1/3 cup mayonnaise
1 teaspoon honey mustard
2 cups shredded cooked chicken breast
1/3 cup finely chopped celery
6 slices whole grain bread, toasted
8 slices tomato
4 slices bacon, cooked, drained
4 leaves Romaine or leaf lettuce
4 tiny dill or sweet gherkins

Steps:

  • In medium bowl, mix mayonnaise and mustard well. Stir in chicken and celery until well mixed.
  • Spread 1/2 cup chicken mixture on one side of 2 bread slices. Layer each with 2 tomato slices, 2 half slices of bacon and 1 lettuce leaf. Top each with another bread slice. Repeat layers, starting with chicken mixture. Top each with third bread slice.
  • Place pickle on each of 4 toothpicks; insert 2 into each sandwich. Cut sandwiches into halves.

1 whole chicken breast (1 1/2 pounds), on the bone
1 tablespoon olive oil
Coarse salt and freshly ground black pepper
1 1/2 cups mayonnaise, homemade or best-quality
3 tablespoon capers, rinsed
1/2 lemon, juiced
6 slices crusty white bread

Steps:

  • Heat oven to 450 degrees. Place chicken in a small roasting pan. Rub with olive oil, and season with salt and pepper. Bake until a meat thermometer inserted into the thickest part of the breast reads 180 degrees, about 25 minutes. Remove from oven, and cool slightly. Remove chicken from bones, and discard bones. Finely chop chicken (there should be about 2 cups).
  • In a medium bowl, combine chicken, mayonnaise, capers, and lemon juice. Stir to combine. Season with salt and pepper.
  • Toast four slices bread. Spread a thin layer of chicken salad over one slice untoasted bread. Top with a slice of toasted bread. Spread a second thin layer of chicken salad over toasted bread. Top with a slice of untoasted bread. Repeat with remaining bread and chicken salad.

1/4 cup light brown sugar
1 tablespoon kosher salt
1/4 cup granulated sugar
2 tablespoons orange zest
2 teaspoons garlic powder
1 chicken bouillon cube
2 tablespoons vegetable oil, for grill
2 chicken breasts, cut in half, pounded 1/2 '' thin
4 hamburger buns, split and toasted
2 tablespoons butter, melted
1/2 head green leaf lettuce
1 tomatoes, sliced
4 slices colby-monterey jack cheese
8 slices smoked bacon, cooked according to package directions

Steps:

  • In a medium bowl whisk together ingredients for brine.
  • Add chicken, making sure to coat evenly. Allow chicken to marinate for 20 minutes. Remove chicken and pat dry with paper towels.
  • Heat grill to high, oil lightly. Grill chicken turning once until grill marks have appeared and chicken is opaque throughout, about 3 to 4 minutes a side.
  • Brush toasted buns with butter. Dividing evenly top each bun with lettuce, tomatoes, chicken, cheese, and bacon. Top with remaining bun halves. Serve hot.

3 slices white bread, lightly toasted
2 tablespoons mayonnaise
1 Roasted Chicken Breast, thinly sliced
2 1/4-inch-thick slices beefsteak tomato
1/2 avocado, thinly sliced
4 slices cooked bacon
Coarse salt and freshly ground black pepper
2 iceberg lettuce leaves
2 small pickles

Steps:

  • Lay toasted bread slices side by side on a clean work surface and divide mayonnaise between them. Divide chicken between two slices of bread, followed by tomato slices, avocado, and bacon. Season with salt and pepper. Top with lettuce, place one bread "stack" on top of the other, and close sandwich with remaining slice of bread.

2 teaspoons finely chopped chipotle chiles in adobo (to taste)
2 medium garlic cloves, minced (about 1 teaspoon)

4 slices white bread, toasted
1/2 cup shredded chicken, I use a rotisserie chicken
6 slices bacon, cooked crisp
1 medium tomatoes, thinly sliced
2 crisp iceberg lettuce leaves

Steps:

  • MAKE THE SPREAD: Stir the ingredients together in a bowl.
  • MAKE THE SANDWICH: Coat each slice of toast with the chipotle spread, to taste. You may have some left over. Divide the chicken between two slices of toast, placing the slices in a single layer on top of the spread. Top with the bacon slices and a single layer of tomato slices. Cover with lettuce leaves and then the remaining slices of toast, spread side down.
  • Press the tops of the sandwiches down firmly. Using a serrated knife, cut through the sandwiches on the diagonal, then cut through on the diagonal in the opposite direction. Each sandwich will have 4 wedges. Place a toothpick in each of the wedges and serve.
  • Add a quick side salad to make a satisfying meal.

1/2 cup lime juice
2 tablespoons olive oil
1 teaspoon lime zest
1 jalapeno pepper
2 garlic cloves
1/4 cup cilantro, leaves and tender stems
1 teaspoon dried ancho chile powder or 1 teaspoon dried chipotle powder
1 teaspoon ground cumin
salt
black pepper
4 (4 ounce) boneless skinless chicken breasts, slightly flattened with a mallet
4 buns, toasted
1/4 mayonnaise (can add chopped jalapenos)
4 leaves lettuce
4 slices tomatoes
8 slices bacon, cooked
1 cup guacamole
1/4 cup queso fresco, crumbled

Steps:

  • Pulverize the tequila, lime juice, oil, lime zest, jalapeno, garlic, cilantro, chile powder and cumin in a food processor.
  • Place both the chicken and the marinade in a freezer bag and massage to coat. Marinate at least 4 hours or overnight.
  • Heat he grill to medium-high, brush it with oil. Season the chicken pieces with salt and pepper. Grill the chicken until cooked, about 5-7 minutes per side.
  • Assemble the sandwich on a toasted bun with the mayonnaise, lettuce, tomato, bacon, guacamole and queso.

4 Boneless, Skinless Chicken Breast Halves, pounded to an even 3/8-inch thickness
1/4 cup BBQ Dry Rub Spice Mix(salt, black pepper, ancho chile powder , paprika, cayenne pepper, brown sugar, onion powder, garlic powder)
1 cup favorite bottled BBQ Sauce
4 slices PepperJack cheese
8 pieces sourdough bread, cut approximately 4-inches long
1 stick unsalted butter, melted
8 slices applewood-smoked bacon
4 slices red onion, cut about 1/4-inch thick
2 Tbsp. canola oil
4 slices fresh tomato, cut about 1/4-inch thick
Salt and freshly ground black pepper, to taste
4 romaine lettuce leaves, trimmed to fit the bread slices

Steps:

  • The night before the tailgate, cover each chicken breast loosely with plastic wrap and pound each one to a thickness of about 3/8-inch. Season both sides of each breast generously with the BBQ dry rub, then place them in a covered container in the refrigerator overnight. The next day, let the breasts come back to room temperature for about 30 minutes before grilling. Over a grill set on medium-high heat, grill the bacon strips on both sides to a crisp doneness. Remove the bacon to a plate lined with paper towels to drain. Grill the chicken breasts until nicely browned on the first side, about 3 minutes. Turn the breasts over and brush the top side with some BBQ sauce. After cooking for 2 more minutes, place a slice of cheese on top of each breast. When the cheese begins to melt, remove the breasts from the grill to a plate and loosely cover them with foil to stay warm. Meanwhile, brush each onion slice with oil and place them on the grill. Cook for about 3 minutes, then flip the onion slices over and grill until lightly charred. Remove the onions from the grill to a plate. Brush one side of each slice of bread with the melted butter and place them buttered-side-down on the grill. Cook the bread for about 30 seconds, then flip over and grill for another 30 seconds. Remove the bread to a platter. Sprinkle each slice of tomato with salt and pepper, to taste. To assemble, place a grilled chicken breast on each of 4 slices of bread with the buttered side facing up. Place 2 slices of bacon over each breast. On top of the bacon, place a grilled onion slice, then a seasoned tomato slice and then a lettuce leaf. Finally, brush the other 4 bread slices on the buttered side with some BBQ sauce and place them sauce-side-down on top of the sandwiches. Serve immediately.

8 thick slices turkey bacon
1/4 cup pitted Kalamata olives
1 tablespoon Dijon mustard
1 teaspoon anchovy paste
2 tablespoons olive oil
1 to 2 tablespoons balsamic vinegar
1/2 teaspoon minced garlic
Salt and freshly ground black pepper
6 thick slices of Swiss peasant bread
2 ripe tomatoes, cored and thinly sliced
Thin slices sweet onion
8 ounces very thinly sliced smoked skinned chicken breast
1 or 2 kirby cucumbers, seeded and thinly sliced

Steps:

  • Start to cook the bacon so that it becomes crisp. In a blender or food processor puree the olives, mustard, anchovy paste, olive oil, vinegar, and garlic; season to taste with salt and pepper and adjust amount of vinegar for tang.
  • Toast the bread lightly. Remove bacon to paper towels to drain.
  • To assemble, spread each slice of bread with olive mixture, on one side only. Set some bacon on bottom of bread, then top with tomato and onion slices, chicken and cucumber; salt and pepper each layer lightly as you go. Top with bread, mayonnaise side down; repeat with second layer of fillings and finish with third slice of bread, olive mixture side down. Assemble the second sandwich in the same way.

I wanted something different in a chicken sandwich and this is what I came up with. Please don't let the long list of instructions scare you. It's a lot easier than it looks. 2 (4 ounce) boneless skinless chicken breast halves
4 slices bacon, cooked slightly crisp

2 hoagie rolls, split and lightly toasted

1/2 cup milk
1 egg, beaten
3/4 cup self-rising flour
2 teaspoons seasoning salt
1 teaspoon black pepper
1 teaspoon poultry seasoning

1 1/2 teaspoons garlic powder
4 slices tomatoes
4 lettuce leaves
4 teaspoons mayonnaise, divided

Steps:

  • Beat together egg and milk set aside.
  • Pound chicken breasts until 1/2 inch thick.
  • Mix together all breading mix ingredients in a deep dish or plate.
  • In a large heavy skillet, heat oil over medium heat until hot but not smoking.
  • Using a double breading process, bread chicken in this order: coat both sides of chicken in breading, dip in egg wash coating both sides, then coat both sides again in breading.
  • Fry chicken until golden brown on both sides about 8 minutes.
  • Top each piece of chicken with two slices of cheese overlapping, then place 2 slices of bacon lengthwise.
  • Cover to let cheese slightly melt.
  • Assemble sandwiches in this order: lettuce leaves, 2 slices of tomato overlapping, chicken, and add 2 teaspoons of mayonnaise on each top half of bun.

2 - chicken breasts, boneless and skinless
6 tablespoon(s) basil pesto
4 slice(s) bacon
4 slice(s) sharp white cheddar
1/2 - tomato, sliced thin
1/2 - avocado, sliced
4 - sandwich rolls/buns
2 tablespoon(s) mayonnaise

Steps:

  • Cut each breast in half. Pound out til each piece is of even thickness. Spread both sides of each piece with 1 tablespoon of pesto. Set aside and pre-heat grill.
  • Cut the 4 slices of bacon in half. Fry until crisp.
  • Mix mayo and remaining pesto together. Slice the tomato and avocado.
  • Grill the chicken. When it is almost done put 2 pieces of bacon and 1 slice of cheese on each of the pieces of chicken. Cook until cheese is melted.
  • Spread pesto mayo on roll, add chicken, and layer on the tomato and avocado. Enjoy!

I was looking for more then a club sandwich and my hubby loves hoagies so I took the two and made it into the best sandwich we ever ate it makes six so it's perfect for game night or picnic!

3 boneless chicken breast
3/4 c kona coast marinade & grilling island teriyaki
16 oz jar mezzetta deli-sliced mild pepper rings
6 slice gouda cheese
12 slice bacon
18 slice tomatoes
12 butter lettuce leaves
8 oz coleslaw deli style
6 small hoagie rolls

Steps:

  • 1. Slice chicken breast in half horizontally and place in between plastic wrap. With a mallet pound chicken into thin cutlets about ¼ inch thick place in a zip lock bag with Kona coast marinade and marinate 30 minutes.
  • 2. In a frying pan cook bacon until crispy place on paper towel to drain excess fat.
  • 3. Preheat grill on medium high heat and cook chicken for 5 minutes turn and cook additional 4 minutes.
  • 4. Cut rolls in half and place cut side down and grill just until lightly toasted
  • 5. To assemble sandwich on bottom roll place one layer of the pepper rings top with chicken cutlet, a slice of cheese, 2 pieces of bacon, 3 slices tomatoes, 2 lettuce leaves and 2 tablespoon coleslaw top with top bun. Repeat for remaining five sandwiches.

100 g chicken, boiled and shredded
1 hard-boiled egg, coarsely chopped
salt
1/2 teaspoon black pepper
6 slices bread

  • In a bowl mix the chicken with 1 tbsp of mayonnaise, 1/4 tsp of pepper powder and salt to taste.
  • In another bowl mix the egg with 1 tbsp of mayonnaise, 1/4 tsp of pepper powder and salt to taste.
  • Make one sandwich using three breads.
  • On first bread layer half the egg mixture.
  • Place a bread on top of this and layer that with half the chicken mixture.
  • Finish it by placing a bread on top of this.

3 c brine
4 boneless chicken breast
HERB MAYONNAISE
6 Tbsp mayonnaise
2 Tbsp each of basil,cilantro ,tarragon
dash(es) salt and pepper and lemon juice
FOR SANDWICHES:
1 c sliced apples
1 c grilled onion
2 Tbsp olive oil
8 slice cook thick cut apple wood-smoked bacon
4 ciabatta rolls, cut in half horizontally
1 head of bibb lettuce, wahed and dried
4 slice provolone cheese
1 roma tomatoe

Steps:

  • 1. For Herb Mayonnaise: mix mayonnaise and herbs to gather in a small mixing bowl and place in refrigerator. Brine the chicken breast in the refrigerator for at lease 6 hours.
  • 2. Once you remove chicken from brine , rinse off chicken and pat dry. Grill chicken until done. sauté onion and apples in olive oil until caramelize. remove and place in small bowl.
  • 3. Place the rolls on a clean work surface and spread about 1 tablespoon of the Herb Mayonnaise on each half. On the bottom halves place the sliced chicken breast and add two slices of bacon and cheese.
  • 4. Top with several lettuce leaves and 1/4 of onion mixture.close the sandwiches with top half of each roll and grill until warm and cheese has melted.
