Steps:
- Heat oven to 350°F. Cook bacon in 12-inch skillet over medium-high heat, turning occasionally, 4-6 minutes or until crisp. Crumble bacon; set aside.
- Add butter to same skillet. Place chicken breasts in skillet. Cook over medium-high heat, turning once, 6-10 minutes or until chicken is no longer pink. Remove from skillet; place into ungreased 11x7-inch baking dish.
- Place onion and garlic in same skillet. Cook over medium-high heat 1-2 minutes or until onion is softened. Stir in bacon.
- Spoon onion mixture over chicken breasts; sprinkle with pepper. Top with parsley and cheese. Bake 10-15 minutes or until cheese is melted.

- Cook the bacon in a large skillet until done. Place the cooked bacon on a paper towel lined plate. Set aside. Discard the grease. Cut the bacon into pieces once cooled.
- Preheat oven to 350 degrees.
- Salt and pepper each side of the chicken and bake for 45 minutes. Add the shredded cheese to each chicken breast, then top with bacon pieces. Bake for another 5 minutes.
- Serve with your favorite side dish or salad.

- Make a pocket in each of the chicken breasts by slicing down one side, making sure to not slice all the way through. Stuff each pocket with mozzarella cheese and a 1/4 the minced garlic. - Preheat oven to 375°F.
- Butterfly each chicken breast. To butterfly, slice into the thick side of the breast and cut towards the thin point, being careful not to cut all the way through to the other side. You should be able to open the chicken breast (resembling the shape of a butterfly).
- In a small bowl, whisk eggs.
- In a second bowl, combine your bread crumbs, parmesan cheese, and garlic powder.
- On a plate or a wide bowl, spread out the flour.

- Season your chicken and cook for about 10 minutes on medium low heat or until easy to pierce with a fork and no longer pink. (If you have a George Foreman grill it may be quicker).
- Place chicken in a slightly greased baking dish.
- Sprinkle crumbled bacon equally over the chicken.
- Place one slice of mozzarella cheese over each breast.
- Place chicken breast in oven on 220°F.
- Mix your cornstarch and milk together in a small saucepan. Add your pepper and salt.
- Cook over medium heat stirring often until thickened. (2 minutes).
- Remove from heat and add shredded mozzarella cheese.
- Remove chicken breasts from oven and cover with cheese sauce. Serve with a side-dish of your choice. I used mashed potatoes covered with the same cheese sauce.

- Preheat oven to 425.
- Cut a slice on the side of each chicken breast starting in the middle and cutting to about 1/8 from the ends creating a pocket. Slice the small tomato into 4 slices. Cut bacon into strips approx 2 1/2 - 3 inches long.
- Season chicken inside and out. Place 2 tomato slices and a slice mozzarella cheese inside each chicken breast. Place sprig of rosemary on top of each breast. Cover each breast with 4 strips of bacon tucking ends underneath. Place in shallow baking dish and bake for 45-50.
- Remove bacon from chicken breasts and put off to the side for later use. Stick chicken back in the oven for an additional 8-10 minutes until browned. While the chicken breast brown, finish cooking the bacon either in a pan or in the microwave. When chicken is completely browned remove from oven and remove and discard the rosemary sprig. Crumble bacon and serve on top of chicken.
