GRANNY FOSTER'S SUNDAY FRIED CHICKEN

Steps:
- Place chicken in a large bowl and cover with cold water. Add 2 tablespoons salt, the sugar, vinegar, and bay leaves and stir until salt and sugar dissolve. Cover and refrigerate overnight.
- Place buttermilk in a large, shallow bowl. Lift chicken from brine and transfer to buttermilk. In another large, shallow bowl or zip-top bag, stir or shake together flour, 1 tablespoon salt, 1/2 teaspoon pepper, and pinch of cayenne to combine.
- Line a platter with a brown paper bag and place near stove. In a large cast-iron skillet, heat shortening over medium-high until a deep-fry thermometer reads 350 degrees to 375 degrees (a small cube of bread should brown in less than 1 minute). Oil should be deep enough to come halfway up sides of chicken; the level will rise slightly when chicken is added. Beginning with larger pieces, lift chicken from buttermilk, letting excess drip off, and dredge or shake in flour mixture until evenly coated. Shake off excess.
- Working in batches, add chicken, skin side down, to pan (do not crowd pan); reduce heat to medium. Fry until golden brown on both sides and juices run clear when thigh is pierced with a knife (an instant-read thermometer inserted into thickest part of thigh, avoiding bone, should read 165 degrees), 10 to 12 minutes per side.
- Transfer chicken to platter to drain. Season with salt and pepper and let sit 10 minutes. Serve warm or at room temperature.
CHICKEN FOSTER
My dad made this for me a while back and I loved it. Now, I found the recipe and he told me to submit it. Chicken, bananas, and coconut rum make one interesting, tasty, tropical dish. Great for Luau parties. Serve with steamed vegetables and rice.

- Melt the butter in a large skillet over medium heat, and stir in the brown sugar. Season the chicken with salt and pepper, and toss with flour to coat. Add chicken and bananas to the skillet, and cook stirring occasionally until chicken is almost cooked through. Stir in the amaretto and rum, and heat through. Remove from the burner, and use a long match or lighter to flambe. Allow to burn until the alcohol cooks off and the flame goes out. Serve and enjoy!

CHICKEN & BANANA FOSTER WITH AMARETTO & MALIBU RUM
Yes I mixed Chicken and Bananas with a banana foster recipe and it worked. My husband loved it. You can also add medium size shrimp already prepared to go in if you like. I serve on top of angelhair plain pasta slightly buttered or plain rice just slightly buttered. Enjoy

- 1. This recipe goes fast so have all ingrediants ready. Melt the butter in a large skillet over medium to low heat, stir in the sugars. Season the chicken with salt and pepper(I use very little)and toss with the flour to coat. Add chicken to skillet and cook low and slow until almost cooked through. Add the bananas and stir add the amaretto and rum and stir and heat through and cook very low 15 to 20 minutes. If chicken is done already only cook 10 minutes. At this point if you wish use a long match and light the liqueur and allow to burn until alcohol cooks off (about a minute) Serve.
- 2. I serve over plain rice or plain angel hair pasta or just alone with a simple vegetable, bread and salad.
BANANAS FOSTER CHICKEN AND WAFFLES
Steps:
- For the waffles: Fill a deep, heavy pot with 3 inches of oil; heat to 350 degrees F.
- Mix the dry ingredients and the wet ingredients separately, then mix them together. Cook in a waffle maker, then deep-fry for about 45 seconds.
- For the fried chicken: Mix all the dry ingredients in a large bowl. Pour the buttermilk into a second bowl. Pat the chicken dry and sprinkle generously with salt and pepper. Dip the chicken in the flour mixture, then in the buttermilk, and again in the flour. Deep-fry until the outside is crispy and the center is white.
- For the bananas foster sauce: Melt the butter in a medium skillet over medium heat. Add the brown sugar; stir until dissolved. Add the rum and flambe. Add the bananas and cook for 2 minutes. Pour over the chicken and waffles, and enjoy!
