CHICKEN CAESAR PITA WRAPS
We like to add shredded lettuce to these chicken rounds. The Montreal steak seasoning is good, but can be spicy if you add too much.

- 1. With a sharp knife, carefully slice horizontally most of the way through each chicken breast; open up and flatten. Sprinkle one side of chicken with seasoning. Heat oil in a large skillet over medium high heat. Add chicken to skillet; sprinkle other side with seasoning. Cook until golden brown on both sides and chicken juices run clear when pierced. Remove chicken from skillet to a cutting board. Let cool briefly; slice into strips and transfer to a bowl. Drizzle salad dressing over chicken; stir to coat well. Microwave pita rounds for 20-30 seconds, until warmed. Divide chicken mixture evening among rounds. Sprinkle with parmesan cheese if desired. Serves 4

- First start by preparing the dressing. To do this, dissolve the gelatin in the water. Microwave the mixture on high temperature for about 2 minutes, or until the mixture starts boiling rapidly. Put vinegar then whisk the mixture while putting the oil. Add salt, Worcestershire sauce, bell pepper, garlic powder, oregano, black pepper, basil, parsley and thyme. Cool the dressing for approximately 15 minutes prior to adding the egg substitute and cheeses. Continue whisking the mixture until it becomes a bit thicker then chill it. Chilling the dressing overnight will make it thicker.
- Preheat an indoor grill or barbecue grill to moderate heat. Sprinkle salt and pepper to the chicken then grill them for about 5 minutes for each side, or until cooked. Take it off from the grill then dice the chicken.
- While waiting for the chicken to get cooked, start preparing the salad by mixing red cabbage, shredded carrot and romaine lettuce in a large-size bowl. Toss the ingredients.
- Make the sandwiches by microwaving the pita for about 20 seconds.
- Fold the pita into two, like a taco. Afterwards, put 1 to 1 and ½ cups of the prepared romaine salad into the pita bread.
- Add approximately 1/3 cup of chicken (diced) over the salad inside the pita bread.
- Add about 1 tbsp of the dressing on top of the sandwich.
- Drizzle about 1 tsp of the shredded Parmesan cheese over each serving then serve.
