CORN AND FARRO SALAD

Steps:
- Preheat a grill or grill pan to medium-high heat.
- Drizzle the corn with 2 tablespoons olive oil and sprinkle it with salt and pepper. Add the corn to the grill and cook, turning occasionally, until the corn starts to char, 6 to 8 minutes. Set the corn aside to cool slightly.
- In a large bowl, whisk the remaining 3 tablespoons olive oil with the capers, chopped parsley, vinegar and mustard. Sprinkle with salt and pepper. Add the farro, mozzarella, tomatoes, olives and cucumber and toss to coat with the dressing. Cut the corn kernels from the cob. Fold the corn and avocado into the farro mixture. Sprinkle with the parsley leaves. Serve immediately, or chill until ready to serve.
CORN SALAD WITH GOAT CHEESE
This is the perfect side for in season corn and doesn't require any cooking. Simply cut the corn kernels off the cob and let it sit in the vinaigrette before tossing with the rest of the ingredients. The kernels will soften slightly and absorb flavor from the vinaigrette.

- Soak 1 small sliced shallot in ice water. Whisk 2 tablespoons white balsamic vinegar, 1 tablespoon lemon juice, 1 teaspoon honey and 3 tablespoons olive oil in a large bowl. Add the kernels from 4 ears of corn and season with salt; toss and let sit, 5 to 10 minutes. Drain the shallot and pat dry, then add to the corn along with 2 cups baby arugula and 1/4 cup sliced basil; toss. Season with salt and pepper and top with crumbled goat cheese.
CHICKEN, GREEN BEAN AND GOAT CHEESE SALAD

- Preheat oven to 450°F. Arrange chicken breasts in single layer in jelly roll pans or baking pans. Brush both sides with soy sauce and olive oil. Sprinkle both sides with pepper. Arrange skin side up. Roast until just cooked through, about 20 minutes. Cool slightly. Skin and bone chicken; reserve drippings in pans. Cut chicken into 1/2-inch-wide strips. Return to pans and turn to coat with drippings. Cool. Transfer chicken meat and drippings to large bowl. Set aside.
- Cook beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain. Refresh with cold water. Drain well. (Can be prepared 1 day ahead. Cover chicken and beans separately and refrigerate.)
- Combine mustard and vinegar in medium bowl. Gradually whisk in oil. Add shallots and 2 tablespoons thyme. (Can be prepared 1 day ahead. Store dressing at room temperature.)
- Add beans, dressing and walnuts to chicken and toss to coat. Season with salt and pepper. Line platter with kale. Top with salad. Sprinkle with cheese and additional thyme and serve.
FARRO, PEA SHOOT, AND GOAT CHEESE SALAD
This salad uses tendrils of young pea plants along with the peas to go with farro, a wheat-based grain.

- Cook farro, according to package directions and let cool to room temperature. Transfer to a large bowl.
- As farro cooks, bring a small pot of salted water to a boil. Add peas and cook until tender, about 2 minutes. Drain and run under cold water.
- Add peas, pea shoots, mint, almonds, and lemon zest to farro. Toss with lemon juice and olive oil. Season with salt and pepper. Top with goat cheese.

MIXED GREEN SALAD WITH CHICKEN, GREEN BEANS, GOAT CHEESE AND WARM BACON DRESSING

- For Dressing: 1) Cook off the bacon, reserving 1/4 cup of drippings. Store 1/2 of the bacon pieces for another use. 2) Return the drippings to the pan. Add the sliced red onion, balsamic vinegar, thyme, and mustard. Heat through, scraping any browned bits off bottom of pan. Add EVOO to taste to make the dressing consistency to your liking. Salt and pepper to taste. Set aside until salad components are prepared and ready to be tossed. Keep warm. For Salad: 1) Boil green beans just until crisp-tender, about 4 minutes. 2) Crush or chop walnuts. Sprinkle with paprika to cover. Toast in hot pan, shaking, for 5-10 minutes, until brown. Remove from pan and let cool. 3) Arrange greens on 4 plates. Top with equal amounts of chicken, green beans, walnuts, bacon, and thyme. Drizzle dressing over. 4) Sprinkle 1 oz crumbled goat cheese over each salad.
