This Cheesy Chicken Broccoli Casserole is a family favorite. Add broccoli and chicken to a creamy sauce, top with cheese and serve over cooked rice or potatoes.

Number Of Ingredients 9

2 bunches fresh broccoli (can also use frozen, about 1 1/2 bags)
6 boneless, skinless chicken breasts (cooked and cut into pieces if desired)
2 (10.5 ounce) cans cream of chicken soup
1 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon curry powder
1 cup shredded sharp cheddar cheese
1 1/2 slices bread
1 Tablespoon butter (melted)

Steps:

  • Preheat oven to 350 degrees.
  • Cook broccoli in boiling salted water until tender and drain.
  • Arrange stalks in the bottom of a greased 9x13 pan.
  • Place cooked chicken breasts on top of broccoli.
  • In a medium bowl, combine soup, mayonnaisse, lemon juice, and curry powder; pour over chicken.
  • Sprinkle with grated cheese.
  • Break bread into small pieces and mix with melted butter. Sprinkle over shredded cheese.
  • Bake for 25-30 minutes until cheese is melted and bubbly.

1 small head broccoli, cut into florets then lightly steamed
2 (10 3/4 ounce) cans condensed cream of mushroom soup, undiluted
1 cup sour cream
1 cup mayonnaise (such as Hellman's, do not use salad dressing)
1/3 cup dry white wine
1 1/2 tablespoons lemon juice
1 teaspoon garlic powder
1 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
4 cups cooked chopped chicken
1 3/4 cups shredded cheddar cheese
1 small onion, chopped
1 large celery rib, finely diced
1/3 cup freshly grated parmesan cheese (can use more)
30 saltine crackers, crushed
1/4 cup melted butter

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Using paper towels pat dry the steamed broccoli florets to remove as much moisture as possible.
  • In a large bowl combine both condensed soups with the next 7 ingredients until smooth and well combined.
  • Mix in the chopped chicken, broccoli florets, cheddar cheese, celery and chopped onion.
  • Transfer to prepared baking dish, then sprinkle with Parmesan cheese.
  • In a small bowl combine the crushed crackers with melted butter, then sprinkle over the top.
  • Bake uncovered in a preheated oven for 35-40 minutes or until hot and bubbly (this will thicken up more after baking).

Chicken Divan is a cheesy chicken and broccoli casserole with pasta and a creamy sauce. It's hearty and comforting and perfect for a weeknight dinner.

2 cups small (dry pasta (I used Rotini))
2 cups chopped broccoli (cut into small pieces)
20 ounces cream of chicken soup (2 cans)
1 cup milk
1 teaspoon lemon juice
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/8 teaspoon black pepper
1 cup shredded cheddar cheese (divided)
2 cups diced or shredded cooked chicken breast
1/2 cup Panko crumbs
1 tablespoon melted butter
1 tablespoon fresh minced parsley (or 1 teaspoon dried)

Steps:

  • Preheat oven to 375 degrees F. Spray a large, 13x9-inch casserole baking dish with nonstick cooking spray and set aside.
  • Boil water in a pot and season generously with salt. Cook pasta to al dente according to package directions, adding the broccoli during the last 2 minutes. Drain well and set aside.
  • Meanwhile, in a large bowl, combine cream soup, milk lemon juice, onion powder, paprika and black pepper. Stir in cheddar cheese, then chicken breast. Finally stir in the pasta and broccoli, making sure it is well drained.
  • Pour mixture into the baking dish.
  • In a small bowl, combine panko, melted butter and parsley. Sprinkle on top of the casserole.
  • Bake, uncovered, in the preheated oven for 25-30 minutes or until breadcrumbs are golden and casserole is bubbly.
