This recipe is one of my favorite recipes. What makes this recipe so yummy is the chips. This is a great recipe for gatherings with friends and family.

1 teaspoon butter
1 cup self-rising flour
1 tablespoon garlic powder
2 tablespoons meat tenderizer
1 tablespoon salt
1 tablespoon ground black pepper
3 cups crushed potato chips (such as Lay's®)
½ cup olive oil
8 chicken tenders

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish with butter.
  • In a bowl, stir together the self-rising flour, garlic powder, meat tenderizer, salt, and pepper. In a separate bowl, place the crushed potato chips. Pour the olive oil into a third bowl.
  • Rinse the chicken tenders under cold water. Working one at a time, dip a chicken tender into olive oil, then into the seasoned flour mixture, then back into the olive oil, then into the crushed potato chips. Lay the coated chicken tender into the prepared baking dish. Repeat with all the other pieces of chicken. Sprinkle about 1 tablespoon of the seasoned flour onto the chicken pieces, then sprinkle the chicken with remaining potato chips.
  • Place the baking dish onto the middle rack of preheated oven, and bake until the chicken is no longer pink inside, the juices run clear, and the coating is golden brown, about 30 minutes.

1 (10 3/4 ounce) can cream of chicken soup
1/2 cup sour cream
1/4 cup picante sauce
2 cups monterey jack cheese
3 cups crushed corn chips, divided

Steps:

  • Combine chicken, soup, sour cream, and picante sauce, mixing well.
  • Spoon 1/2 mixture into lightly greased 2-quart round casserole dish.
  • Sprinkle 1/2 of cheese over first layer.
  • Add 1/2 of the crushed corn chips.
  • Repeat a second layer by adding the rest of the chicken mixture, cheese and then the rest of the chips.
  • Bake, uncovered at 350 degrees Fahrenheit for 20-25 minutes.

For the chicken
2 boneless chicken breasts with the skin (about 1 1/2 pounds), halved
1/2 cup fresh lime juice
1 teaspoon dried orégano, crumbled
vegetable oil for brushing the chicken
For the tortilla crisps
4 corn tortillas, cut into long thin triangles
vegetable oil for frying the tortillas
2 cups cooked fresh corn kernels (cut from about 4 ears)
1 large red bell pepper, diced
3 scallions, sliced thin
2 tablespoons fresh lime juice, or to taste
1 tablespoon finely chopped fresh orégano or 1 teaspoon crumbled dried, or to taste
1/2 teaspoon ground cumin, or to taste
1/4 cup olive oil
1 bunch of arugula, washed well and spun dry

Steps:

  • Prepare the chicken:
  • In a bowl let the chicken marinate in the lime juice with the orégano and salt and pepper to taste, covered and chilled, for at least 30 minutes or up to 1 hour. Drain the chicken, pat it dry, and brush it with the oil. Grill the chicken, seasoned with salt and pepper, on a well-oiled rack set about 6 inches over glowing coals for 6 to 7 minutes on each side, or until it is just cooked through. (Alternately, the chicken can be grilled on top of the stove in a ridged grill pan over moderately high heat for about the same length of time.) Transfer the chicken to a cutting board and let it stand for 10 minutes.
  • Make the tortilla crisps while the chicken is grilling:
  • In a heavy skillet heat 1/2 inch oil to 375°F. on a deep-fat thermometer and in it fry the tortilla triangles in batches for 45 seconds to 1 minute, or until they are golden, transferring them with a slotted spatula as they are fried to paper towels to drain and sprinkling them with salt. The tortilla crisps may be made 1 day in advance and kept in an airtight container.
  • In a large bowl combine the corn, the bell pepper, and the scallions, add the lime juice, the orégano, the cumin, the oil, and salt and black pepper to taste, and toss the mixture until it is combined well. Cut the chicken lengthwise into thin slices and add it to the corn mixture with any juices that have accumulated on the cutting board. Divide the arugula and the tortilla crisps among 4 plates and mound the chicken salad in the center of each plate.

1 box lasagna noodle, cooked according package instructions, drained and patted dry
2 teaspoons kosher salt
½ cup grated parmesan cheese, divided
2 teaspoons dried oregano
2 chicken breasts, grilled, cut into 1/2 in (1 1/4 cm) cubes
8 oz cream cheese, room temperature
1 jar alfredo sauce
1 ½ cups shredded mozzarella cheese, divided
nonstick cooking spray, for greasing

Steps:

  • Heat the oil in a large, high-walled skillet over medium-high heat until it reaches 350°F (180°C). Line a baking sheet with paper towels and place a wire rack on top. Set nearby.
  • Preheat the oven to 350°F (180°C)
  • Make sure the lasagna noodles are very dry, then cut into small triangles.
  • Working in batches, fry the noodle triangles in the hot oil until golden brown, about 2 minutes. Use a slotted spoon to transfer to the prepared baking sheet to drain. Sprinkle all over with the salt, ¼ cup (25 G) of Parmesan, and the oregano.
  • In a large bowl, combine the chicken, cream cheese, alfredo sauce, and 1 cup (100 G) of shredded mozzarella. Stir well.
  • Grease an 8-inch (20 cm) square baking dish with nonstick spray. Pour the chicken alfredo dip into the dish and top with the remaining ¼ cup (25 G) Parmesan and ½ cup (50 G) mozzarella.
  • Bake the dip for 25 minutes, until the cheese is melted and bubbling. Turn the oven to broil and broil the dip for 2 minutes, until the cheese is browned on top.
  • Serve the dip warm with the lasagna chips for dipping.

1 small chicken (about 1.25kg)
1 large garlic clove , crushed
¼ small pack parsley , finely chopped
2 tbsp lemon juice
100g unsalted butter , at room temperature
1 cube chicken bouillon , crumbled
2 tbsp flaky sea salt
1 tsp smoked paprika
900g Maris Piper potatoes (about 4 medium potatoes)
3 tbsp olive oil
1 small chicken (about 1.25kg)
1 large garlic clove , crushed
¼ small pack parsley , finely chopped
2 tbsp lemon juice
100g unsalted butter , at room temperature
1 cube chicken bouillon , crumbled
2 tbsp flaky sea salt
1 tsp smoked paprika
900g Maris Piper potatoes (about 4 medium potatoes)
3 tbsp olive oil

Steps:

  • First, make the kiev butter. Beat the garlic, parsley and lemon juice into the butter along with some seasoning. Place the butter on a piece of cling film, roll into a log, then chill in the fridge until needed. Make the chicken salt by mixing all the ingredients together in a small bowl, then set aside. The butter and salt can be made up to two days ahead.
  • For the chips, cut the potatoes into thick finger-sized wedges and put in a pan of cold water. Bring to the boil and simmer for 5 mins until just cooked. Carefully drain, place on a tray and allow to cool.
  • Heat oven to 220C/200C fan/gas 7. If you have one, sit the chicken on a trivet or wire rack set over a small roasting tin. If you don't have either, then just put your chicken in the roasting tin. Trim two slices of the chilled butter, gently lift the skin away from the breast of the chicken, and push the butter underneath on both sides. Season the chicken all over with a third of the flavoured salt.
  • Put the chicken in the oven and roast for 20 mins, then remove and turn it over so that it is breast-side down. Return to the oven for a further 20 mins. Remove it from the oven and turn breast-side-up, then cook for a final 20 mins until crispy and golden.
  • Meanwhile, put the oil in a baking tray and place in the bottom of the oven. Toss the cooled chips in a third of the salt, then carefully place in the hot oil, turning them until completely coated. Roast for 45 mins, turning occasionally.
  • Remove the chicken from the oven and leave to rest for 5 mins. Cut the chicken into portions and place on a platter with slices of the butter melting over each portion. Serve with the chips and the remaining chicken salt.

500g pack ready-cooked polenta
2 tbsp olive oil
2 chicken breasts
25g dried breadcrumbs
25g parmesan
125g ball mozzarella
4 ciabatta or burger buns , lightly toasted
salad leaves , to serve
SunBlush tomatoes , to serve
fresh basil pesto , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the polenta into thick chips and rub all over with a little oil. Spread out over a baking sheet and cook for 20 mins until golden. Cut each chicken breast in half, lightly flatten using a rolling pin or heavy can, then rub all over with oil. Spread the breadcrumbs and Parmesan out on a plate, then dip in the chicken to coat.
  • Place the chicken on another baking sheet and cook for 10-12 mins until just crisp and cooked through. Place a mozzarella slice on top and return to the oven until starting to melt. Pile the burgers onto buns with some salad leaves, tomatoes and a dollop of pesto. Serve with the polenta chips.

2 tbsp paprika
2 tbsp light muscovado sugar
4 large baking potatoes , unpeeled, cut into chunky wedges
3 tbsp sunflower oil
1 free range chicken , about 1.5kg/3lb 5oz

Steps:

  • Heat oven to 190C/fan 170C/gas 5. In a bowl, mix the paprika and sugar together with a couple of generous pinches of salt. Tip the potato wedges in a roomy roasting tin, toss in 2 tbsp oil until coated, then season with some of the paprika mix. Rub chicken with the rest of the oil, season inside and out, then rub all over with the rest of the paprika mix. Push the potatoes to the sides of the tin and sit the chicken in the middle.
  • Roast undisturbed, for 1 hr 20 mins. Remove the chicken, set aside to rest for 20 mins, then use a fish slice to turn the potatoes and lay them in an even layer. Continue roasting the potatoes while the chicken rests, then serve everything together.

4 tbsp olive oil
6 chicken breasts , skin on
6 corn tortillas
4 large ripe tomatoes , cut into 2cm chunks
1 small red onion , finely chopped
1 long red chilli , deseeded and finely diced
½ tsp Tabasco sauce
juice 2 limes , plus extra limes cut into wedges, to serve
2 large ripe avocados
80g pack coriander , leaves picked and chopped
20g pack basil , leaves picked and chopped
handful flat-leaf parsley , leaves picked and chopped

Steps:

  • Heat a griddle on a medium heat, rub 1 tbsp oil all over the chicken, and season with salt and pepper. Cook for 25 mins, turning every 5 mins, until the skin is golden and the flesh juicy and cooked through. Lift onto a plate to rest.
  • Meanwhile, heat oven to 180C/160C fan/ gas 4. Brush the tortillas with 1 tbsp oil, then cut each into 6 triangles. Spread over a large baking sheet, then bake for 10 mins or until golden and crisp.
  • Put the tomatoes and onion in a mixing bowl, then add a good pinch of salt and a grind of pepper. Add the remaining olive oil, chilli, Tabasco and the juice of 1 lime. Leave to one side.
  • Peel and stone the avocados, then chop and mash lightly. Stir in the remaining lime juice and the tomato mix, then fold through the herbs.
  • Slice the chicken and serve it with the corn chips, guacamole and more lime wedges for squeezing over. This great sharing dish goes well with a few cold beers and maybe some mayo.

When I was little, I loved Chicken Kiev, and recently I wanted to come up with a low fat alternative. My mum introduced me to chicken thighs, which are relatively low in fat, and I started experimenting and this is what I came up with. It's really nice and easy to make.

100 g boneless skinless chicken thighs
1 teaspoon salsa
1 teaspoon extra- light mayonnaise
1 teaspoon extra- light margarine (e.g. Flora)
1 -2 garlic clove
dried herbs
1 medium potato (about 200g)
cooking spray

Steps:

  • Preheat oven to 200 degrees Celcius.
  • Spray a square of baking foil with the cooking spray, and place the chicken thigh onto it.
  • Mix together the salsa, mayonnaise, margarine, garlic and herbs to taste, and push into the 'hole' in the piece of chicken where the bone was.
  • Spray the top of the piece of chicken and bring the foil up to form a parcel. Place on a baking tray in the oven.
  • Cut the potato up into chips, and microwave on high for 2-3 minutes (depending on size of chips).
  • Spray a baking tray with cooking spray, then add chips. Spray again, and toss the chips to make sure they're evenly covered. Put in oven with chicken (which should have been in for about 8-10 minutes).
  • After about 12 minutes, toss the chips again and make sure they're cooking evenly. After they've been in the oven about 25 minutes, they should be ready (time depends on oven and how crispy you like your chips).
  • Remove chicken parcel and chips from oven and serve, drizzling juices from the foil over the chicken.
  • I like to serve it with steamed green beans and grilled mushrooms, but it's personal choice!

I made this one night for a school potluck and had many requests for the recipe! I love the taste of the taco sauce, soup and sour cream. It is terrific casserole, but eat up! Due to the chips in it it isn't very good reheated because they are soggy.

3 medium Yukon Gold potatoes
Vegetable oil, for deep-frying
1 tablespoon chicken salt

Steps:

  • Slice the potatoes about 1/16-inch thick on a mandoline. Put the potato slices in a large bowl of cold water and agitate the water to release the starch. Drain and repeat until the water remains clear, about three more times. Line two baking sheets with paper towels and spread the potatoes on top in a single layer; pat dry thoroughly.
  • Fill a large, wide pot with 2 inches of oil. Heat the oil to 315 degrees F over medium-high heat. Fry a small batch of potatoes until golden brown and crispy, 3 to 4 minutes. Transfer to a paper-towel-lined pan with a large slotted spoon and sprinkle with chicken salt. Repeat with the remaining potatoes, returning the oil to temperature between batches.

1/2 cup pitted, chopped Kalamata olives
1/2 cup chopped sun-dried tomatoes
4 oz. ATHENOS Traditional Feta Cheese, crumbled
1 cup KRAFT Real Mayo
1 Tbsp. GOOD SEASONS Greek Dressing & Recipe Mix
ATHENOS Pita Chips Original, for serving

Steps:

  • Add chicken to a large bowl and stir in celery, olives, sundried tomatoes, and feta.
  • In a small, separate bowl, whisk KRAFT Mayo and GOOD SEASONS Greek Salad Dressing Mix together.
  • Add this to the chicken mixture and stir until everything is well coated. Cover and place in refrigerator for 2 hours (this helps the flavors blend together!)
  • When ready to serve, remove from fridge and either place in a serving dish surrounded with pita chips or top individual pita chips with a tablespoon of chicken salad mixture.

1 tbsp Cajun seasoning
2 tbsp vegetable oil
zest and juice 1 lime
750g large potato , cut into chips
1kg chicken wing
green salad or coleslaw and ketchup , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a bowl, whisk together the Cajun seasoning, vegetable oil, lime zest and juice. Toss the chips, wings and Cajun mixture together in batches, so that everything is well coated.
  • Cover a large baking sheet with foil, then arrange the chips around the outside and the wings in the middle. Season and bake for 20 mins, then turn the chips and return to the oven for a further 20-25 mins until the chips and wings are golden. Serve with green salad, or coleslaw and ketchup.

4 skinless chicken breasts
20g low-fat spread
2 garlic cloves, crushed
1 tbsp finely chopped chives
1 egg, beaten
4 tbsps granary breadcrumbs
salt and black pepper
200g potatoes, cut into fine chips
1 vegetable stock cube
low-cal spray oil

Steps:

  • 1.Preheat the oven to 200°C/400°F/Gas Mark 6. Place each chicken breast on a chopping board and slice through the centre to make a pocket.
  • 2.Mix together the low-fat spread, garlic and chives and season with salt and pepper. Spoon the mixture into the pocket of each chicken breast.
  • 3.Dip the chicken in the beaten egg, and then in the breadcrumbs and place on a non-stick baking tray. Bake in the oven for 25-30 minutes until cooked through.
  • 4.Cook the potatoes in boiling water with the stock cube for 2-3 minutes. Drain and place on a baking tray.
  • 5.Spray lightly with oil and bake in the oven for 20 minutes (you can cook them with the chicken).
  • 6.Serve the chicken and chips hot with vegetables.

8 ounces shredded cheddar cheese
10 ounces potato chips, crushed

Steps:

  • In large bowl, combine chicken, green onion, bell pepper, and parsley.
  • In small bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, salt, & pepper.
  • Stir mayonnaise mixture into chicken mixture; mix well.
  • Pour into an 11x7 dish. Top with cheese & potato chips.
  • Bake 15 minutes, until bubbly.

I was craving Chicken Chili and since I no longer eat meat I knew I had to be creative. I decided to try my hand using Vegan Chicken chunks! To my surprise my recipe was amazing and my family loved it too. The carrots added just enough sweetness. The Greek Seasoning adds a hint of lemon flavor and oregano. My family couldn't tell the difference with the Vegan Chicken Chunks. I recommend using the Quorn brand because the texture and flavor is the closest to eating real chicken. I hope you enjoy ever how you like with vegan products or real dairy this is a amazing chili!

1 (16 ounce) can garbanzo beans
1 (16 ounce) can kidney beans
2 (16 ounce) cans Italian stewed tomatoes
1 cup ketchup
8 ounces canned diced green chiles
1 -2 tablespoon Worcestershire sauce
3 -5 dashes louisiana hot sauce
1 -2 teaspoon sugar
2 cups water
4 -5 tablespoons olive oil
1 cup diced onion
1 cup diced green pepper
1/2 cup carrot, diced
3 -4 garlic cloves, chopped
1 teaspoon smoked paprika
1 -2 tablespoon chili powder
1 1/2 teaspoons cumin
1 teaspoon all purpose Greek seasoning
16 ounces vegan chicken, chunks
1 (13 ounce) can mexicorn
salt and pepper
1/2 cup cooked rice (optional)
crushed tortilla chips (to garnish)
sour cream (to garnish, Vegan or regular)
diced tomato, garnish
shredded cheese (to garnish, Vegan or regular)
diced onion (to garnish)

Steps:

  • In large pot place chick peas, kidney beans, tomatoes, ketchup, sugar, Worcestershire sauce, green chili's, water (add more water if needed) and hot sauce. Stir and cook on medium heat. Add olive oil to skillet and add onions, green pepper, carrots and heat over medium flame. Cook 2 minutes then add garlic, cook until vegetables are tender. Be careful not to burn garlic. Add chili powder, cumin,Greek seasoning and paprika to vegetable mixture. Stir and cook about 1-2 minutes being careful not to burn. Add onion mixture to beans, stir bring to boil, lower heat and simmer for 30 minutes. Add chicken and corn, stir and taste (adjust seasonings as needed. Cook 10 more minutes and serve over rice if desired. Garnish with crushed tortilla chips, chopped tomatoes, chopped onions. Use vegan style grated cheese and sour cream if desired.

10 3/4 oz can condensed cream of chicken soup, undiluted
8 oz sour cream
2 Tbsp taco sauce
1/4 c chopped green chilies
3 c cubed cooked chicken
12 slice process american cheese
4 c broken tortilla chips

Steps:

  • 1. In a bowl combine soup, sour cream, taco sauce and chilies. In an ungreased shallow 2-quart baking dish, layer half of the chicken, soup mixture, cheeses and tortilla chips. Repeat layers. Bake uncovered at 350 degrees for 30 minutes or until done. Makes 4-6 servings.
