CHICKEN GOULASH
Mouth-watering Hungarian goulash brimming over with chicken, onions and mushrooms. Paprika gives color and adds a spicy bite to the dish. Goulash originated in Hungary, and one of its most important ingredients is paprika which, together with tomatoes, produces a rich, deep red sauce. The best paprika still comes from Hungary, where it is produced in varieties that range from mild to very hot. Caraway seeds are added for texture and to help give the sauce its characteristic flavour. Traditionally, goulash is made with veal or pork, but it is adaptable to most meats, particularly chicken. Serve with baked or mashed potatoes and steamed green vegetables, such as cabbage and green beans.

Steps:
- Remove the skins from the chicken thighs. Heat a little of the skin in a nonstick frying pan and add the chicken.
- Cook over a medium heat for about 15 minutes, until well browned on all sides.
- Meanwhile, peel and roughly chop the onions. Remove the chicken from the frying pan, discard the skin, and pour away all but 1 tablespoon of fat.
- Cook the onions in the pan with the paprika and caraway seeds for about 3 minutes, then add the mushrooms and cook for about 2 minutes.
- Add the tomatoes and the stock and bring to the boil. Reduce the heat to a simmer, then add the chicken. Cover the pan and simmer for about 30-35 minutes, until the chicken is tender.
- Remove the lid and reduce the liquid to a sauce consistency by fast boiling for 5 - 10 minutes, stirring frequently.
- Then sprinkle with the freshly chopped parsley and serve immediately.
CHICKEN AND PUMPKIN GOULASH
I needed to use up some chicken, and we had been given a lot of pumpkins...so I began to look for a recipe which would take advantage of my ingredients. However, everything I found was quite spicy and knew would not go over well with my grandchildren. I then came across a recipe which seemed to have promise, and used it as the basis for creating this...a new family favorite! I hope you enjoy as much as my family did.

Steps:
- Set a slow cooker to High, and place diced tomatoes and brown sugar into the cooker; stir to combine.
- Heat olive oil in a non-stick skillet over medium-high heat, and cook and stir onion until lightly browned, about 10 minutes. Mix in the ginger, cinnamon, cumin, and coriander; cook and stir until the spices release their fragrance, about 2 minutes. Stir in the chicken, and cook and stir until chicken is no longer pink. Mix the garbanzo beans into the chicken mixture, and bring to a simmer. Transfer the mixture into the slow cooker, and mix with tomatoes.
- Place pumpkin into the same skillet, and reduce heat to medium. Cook until the pumpkin is hot and some pieces are slightly browned, about 10 minutes, stirring often. Place pumpkin into the cooker, and cover.
- Cook the stew on the High setting for 1 hour; reduce cooker setting to Low, and cook until pumpkin is tender, 3 to 4 more hours. Season with salt and black pepper. If stew seems too liquid, mix cornstarch into water in a small cup until smooth, and stir the slurry into the stew. Cook until thickened, about 30 minutes.

- Heat the extra-virgin olive oil and butter in a large, deep skillet over medium to medium-high heat. Add the ground chicken. Brown the meat 3 to 4 minutes, push it off to the sides of the pan then add mushrooms, garlic, onions and peppers to the center of the pan. Cook the vegetables 5 minutes then mix them together with chicken and season with smoked paprika, salt and pepper. Stir in stock and tomato sauce and bring to a bubble. Reduce heat to a simmer and cook 5 minutes then stir in sour cream and turn off heat. Add parsley. Adjust seasonings, to your taste.
- While chicken goulash cooks, bring a medium pot of water to a boil. Salt boiling water and cook gnocchi until they puff up like pillows and float, 5 minutes or to package suggestions. Drain gnocchi and add to chicken just after you stir in the sour cream.
- Ladle goulash with gnocchi into shallow bowls and garnish with chives.
CHICKEN GOULASH
Ever since my daughter announced that she will no longer eat beef or pork, it has been somewhat a challenge to come up with new chicken recipes. This one has all around robust flavor and is a Hungarian specialty.

- 1. Cut chicken into 3/4 inch pieces. In a large frying pan, fry chicken in olive or vegetable oil until browned and no longer pink inside, about 5 minutes. Place in a bowl.
- 2. Add a little more oil to pan. Add mushrooms, onion, green pepper, garlic, paprika, salt, pepper and thyme. Cook over medium heat, stirring occasionally until onion is soft, about 5 minutes. Add flour and cook, stirring for about a minute. Stir in chicken stock and tomato paste; cook, stirring often, until thickened enough to coat back of spoon, about 5 minutes.
- 3. Place chicken back into pan and mix well. Add parsley and sour cream. Stir until warm. Serve with egg noodles, gluten-free noodles, gnocchi or rice. Enjoy!
CROCK POT CHICKEN GOULASH RECIPE - (4/5)

- In a medium sized skillet, heat the olive oil over medium heat. Add the onions and saute until tender. Add to the slow cooker. Add the bell pepper, jalapeno pepper and garlic cloves to the skillet. Cook until soft and tender. Add to the slow cooker. Add the remaining ingredients to the slow cooker and stir to mix. Cook on low for 5 - 6 hours or on high for 2 1/2 - 3 hours. Once the chicken breasts are cooked thoroughly remove them from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and stir to mix. If you find that this is too runny, mix in a couple of tablespoons of tomato paste to thicken it.

- Cut chicken breast into thin strips.
- Peel and slice onions.
- Wipe mushrooms clean and slice.
- Heat oil in a large pan.
- Add chicken and lightly brown.
- Add onion and mushroom.
- Season with paprika, chili powder and salt and saute for 5 minutes.
- Remove pan from heat add the broth stirring to deglaze the pan.
- Put pan back on heat bring to boil then reduce heat and simmer for 12-15 minutes.
- Stir flour into the sour cream.
- Taste the goulash to make sure it has enough spice if not then add to your taste.
- Add roasted peppers to and sour cream to pan and stir to mix well.
- Bring back to boil for about a minute.
- Can be served over rice or broad egg noodles.
- Enjoy.

- Chop onions and bacon, slice mushrooms and mince garlic.
- In stock pot heat olive oil, add onions, bacon, garlic and mushrooms. Saute until onions are translucent, and bacon is browned about 5 minutes.
- Cut chicken into bite size chunks.

- In a food processor,combine the roasted peppers,tomato paste and paprika and puree until smooth-set aside.
- In a large,nonstick skillet,heat oil over medium heat and add onions and garlic.

- Lightly saute the onions in 1 Tbsp of the oil until golden.
- Meanwhile place the seasoned flour and paprika in a mixing bowl, add the chicken to coat. Remove the onions from the pan, Add the rest of the oil and saute the chicken for 2 - 3 minutes.
- Return onions to the pan, add the tomato paste, wine and stock.
- Bring to the boil and simmer for 6 - 7 minutes.
- Remove pan from the heat and stir in the yoghurt. (This can be made in advance and stored in the refrigerator.) CRUST Place the butter, sour cream and egg into a bowl, mix to combine. Stir in the flour and parsley to form a soft dough.
- Press the dough into a lightly greased casserole or flan dish, working it well up the sides to a thickness of 12 mm.
- Spoon the filling, cover and bake at 180C for 35 minutes.
- Uncover and bake for a further 10 minutes or until golden and crusty.

- Saute celery, onion and bell pepper in butter until soft. *I do not like crunchy veggies so I start with the celery because it takes the longest, then after a few minutes I add the onions and then the bell peppers.
- Once the veggies are the way you like them add the chicken and brown for a few minutes.

- Start by filling a large pot with water and bringing it to a boil.
- Meanwhile, Using a large deep skillet (the bigger the better) coat it with olive oil and brown ground chicken.
- push the chicken to the sides and add garlic, onions, mushrooms and peppers. Cook until vegetables are soft for about 5 minutes.
- Mix vegetables and chicken in pan and add paprika, tomato sauce, and chicken broth.
- Bring to a boil and reduce heat to simmer.
- Your water should be boiling by now, add gnocci and cook for about 3-4 minutes until it puffs up and begins to float. Drain.
- Add half cup of heavy cream to sauce mixture and reduce heat to low. Stir to make sure it combines well. Add salt and pepper to taste.
- Add gnocci to sauce mixture and allow to absorb flavors for about 5 minutes.
- Garnish with parsley and serve.

- Cut onion into strips. Mice the garlic. Over medium flame, heat oil in a large pot and add the onion and garlic. Cook stirring until onions are translucent. Be careful not to brown them. Next cut peppers into strips, carrots into slices and add to the onions. Add about a cup of the stock and bring to a boil. Reduce heat all the way to low, cover the pot and let everything simmer for about an hour or until very soft. Cut chicken into cubes and season to preference. In a separate pot cook chicken on cooking spray. Add to the vegetable stew and add the rest of the stock if it seems dry. Cut up tomatoes into cubes, add along with the tomato sauce into the chicken/vegetable mixture. Season with paprika. Add salt and pepper to taste. Let everything simmer for another 30 minutes or so. Mix cornstarch with water and add to the mixture. Let it come to a boil. Serve!

CHICKEN GOULASH WITH PAPRIKA

- Brown the chicken thighs in veg. oil for 10min in a dutch oven, add salt and pepper to taste. Remove the chicken from the dutch oven and add diced onion, garlic, and bacon. Heat for few minutes until fragrant then add tomato paste and paprika. Mix well to combine. Add the chicken back to the dutch oven and combine with the mixture. Add red bell pepper cut into cubes. Remove seeds from the tomatoes, dice, and add to the pot too. Cook for 1 hour mixing couple times. You can add water or chicken stock if you think there is not enough sauce. I like the goulash thick, so I increase the burner to medium for the last 10-15 minutes to get rid of some moisture.

CHILLI CHICKEN GOULASH

- Cube the chicken and carrots and dice the onions, peppers,garlic and leek. Saute until the chicken is lightly browned.
- Add the mixture to a casserole dish. Finely chop the chillies and add, along with the tinned tomatoes, caraway seeds, paprika and cayenne pepper.
- Make up the chicken stock. Stir in the worcester sauce and tomato puree.
- Pour the chicken stock mixture into the casserole dish and give a quick stir.
- Bake in the oven at 180 degrees C, or 160 degrees C in a fan oven or Gas Mark 4.
