GRANDMA ANNIE'S CHICKEN

This is a dish to take to a sick friend or neighbor. It is my version of "chicken soup" handed down from my mother, Annie. It freezes well. Thaw completely before cooking. It can be served hot, as a dinner entree, or sliced when cooled and served as a luncheon dish. It's also great to take on picnics. Number Of Ingredients 10

1 cup butter, melted
1 garlic clove, minced
3/4 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
3 tablespoons minced fresh parsley
8 boneless skinless chicken breast halves (4 ounces each)
SAUCE:
1/2 cup mayonnaise
1 teaspoon Dijon mustard
Lemon juice to taste

Steps:

  • In a shallow dish, combine butter and garlic. In another a shallow dish, combine bread crumbs, cheese and parsley. Dip chicken in butter, then coat evenly with crumb mixture., Roll up chicken and place seam side down in a 13-in. x 9-in. baking pan. Drizzle with remaining butter. Bake, uncovered, at 350° for 45-50 minutes or until chicken juices run clear., Meanwhile, combine sauce ingredients. Cover and refrigerate until serving. Serve chicken with a dollop of sauce.

Chicken Chalakiles image

A savory soup made with chicken and ground toasted rice.

Number Of Ingredients 13

2 cups uncooked rice
2 boneless skinless chicken breasts, cut into small pieces
3 boneless skinless chicken thighs, cut into small pieces
1 med onion, diced
1 tablespoon chopped garlic
1 tablespoon coconut oil
½ teaspoon black pepper
3 tablespoons chicken seasoning*
10 cups water*
1 packet achote powder
1 can (14-oz) coconut milk
Red pepper flakes, to taste (optional)
*Note: You can use chicken broth instead of water; omit the water AND chicken seasoning if using chicken broth.

Steps:

  • Place the uncooked rice in a skillet over medium heat. Cook for a few minutes until the rice is evenly browned, stirring occasionally to ensure even browning. Let the toasted rice cool then grind in a food processor until you get the consistency of cornmeal. Set aside.
  • Place the chicken, onion, garlic, coconut oil and black pepper into a large soup pot. Cook over medium heat until the chicken is no longer pink.
  • Add the chicken seasoning, water, achote powder and ground rice to the pot. Stir to combine the ingredients then bring the mixture to a boil. Cook, uncovered, for 10 minutes, stirring occasionally.
  • Stir in the coconut milk; cook for a couple of minutes then remove from the heat.

ANNE'S CROCK POT CHICKEN

I don't remember where I got this recipe, but it's been a family favorite. The sauce is good over rice, noodles, or mashed potatoes.

3 lbs chicken pieces
salt and pepper
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup sherry wine
2 tablespoons butter, melted
2 tablespoons Italian salad dressing mix
6 ounces cream cheese, cubed
1 tablespoon onion, chopped

Steps:

  • Wash chicken and pat dry.
  • Brush with butter.
  • Sprinkle with salt and pepper.
  • Place in crock pot.
  • Sprinkle with dry salad mix.
  • Cover and cook on low for 5 to 6 hours.
  • About 3/4 hour before serving, mix soup, cream cheese, wine, and onion in small saucepan.
  • Cook until smooth. Pour over chicken in pot.
  • Cover and cook for 30 minutes on low.
  • Serve with sauce.
