We like to eat healthy when we can without sacrificing taste. This is our way of indulging once in while. It also works great to make ahead for company!!

1 lb cinnamon raisin bread, cubed
3/4 c dried cranberries
1 pt egg substitute
4 c skim milk
2 tsp vanilla extract
1 tsp ground cinnamon
1 pkg al fresco country style chicken breakfast sausage, sliced into rounds
confectioners' sugar

Steps:

  • 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.
  • 2. Beat the egg substitute, skim milk and vanilla extract and cinnamon in a medium bowl with a whisk.
  • 3. Pour the egg mixture over the bread cubes.
  • 4. Stir and press the bread cubes into the egg mixture to coat.
  • 5. Refrigerate for 1 hour or overnight.
  • 6. Bake at 350°F. for 45 minutes or until a knife inserted in the center comes out clean.
  • 7. Sprinkle with the confectioners' sugar. Serve with butter and syrup if desired.

4 garlic cloves, peeled
2 cups grape tomatoes (can probably even use a drained can of tomatoes) or 2 cups cherry tomatoes (can probably even use a drained can of tomatoes)
3 cups penne pasta (I use mezze which is the small penne )
3 cups chicken broth
3/4 cup dry white wine (I use Pinot Grigio)
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1 1/4 cups fresh basil leaves, lightly packed, divided
1 ounce parmesan cheese, grated (about 1/4 cup packed)
2 cups grilled chicken breasts, diced (if you dont have leftovers just cook up a breast or two using any quick method, I cut up and mw for )
additional grated fresh parmesan cheese (optional)

Steps:

  • Spray a mw safe lidded casserole. Add garlic and tomatoes. Cover; microwave on HIGH 4-5 minutes or until tomatoes begin to burst, stirring after 2 minutes. Crush tomatoes with fork and add uncooked pasta, broth, wine, salt and black pepper.
  • Return baker to microwave; cover and microwave on HIGH 16-18 minutes or until pasta is tender, stirring after 10 minutes.
  • Meanwhile, grate cheese and coarsely chop basil, reserve about 1/4th for later.
  • Carefully remove baker from microwave and remove lid, lifting away from you. Add remaining basil, cheese and chicken to baker; mix well.
  • Garnish with reserved basil, additional Parmesan cheese and black pepper, if desired.
  • Tips: An additional 3/4 cup chicken broth can be substituted for the wine, if desired.
  • Any tube-shaped pasta requiring 9-11 minutes cook time, such as penne or rigatoni, can be substituted for the mezze penne pasta.
  • To grill chicken in the Grill Pan, season 2 chicken breasts, about 6 oz each, with salt and black pepper. Heat Grill Pan over medium-high heat 5 minutes. Spray pan with oil. Cook chicken 4-6 minutes or until grill marks appear. Turn chicken over; cook 4-6 minutes or until center of chicken is no longer pink and Pocket Thermometer registers 170°F.

3/4 cup milk
1 1/3 cups water
1 tablespoon butter
1 (4 7/8 ounce) pasta roni angel hair pasta with herbs mix, by Rice-A-Roni
1 1/2 cups cooked chicken, chopped
2 medium tomatoes, chopped
1/4 cup green onion, sliced
1/2 teaspoon basil
1/2 cup white cheese

Steps:

  • In large saucepan, combine water, milk and butter. Bring just to a boil.
  • Stir in pasta, contents of seasoning packet, chicken, tomatoes, onions and basil. Return to a boil, reduce heat to medium.
  • Boil, uncovered, stirring frequently 6 to 8 minutes. Sauce will be thin, but will thicken upon standing.
  • Sprinkle white cheese on top of each serving.

Olive oil
1/2 small red onion, coarsely chopped
2 cloves garlic, coarsely chopped

1 lime, juiced
2 tablespoons honey
1 1/2 cups shredded rotisserie chicken
8 blue corn tortillas
1 cup crumbled queso fresco

Steps:

  • Preheat the grill to medium. Add the blackened tomatillos and serrano to a small saute pan and briefly saute in a little olive oil on the grates of the grill.
  • Place the tomatillos, serrano, onion, garlic, cilantro, lime juice, and honey in a blender and blend until smooth. Place the tomatillo mixture in a large saute pan and place on the grates of the grill. Bring the mixture to a simmer, add the chicken, and heat through.
  • Place the tortillas on the grill, and grill for 20 seconds on each side. Spoon the chicken mixture into the tortillas and top with a few tablespoons of queso fresco. Fold the tortillas in half serve immediately.

1 (18 ounce) package al fresco® Frozen Italian Style Chicken Meatballs, thawed
Cooking spray (extra-virgin olive oil with garlic)
1 pint fresh red cherry tomatoes
1/2 pound asparagus, cooked and drained
1 white onion, medium slice (1/8 inch)
3 fresh garlic cloves
8 ounces linguini pasta, dry
1/4 cup extra virgin olive oil
1 1/2 teaspoons black pepper
1/2 cup fresh chopped basil leaves
1/4 cup low-sodium Parmesan cheese, grated
1/4 teaspoon salt

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the cherry tomatoes, asparagus, onion and garlic with 2 tbsp of the olive oil, and 1 tsp of the black pepper, spread on the sheet pan, and roast for 10 - 12 minutes. Stir half way, roast until nicely browned.
  • Meanwhile, cook the linguini according to package instructions, and reserve 3/4 cup of the pasta liquid. Drain pasta and reserve, keeping warm.
  • Prepare a large saute pan with cooking spray, and brown thawed al fresco Italian Style Chicken Meatballs over medium high heat for 4 - 5 minutes. Add the cooked pasta, roasted vegetables, and toss together.
  • Lower heat to medium, add remaining olive oil, basil, Parmesan cheese, salt, 1/2 tsp of black pepper, 1/2 cup of the pasta water (add remaining 1/4 cup if needed), toss well.
  • Serve immediately with crusty Italian bread.

This recipe is courtesy of Bobby Flay and it is fantastic! It is very simple to put together but has wonderful flavor for such minimal effort. When in a hurry, I have skipped grilling/blackening the tomatillos and serrano and just sautéed them in a hot pan until softened and the skins were slightly charred and it still tastes great. I highly suggest you blacken them on the grill if you have time because it adds a beautiful smokiness to the tomatillo sauce.

  • Add the blackened tomatillos and serrano to a small sauté pan and briefly sauté in a little olive oil over medium high heat.
  • Place the tomatillos, serrano, onion, garlic, cilantro, lime juice, and honey in a blender and blend until smooth. Place the tomatillo mixture in a large sauté pan. Bring the mixture to a simmer, add the chicken, and heat through. (You may also skip this last step and just drizzle the tomatillo sauce over the top of the chicken after you have placed it in the tortilla).
  • Run the tortillas under the tap to lightly moisten them and then place the tortillas on the grill or warm non-stick griddle, and grill for 20 seconds on each side. Spoon the chicken mixture into the tortillas and top with some cilantro and a few tablespoons of queso fresco. Fold the tortillas in half serve immediately.

Chicken tostados or tacos
1½ pounds bone-in chicken breast
2 medium cactus leaves (optional
¼ cup thinly sliced red onion
2 medium tomatoes, cored and cut into ½-inch dice
½ Serrano chili, stemmed and thinly sliced
1 tablespoon dried oregano
2 tablespoons olive oil
Juice of 2 limes
Salt
4 tostadas, preferably baked
¼ cup crumbled queso fresco
¾ avocado, thinly sliced lengthwise
¼ cup crema or sour cream (optional)
Place chicken in a lidded pot and just cover with water. Cover pot and set over medium-high heat. Simmer until chicken is just cooked through, about 20 minutes. If using cactus, bring a separate small pot of water to a boil. Use a vegetable peeler to remove bumps containing thorns from cactus leaves. Cut away base and any rough edges, and slice into 2-by-¼-inch strips. Simmer cactus until tender, 10-15 minutes. Drain and set aside.
Meanwhile, place onions, tomatoes, chilies and oregano in a medium bowl. Once chicken is cool enough to handle, discard skin and shred meat. Add chicken and cactus to bowl with vegetables. Toss with oil, lime juice and salt to taste.
Divide tostadas among four plates. Top with chicken mixture and garnish with queso fresco, avocado and crema, if using.

  • Steak Tacos 3 medium tomatoes, halved and cored 1 fresh Serrano chili, stemmed Salt 1 pound flank steak ½ tablespoon olive oil 3 tablespoons finely diced red onion 3 tablespoons finely chopped cilantro 2 large ripe avocados, halved and pitted 2 limes, cut into wedges 8 fresh corn tortillas 1. Place tomatoes and chili on a roasting tray and set under the broiler. Roast, turning once, until charred all over, about 12 minutes total. Meanwhile, in a small bowl, toss onions with cilantro and a pinch of salt. In another small bowl, make guacamole: Mash avocado with a fork. Season to taste with juice from a few lime wedges and salt. 4. Set a stovetop burner to high. Using tongs, hold each tortilla over burner until soft and charred in spots, less than 1 minute per side. Slice steak thinly against the grain. 5. Smear guacamole over tortillas. Top with sliced steak and onion-cilantro mixture. Serve with salsa and remaining lime wedges on the side.

1 Chicken Breast (I cooked four. Plenty of sauce for all plus more.)
1/2 ounce of balsamic vinegar
Salt and pepper to taste
Olive oil
3 slices of roma or vine ripened tomatoes
6-8 ounces of white wine
1 1/2 ounces of fresh lemon juice
5 ounces of heavy cream
1 stick of butter, cubed (I used unsalted)
fresh basil (not dry)

Steps:

  • Marinate the chicken in balsamic vinegar for about 30 minutes. (I used more than 1/2 ounce because I had more to marinate. Next time I will marinate a little longer. I also pounded my chicken breast.) Sauté chicken in enough olive oil to just keep the pan and chicken coated. Sauté chicken until cooked and plate. (I kept it covered in the pan on very low heat to keep it hot.) Place slices of tomato on top of the chicken breast. Combine white wine and lemon juice in a saucepan over low-medium heat until warm and almost a boil. Lower heat to low. Add heavy whipping cream and simmer for about 3 minutes to thicken sauce. Now add your cubed butter and whisk all together constantly. Once sauce is hot and a thicker consistency, pull from the stove and top over the plated chicken. Sprinkle fresh basil on top and serve.

1-2/3 pounds boneless chicken breast (grilled)
2 tomatoes (sliced)
4 Tablespoons butter
1/2 lemon (juiced)
1/4 cup white wine
1/2 teaspoon salt
2 ounces parmesan (grated)
1-1/2 teaspoons flour
balsamic vinegar (to taste)

Steps:

  • Pound chicken to about 1/2" thickness and cut into serving sized pieces.
  • Slice tomatoes, salt light and set aside for excess juices to drain.
  • Grill chicken or cook in skillet with cooking spray, salt and pepper.
  • Melt better in medium sized skillet over medium low heat.
  • Stir in lemon juice, wine, salt, and parmesan.
  • Whisk flour into sauce, stirring constantly to thicken slightly.
  • Top chicken with tomato slices, sauce and then drizzle with a good quality balsamic vinegar.

4 garlic cloves
2 cups cherry tomatoes
3 cups uncooked mezze penne pasta
3 cups chicken broth
3/4 cup dry white wine(ex Chardonnay)
1 1/4 cups lightly packed fresh basil
2 cups diced grilled chicken (cooked)
1/2 tsp salt
1/2 tsp pepper
1 oz. parmesan cheese grated

Steps:

  • Option- cook chicken in deep covered baker 6-7 min and chop with salad chopper. rub oil on Deep Covered Baker. Slice garlic or crush with garlic press into baker. Add tomatoes. Cover, microwave on High 4-5 min. Stir after 2 min. Add Pasta, broth, wine, salt and pepper. Cover and microwave on HIGH 16-18 min or until pasta is tender, stirring after 10 min. Meanwhile, coarsley chop basil. Reserve 2 tbsp for garnish. Grate cheese. Remove baker from microwave and remove lid. Add remaining basil,cheese and chicken to baker; mix well. Garnish with reserved 2 tbsp basil, additional Parmesan cheese and pepper.

12 boneless skinless chicken breasts or 12 chicken thighs
4 tablespoons achiote paste
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
8 ounces orange juice
1 teaspoon chili powder
1 teaspoon minced garlic
1 onion, sliced
24 ounces queso fresco
12 sprigs fresh cilantro

Steps:

  • Mix together all spices, Achiote Paste and Orange Juice.
  • Pour Marinade over Chicken and Marinate Overnight.
  • Remove Chicken from Marinade (Reserve Marinade).
  • Place Chicken on an sheet pan or roasting pan.
  • Top Each Chicken breast with 2 slices of onion.
  • Bake Chicken until done and onion is caramelized.
  • Bring Marinade to boil, reduce to simmer and allow to reduce to coat back of spoon.
  • Pan Chicken, Top with dash of marinade on each piece and top with Queso Fresco.
  • Serve, topped with cilantro.
