Baked Chicken Oscar Dinner (Yep, the Whole Shebang) image

Baked chicken with creamy Havarti cheese, crab, and hollandaise sauce is served with crisp asparagus and roasted red potatoes. Measurements do not have to be exact. Season to taste.

6 skinless, boneless chicken breast halves
12 small red potatoes
2 tablespoons olive oil, divided
2 teaspoons sea salt
2 teaspoons garlic powder
2 teaspoons lemon and herb seasoning
1 teaspoon onion powder
1 teaspoon dried basil
½ teaspoon ground black pepper
6 slices Havarti cheese, folded in half
3 (.9 ounce) packages hollandaise sauce mix (such as Knorr®)
3 cups milk
¾ cup butter
1 teaspoon ground white pepper
1 teaspoon dried basil
1 pinch garlic powder
1 pound fresh asparagus, trimmed
1 (8 ounce) package imitation crabmeat, chopped
¼ teaspoon paprika

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place chicken breasts into a 9x13-inch baking dish.
  • Place red potatoes into a separate 8x8-inch baking dish.
  • Drizzle 1 tablespoon olive oil over chicken breasts and 1 tablespoon oil over potatoes.
  • Combine sea salt, 2 teaspoons garlic powder, lemon and herb seasoning, onion powder, 1 teaspoon dried basil, and black pepper in a small bowl. Sprinkle chicken and potatoes each with half the seasoning mix.
  • Cover both baking dishes with aluminum foil.
  • Bake chicken and potatoes in the preheated oven for 40 to 45 minutes; remove chicken and top each breast with a folded slice of Havarti cheese. Return chicken to oven and bake until Havarti cheese is melted, chicken is no longer pink inside and juices juices run clear, about 5 more minutes.
  • Remove chicken and potatoes from oven and allow to rest covered for 5 minutes.
  • Whisk hollandaise sauce mix with milk in a saucepan over medium heat; bring to a boil and stir in butter until melted. Reduce heat to low and simmer sauce until thickened, about 1 minute. Remove from heat and stir in white pepper, 1 teaspoon dried basil, and 1 pinch garlic powder.
  • Place asparagus into a skillet over medium heat. Pour water into skillet about 1-inch deep and bring to a boil. Cover skillet and steam asparagus just until tender but still bright green, 2 to 4 minutes.
  • To serve, place each chicken breast onto a serving plate and top breasts with imitation crab meat.
  • Pour about 2 tablespoons of hollandaise sauce over each serving and place several spears of asparagus on top; drizzle 2 more tablespoons of sauce over each portion. Serve remaining hollandaise sauce on the side. Garnish with a pinch of paprika and serve with 2 red potatoes on each serving plate.

This traditional Eastern Shore favorite features creamy crab stuffing baked inside tender and flavorful chicken. This simple recipe is packed full of taste, easy to prepare and ready to serve in under 30 minutes!

4 chicken breasts
1/2 lb Phillips Lump Crab Meat
1/2 lb Phillips Jumbo Lump Crab Meat
1/4 cup parsley (chopped)
3/4 cup Ritz crackers (crushed)
1 large egg
3/4 tsp worcestershire sauce
3/4 tsp lemon juice
3/4 tsp Phillips Seafood Seasoning
3/4 tsp dijon mustard
1/2 cup mayonnaise
2 tbsp pimentos (chopped, if desired)
flour seasoned with Phillips Seafood Seasoning
melted butter

Steps:

  • Preheat oven to 350°.
  • Combine the egg, Worcestershire sauce, lemon juice, seafood seasoning, Dijon mustard, and mayonnaise in a bowl.
  • Place the crab meat, parsley, and Ritz crackers into a separate bowl. Mix very lightly to combine.
  • Add the wet ingredients to the crab mixture and combine lightly.
  • Carefully use a knife to make a "pocket" in each chicken breast for the crab stuffing. Portion a mound of crab filling in the middle of each pocket and fold over to close.
  • If desired, add stuffed breasts to preheated grill pan to mark exterior before baking.
  • Place stuffed breasts into a casserole dish or deep baking pan.
  • Season to your liking with seasoned flour and pour melted butter over top of each chicken breast.
  • Bake at 350° for 20-25 minutes, or until chicken is cooked to an internal temperature of 165°.

6 boneless skinless chicken breast halves
Old Bay Seasoning
16 oz backfin crab meat
1 container (10 oz.) Kraft Philadelphia Savory Garlic Cooking Cream
1 tsp lemon juice
1 cup Kraft Shredded Cheddar Cheese (divided into 3/4 and 1/4 cup)

Steps:

  • Place chicken breasts on pan and season with Old Bay Seasoning to taste. Bake for 10 min at 400 degrees F.
  • While chicken is baking, mix crab meat and cooking cream in a large bowl. Add 1 Tbsp. Old Bay, lemon juice, and 3/4 cup cheese.
  • Remove chicken from oven after 10 min and top each chicken breast evenly with crab mix. Bake for another 10 min.
  • Top with remaining 1/4 cup cheese, and continue to bake until chicken is done.

I love Old Bay Seasoning and was looking for new ways to use it. I had several "coastal creations" as I call them and this one is one that people enjoy the most out of them. And by the way, your house is going to smell like a seaside seafood restaurant while this is cooking!

4 lbs whole chickens or 4 lbs chicken pieces (Breasts work well too.)
8 -12 yellow potatoes or 8 -12 red potatoes
2 large yellow onions or 2 large vidalia onions
8 -12 stalks celery
8 -12 carrots
1/4 cup Old Bay Seasoning, to taste
1 cup white wine

Steps:

  • Preheat oven to 350 degrees.
  • Remove skin from chicken if necessary and clean chicken well.
  • Scrub potatoes very well being careful not to rip the thin skins on red potatoes if using, if using white or yellow potatoes only peel them if the skins are tough or hopelessly dirty.
  • Quarter large potatoes and halve medium to small potatoes.
  • Peel and quarter onions.
  • Scrub celery and remove ends, cut long celery ribs in half.
  • Scrub carrots and remove ends, cut thick carrots in half.
  • In a large roasting pan arrange chicken pieces in a single layer if using pieces or place whole chicken in center of pan.
  • Place potatoes, onions, celery, and carrots randomly around edges of pan beside chicken.
  • Pour white wine over chicken and vegetables making sure to pour wine over entire contents of pan.
  • Sprinkle Old Bay Seasoning over chicken, use less for a milder spice, and more for a spicier flavor.
  • Put lid on roaster or cover with aluminum foil.
  • Place pan in oven and bake on 350 degrees 1 hour and thirty minutes.
  • Remove from oven and check for doneness.
  • Stick thickest pieces of chicken or thickest part of breast on whole chicken, if juices run clear the chicken is done, if juices are pink or red return pan to oven and continue to bake at 350 degrees for 30 more minutes.
  • Remove pan from oven and check chicken for doneness again, if still not done repeat process until juices run clear.

8 oz lump crabmeat
6 boneless chicken breasts(about 4 lbs)
salt and pepper
1/4 C butter divided
1 8 oz pkgs sliced baby bella mushrooms
1/2 C minced onion
1 C dry white wine
1 C chicken broth
1 C heavy whipping cream
1 8 oz pkg cream cheese
Cooked rice

Steps:

  • Spray 13x9 pan and sprinkle crabmeat evenly over pan. In skillet melt 2 T butter and cook chicken 4-5 min per side until brown. Season with salt and pepper during cooking. Place chicken breasts on top of crabmeat in pan Melt remaining 2 T butter and sautee onions and mushrooms 4-6 min. Add wine and cook 5-6 min until reduced to half Stir in chicken broth and cream and cook 10 min Add cream cheese and stir until melted. Pour over chicken and crabmeat and bake 350 for 25-30 min. Serve over rice
