2¼ pounds (6 medium breasts) boneless, skinless chicken breast
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable or canola oil
1 large lime
6 tablespoons unsalted butter
1 teaspoon chopped fresh dill
1 teaspoon finely chopped chives

Steps:

  • Sprinkle chicken breasts with salt and pepper. In 12-inch skillet over medium heat, cook chicken breasts in hot oil until fork tender and browned on both sides (about 10 minutes). Arrange on platter and keep warm.
  • Spoon off the oil in skillet. Squeeze juice from lime into the skillet. Over low heat, cook until lime juice bubbles. With a wire whisk, stir in the butter- 1 tablespoon at a time; cook, stirring until butter becomes opaque and forms a creamy sauce. Stir in the dill and chopped chives.
  • Spoon sauce over chicken to serve.

4 small boneless skinless chicken breasts
1/8 tsp salt
1/8 tsp pepper
2 Tbsp olive oil
1/4 cup butter
1 Tbsp lime juice
1/4 tsp dried dill or 1/2 tsp fresh dill

Steps:

  • Sprinkle both sides of each chicken breast with salt and pepper. Heat a skillet to medium heat and add olive oil. Cook chicken for 5-8 minutes on each side, or until a thermometer reaches 165°. Set chicken aside and cover with foil to keep warm.
  • Add butter to the skillet and melt. Stir in lime juice and dill. Return chicken to pan and spoon hot butter sauce over each piece.
  • Serve chicken with any remaining butter sauce and sprinkle with green onions if desired.

1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons canola oil
1/4 cup butter, cubed
1 tablespoon lime juice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, cook chicken in oil over medium heat for 5-7 minutes on each side or until a thermometer reaches 170°; drain. 4 (5 ounce) boneless chicken breasts
4 tablespoons honey
5 lemons
4 teaspoons dried dill weed
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon garlic powder
salt and freshly ground black pepper to taste
4 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Set chicken breasts into a shallow casserole dish and brush 1 tablespoon honey onto each breast.
  • Zest 1 lemon, then cut in half. Slice remaining lemons. Squeeze juice from 1 lemon over the tops of the chicken breasts and sprinkle with lemon zest. Combine dill, oregano, basil, garlic powder, salt, and pepper in a small bowl and sprinkle spices on top of the chicken. 4 boneless skinless chicken breasts
1/2 cup salted butter
4 tablespoons lime juice (the store-bought kind)
3 -4 limes
3 tablespoons dill weed
1 teaspoon minced garlic (to taste)
salt and pepper (to taste)

Steps:

  • Salt and pepper chicken breasts, and sprinkle both sides with a little dill weed.
  • Heat large skillet on medium heat.
  • Melt 1/2 stick of butter in skillet, garlic, salt & pepper, 1T of dill weed, 2T lime juice and the juice of 1.5-2 limes.
  • Add chicken breasts, over medium heat cook approximately 6-8 minutes per side or until done.
  • In seperate smaller skillet combine the other 1/2 stick of butter, 1.5T dillweed, 2T lime juice and juice of 1.5 lime (save at least 1/2 of a lime for garnish). Heat over low heat until combined and melted.
  • Pour sauce from second skillet over plated chicken breasts.
  • Garnish with lime slices. Slice off a thin circle of lime. Cut 1/2 down center and then pull ends in opposite directions to create a spiral like shape.
  • I serve this dish with rice or parmesan angel hair pasta and a vegetable.

1 egg, beaten
⅔ cup dry bread crumbs

1 lime, juiced

This is a very easy and very tasty chicken dish. I can even eat this on Weight Watchers,I just don't serve with the buttered noodles. Marinate time is only 15 min. so it is also quick. Prep time does not incluce marinating. Can't remember where I got this recipe from to give them credit.

1/4 cup lime juice or 1/4 cup lemon juice
1/4 teaspoon salt

  • Combine all marinade ingredients in heavy ziplock bag and mix.
