A sweet and creamy dressing coats this hearty chicken-and-veggie salad shared by Susan Blades of Grand Prairie, Texas.

1-1/2 cups cubed cooked chicken breast
1-1/2 cups fresh broccoli florets
1/4 cup chopped red onion
2 tablespoons salted sunflower kernels
2 tablespoons golden raisins
2 bacon strips, cooked and crumbled
1/3 cup mayonnaise
1 tablespoon sugar
1 tablespoon red wine vinegar

Steps:

  • In a bowl, combine the first six ingredients. Combine the mayonnaise, sugar and vinegar; add to chicken mixture and toss to coat. Refrigerate until serving.

A multi-textured salad made of broccoli, raisins and tomatoes is topped with grilled chicken and tossed with a sweet-sharp dressing.

4 pounded thin, about 1/4 inch chicken cutlets
2 heads cut into bite-sized florets broccoli
1/2 cup chopped red onion
1/2 cup raisins
8 oz cut into very small chunks sharp cheddar cheese
1 cup mayonnaise
2 tablespoons white wine vinegar
1/4 cup granulated sugar
1 cup halved cherry tomatoes

Steps:

  • Preheat grill pan. Season chicken cutlets with salt and pepper and place on grill, cook on each side for 3-4 minutes each.
  • In a small bowl, rehydrate raisins with water or extra white wine vinegar.
  • In a large bowl, toss together the broccoli florets, chopped red onion, raisins, cheddar cheese and cherry tomatoes.
  • In another small bowl, whisk together: mayonnaise, white wine vinegar and sugar. Pour over broccoli mixture and toss together. Slice chicken and serve on top of salad.

2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon kosher salt
1/2 teaspoon black pepper
2/3 cup olive oil
5 cups broccoli florets
1 1/2 cups seedless grapes, halved
4 ounces sharp Cheddar cheese, grated (about 1 cup)
3/4 cup sliced almonds, toasted
1/2 cup thinly sliced red onion (from 1 small red onion)
5 fried chicken tenders, coarsely chopped (about 4 cups)

Steps:

  • Whisk together honey, vinegar, mustard, salt, and pepper in a large bowl until blended and smooth. Drizzle in oil, whisking until emulsified, 30 seconds. Stir in broccoli, grapes, cheese, almonds, and onion. Cover; chill at least 2 hours or up to overnight. Stir in chicken before serving.

4 cups broccoli florets, fresh
3 cups romaine lettuce, torn
2 cups chicken breasts, cooked and chopped
1 medium apple, chopped
1/2 cup fat-free Italian salad dressing
1/4 cup pecan halves, toasted (I'll use almonds)
2 tablespoons golden raisins

Steps:

  • Cook broccoli by steaming (microwave or stovetop) for 5-8 minutes or until broccoli is crisp-tender.
  • Drain broccoli and rinse in cold water; then pat dry with paper towels.
  • Divide romaine lettuce among four salad plates.
  • In a bowl, combine the chicken, apple and broccoli; drizzle with dressing and toss to coat.
  • Spoon chicken mixture onto romaine.
  • Sprinkle with pecans and raisins.
