Chicken Cordon Bleu Impossibly Easy Pie image

Savory dinner ready with baked chicken, ham and cheese pie served with potato topper and fresh chives. Perfect if you love French cuisine.

1 cup cubed cooked chicken
2/3 cup cubed cooked ham
1 cup shredded Swiss cheese (4 oz)
1/2 cup Original Bisquick™ mix
1/4 teaspoon salt
1/8 teaspoon pepper
2/3 cup milk
1/3 cup Progresso™ chicken broth (from 32-oz carton)
1/4 cup chive-and-onion sour cream potato topper (from 12-oz container)
2 teaspoons Dijon mustard
2 eggs
Chopped fresh chives, if desired

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer chicken, ham and cheese in pie plate.
  • In medium bowl, mix remaining ingredients with whisk or fork until blended. Pour over cheese in pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. If desired, serve with additional potato topper and fresh chives.

So easy! There are many shortcuts available in the market to make it simpler. Purdue makes chicken that is seasoned, grilled and packaged. It's a little pricey, but in a hurry, it's worth it. A simple spinach salad makes this complete.

3/4 lb cooked chicken, cubed
1/4 lb ham, cubed
1 cup shredded swiss cheese
2 eggs
1 cup milk
1/2 cup Bisquick
1 tablespoon butter
1 tablespoon flour
1 cup milk

Steps:

  • In saucepan melt butter.
  • Add flour, stir till combined.
  • Add milk, stir until thickened about 3 minutes.
  • Grease 9-inch pie plate.
  • Place cooked chicken in bottom of pie plate.
  • Top with ham.
  • Pour sauce on top of meat.
  • Sprinkle with cheese.
  • In bowl mix remaining ingredients.
  • Pour on top of mixture.
  • Bake at 400°F 20-25 minutes or until toothpick inserted comes out clean.
  • Let stand 5 minutes before cutting.
