blue Cheese Ranch, recipe follows
1 cup crumbled blue cheese
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced chives
1 tablespoon vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and freshly ground black pepper

Steps:

  • Put the hot sauce and butter in a small skillet and heat until melted and combined. Let cool slightly, then pour over the shredded chicken in a medium bowl and toss to coat completely.
  • To assemble the sandwich, spread the chicken in an even layer on the bottom half of the bread. Top with the sliced celery and an ample amount of shredded lettuce. Spread the Blue Cheese Ranch on the top half of the bread and close the sandwich, using toothpicks to secure it. Cut into pieces and serve.

1 pork tenderloin, trimmed
3 skinless, boneless chicken breasts (1 1/4 to 1 1/3 pounds)
EVOO, for drizzling
Montreal Grill Steak Seasoning
Salt and freshly ground pepper
1 cup drained giardiniera
Four 10-to-12-inch white Italian sub rolls
Sliced provolone
Chopped romaine lettuce
Sliced tomato
Thinly sliced red onion
Hoagie Dressing, recipe follows
3 tablespoons red wine vinegar
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat-leaf parsley
2 teaspoons finely chopped fresh thyme
1 rounded teaspoon superfine sugar
1 large clove garlic, grated
1 shallot, minced or 3 tablespoons grated red onion
1/2 small Fresno chile pepper, finely chopped
Juice of 1/2 lemon
1/2 cup EVOO
1 rounded tablespoon Dijon mustard
Salt and freshly ground pepper

Steps:

  • Preheat the oven to 500 degrees F.
  • Drizzle the pork tenderloin and the chicken breasts with EVOO and sprinkle with the seasoning blend, salt and pepper. Place the pork on a rack set over a rimmed baking sheet and roast in the oven for 10 to 12 minutes. Reduce the heat to 425 degrees F and roast until a thermometer inserted into the thickest part of the pork registers 145 to 155 degrees F, about 15 more minutes (do not open the oven while it's cooking). Transfer the pork to a cutting board and let rest 5 minutes, if desired. Then very thinly slice on an angle.
  • Meanwhile, heat a cast-iron skillet or griddle over medium-high heat. Add the chicken and cook, flipping occasionally, until firm but not tight and the juices run clear, 12 to 15 minutes. Transfer to a cutting board and let rest 5 minutes, if desired. Then thinly slice on an angle.
  • Pulse the giardiniera in a food processor until finely chopped.
  • Layer the chicken and pork on the rolls and top with the cheese, lettuce, tomato and red onion. Scatter the giardiniera relish over the top, then drizzle with the hoagie dressing.
  • In a mixing bowl, combine the vinegar, herbs, sugar, garlic, shallot, chile pepper and lemon juice. Whisk in the EVOO in a slow stream. Add the mustard and season with salt and pepper, then whisk until emulsified.

I was looking for more then a club sandwich and my hubby loves hoagies so I took the two and made it into the best sandwich we ever ate it makes six so it's perfect for game night or picnic!

3 boneless chicken breast
3/4 c kona coast marinade & grilling island teriyaki
16 oz jar mezzetta deli-sliced mild pepper rings
6 slice gouda cheese
12 slice bacon
18 slice tomatoes
12 butter lettuce leaves
8 oz coleslaw deli style
6 small hoagie rolls

Steps:

  • 1. Slice chicken breast in half horizontally and place in between plastic wrap. With a mallet pound chicken into thin cutlets about ¼ inch thick place in a zip lock bag with Kona coast marinade and marinate 30 minutes.
  • 2. In a frying pan cook bacon until crispy place on paper towel to drain excess fat.
  • 3. Preheat grill on medium high heat and cook chicken for 5 minutes turn and cook additional 4 minutes.
  • 4. Cut rolls in half and place cut side down and grill just until lightly toasted
  • 5. To assemble sandwich on bottom roll place one layer of the pepper rings top with chicken cutlet, a slice of cheese, 2 pieces of bacon, 3 slices tomatoes, 2 lettuce leaves and 2 tablespoon coleslaw top with top bun. Repeat for remaining five sandwiches.

  • 1. Place Frozen Prepackaged grilled chicken on Microwave safe plate (1/4 of a cup). Heat until thawed. Approximately 2min. Depending on your Microwave.
