Tangy marinated chicken and mushrooms, wrapped in bacon and skewered. Excellent for entertaining and trying something new! These are a must-try! (They can also be broiled instead of grilled, if you're low on time.)

¼ cup soy sauce
¼ cup cider vinegar
2 tablespoons honey
2 tablespoons canola oil
10 large mushrooms, cut in half
2 green onions, minced
3 skinless, boneless chicken breast halves - cut into chunks
½ pound sliced thick cut bacon, cut in half
1 (8 ounce) can pineapple chunks, drained
skewers

Steps:

  • In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
  • Preheat grill for high heat.
  • Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.
  • Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
  • Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

I was craving chicken and bacon and I wanted something grilled and I came up with these easy to make kabobs. They are so good. Enjoy!!!

Number Of Ingredients 10

12 -16 button mushrooms (or whatever muchroom you prefer)
1 large green pepper, diced into large squares
12 -16 cherry tomatoes
1 large onion, cut into unseparted chunks
2 lbs boneless skinless chicken breasts or 2 New York strip steaks, if you want to mix and match
6 -8 slices bacon, cut in half width wise
6 -8 wooden skewers
salt
pepper
seasoning, your preference

Steps:

  • You want to start out by soaking you wooden skewers in water for at least 25 minutes so they do not burn.
  • Chop up all your veggies into the desired size.
  • chop your chicken into chunks.
  • You dont want them too big otherwise your bacon and veggies might burn waiting for it to cook.
  • Cut your bacon in half.
  • Start poking a piece of veggie onto the skewer.
  • When you want to put a piece of chicken on, grab one pice of the bacon that was cut in half and wrap it around the chunk of chicken so the ends are at the same area.
  • Poke the skewer where the ends of the bacon meets.
  • Just start alternating all the veggies and chicken, and if you are using it steak, alternate the steak and chicken.
  • Put them on the grill on a low setting so as to not burn the bacon, and season with spices you prefer.
  • Cook until the juices run clear in the chicken.
  • Eat and enjoy!

This was inspired by my 10 year old son who wanted bacon wrapped chicken, but it was my husband that I caught "licking the plate" at the end of the night....ENJOY... This is simple enough for family, but good enough for a BBQ with company....

1 large skirt steak
4 boneless skinless chicken cutlets
1 1/2 cups teriyaki sauce (I recommend SoyVay with sesame seeds)
3 tablespoons sesame seeds (if needed)
1 cup white vermouth (sherry may work too)
5 tablespoons garlic, chopped
1 onion, diced
8 slices bacon (or whatever you need to wrap chicken)
lemon juice

Steps:

  • Trim all excess fat from skirt steak and slice into kabob sized slices. (I made mine about 1 inch thick so they would come out medium-well when done) Cut chicken into pieces that corresponds to the cooking time of the steak. (Again, mine were about 1 1/2 inch cubes).
  • Combine teriyaki sauce, vermouth, garlic and onion in a large bowl. Add meats and marinate 4-6 hours, turning occasionally. Meanwhile, soak wooden skewers in water until ready to make kabobs.
  • When ready, wrap 1/2 slice bacon around each piece of chicken. Make kabobs by alternating steak and chicken on skewers, making sure to stab through the bacon to keep it wrapped around the chicken.
  • Cook over med-high heat on BBQ, turning once, cooking about 15 minutes total. Baste with leftover marinade, and squirt with lemon juice during cooking.
  • If you cant find teriyaki sauce with sesame seeds, add lots of sesame seeds to the marinade -- I dont know if it makes a difference, but why take the chance for such a small thing. I found Soy Vay to be the absolute best brand of teriyaki sauce.
  • Time does not include marinating time, but the prep is so quick that I did all of it while getting my kids out the door for school in the morning. Then, after setting up the kabobs I refrigerated them until ready to cook that evening.

8 skewers
4 skinless chicken breasts
8 slice bacon
1 green bell pepper
1 fresh cut pineapple
2 c cranberry juice
1 c apple juice
2 c apricot jam
1 tsp salt
1 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp basil, dried

Steps:

  • 1. Soak the skewers for about 30 minutes in the apple juice. (This helps the skewers not to burn and infuses the apple flavor into the chicken kabobs.)
  • 2. Take the skinless chicken breast and cut the long way into 1 1/2 inch thick strips until you have 8 chicken strips. (You can also purchase them already cut.) Cut away any remaining fat or skin. Clean the chicken thoroughly.
  • 3. Soak the chicken in cranberry juice for 30 minutes.
  • 4. While the skewers and chicken are soaking, cut the fresh pineapple and green bell pepper into 8 bite-size chunks. (You can use canned pineapple chunks.)
  • 5. Mix all the seasonings together in a small bowl.
  • 6. Season the chicken liberally on all sides.
  • 7. Once everything has been soaking/seasoned and cut into bite-size chunks, you're ready to begin assembling the kabobs. Pierce one end of a chicken strip with a skewer. Then pierce one end of a bacon strip and lay over the chicken. Allow both chicken and bacon strip to lay to one side of the skewer. Add a chunk of pineapple and a chunk of green bell pepper to the skewer. Snake the chicken and bacon strips over the chunks, then repeat adding the chunks until all the chicken and bacon strip is assembled on the skewer.
  • 8. Repeat for the remaining skewers.
  • 9. Now that all the skewers have been assembled, place the chicken bacon kabobs on the grill, preheated medium to low. Grill 15-20 minutes turning halfway through the cooking process.
  • 10. While kabobs are on the grill, prepare the glaze. Reduce apricot jam on low heat, stirring often.
  • 11. Once the kabobs are done grilling, brush the jam over the kabobs. Turn them and brush the other side allowing the kabobs to cook with the glaze for about 2 minutes on each side. Remove from the grill and enjoy! :)

1 large pineapple, cut into 1 1/2 inch chunks
2 large red bell peppers, cut into 1 1/2 inch pieces

12 strips of thick cut bacon
1 1/2 cups pineapple juice
1 1/2 tablespoons cornstarch
1/2 cup brown sugar
2 tablespoons soy sauce

  • ~To make the Hawaiian sauce: * Combine all ingredients in a medium saucepan and stir until the cornstarch is dissolved. * Bring the mixture to a boil, reduce the heat to medium and simmer for 2 minutes. * Set-aside until ready to use. ~Thread the skewers. * Weave the bacon around each piece of chicken and pineapple, stick the bell pepper and onion together and weave the bacon around both of those.
