1 (5.5-oz.) pkg. Knorr Chicken Broccoli Rice
2 cups boiling water
1/2 cup grated Parmesan cheese, divided
3 cups cooked chicken, cubed
1/2 small white onion, chopped
1 (12-oz.) pkg. frozen broccoli, thawed & patted dry
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 400 degrees.
  • Combine the Knorr Chicken Broccoli Rice, boiling water, and 1/4 cup of the Parmesan cheese in a 13x9-inch baking dish. Stir in the broccoli, chicken, and onion. Cover tightly with aluminum foil.
  • Bake covered for 25 minutes. Carefully remove the aluminum foil. Sprinkle the casserole with the remaining Parmesan cheese and top with the mozzarella cheese.
  • Bake for an additional 10 minutes or until the cheese is melted. If you want the mozzarella cheese to be a golden color, pop the casserole under the broiler on high for about 2 minutes or until bubbly and browned.

4 skinless, boneless chicken breasts
1 (8 ounce) can water chestnuts
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 cup cornflakes cereal crumbs
1 cup mayonnaise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot, boil the chicken until tender. Cut the breasts into cubes or small pieces.
  • In a large bowl, combine the chicken pieces with the water chestnuts, onion, soup, most of the crushed corn flakes and mayonnaise. Mix well.
  • Pour mixture into a 9x13 inch baking dish. Sprinkle the rest of the crushed corn flakes on top of the mixture. Bake in the preheated oven for 1 hour.

8 cups cubed cooked chicken
2 cans (10-1/2 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream
1 cup crushed Ritz crackers (about 25 crackers)
2 tablespoons butter, melted
1 teaspoon celery seed
Optional: Fresh parsley and sweet red pepper rings

Steps:

  • Preheat oven to 350°. Combine chicken, soup and sour cream; spread into a greased 13x9-in. baking dish. Combine crumbs, butter and celery seed; sprinkle over chicken mixture. , Bake, uncovered, until bubbly, 30-35 minutes. If desired, garnish with parsley and red pepper.
