CHICKEN AND SLIDERS

This recipe is an old French Canadian recipe which originated during the depression. It consists of tender pieces of chicken and homemade noodles swimming in a delicious gravy. A real rib sticker and a favourite with my family during the winter. Sounds harder than it is and it is absolutely delicious!

3 pounds whole chicken
2 onions, quartered
3 stalks celery, cut into 1 inch pieces
2 bay leaves
salt and pepper to taste
1 egg
4 cups all-purpose flour

Steps:

  • Wash chicken and place in large pot. Cover with water and add chopped vegetables, bay leaves, salt and pepper. Bring to a boil, then reduce heat and simmer for about 2 hours or until meat comes away easily from the bone. Remove chicken from broth and strain liquid. Reserve the broth and discard all vegetables.
  • When chicken is cool remove meat from the bones and all skin, keeping the chicken meat in reasonably large pieces.
  • To make the noodles(sliders): Beat the egg with some of the cooled broth, measure out the flour, work the egg mixture into the flour adding broth as required until the dough forms a ball. Knead the ball for a few minutes. Roll out the dough on a floured surface. Cut the dough into strips about 1 1/2 inches wide and 3 inches long. Don't worry if they are irregular in shape. Leave any excess flour on the noodles.
  • Bring the reserved broth to a rapid boil, add the noodles and let them boil for about 5 minutes. Reduce heat, add cut up chicken and simmer until the broth is very thick like gravy (add a little flour to thicken if required). Add salt and pepper to taste.

1/4 cup sugar
1/2 teaspoon kosher salt
1 cup julienned carrot
1 cup julienned daikon
1/2 cup soy sauce
1/3 cup light brown sugar
1 tablespoon mirin
1 tablespoon seasoned rice vinegar
2 teaspoons sambal (Asian chile-garlic sauce)
1 pound ground chicken (50/50 white and dark meat)
1/3 cup panko breadcrumbs
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon soy sauce
2 teaspoons sesame oil
1 egg, whisked
3 scallions, finely chopped
Kosher salt and freshly ground black pepper
Canola oil, for the pan
8 soft Hawaiian buns
1/2 cup fresh cilantro leaves
8 bamboo skewers

Steps:

  • For the quick-pickles: In a small saucepan, combine the vinegar, sugar, salt and 1/2 cup water. Bring to a boil, stirring to dissolve the sugar. Add the carrot and daikon and stir to combine. Turn off the heat and set aside to cool. Refrigerate, covered, for 2 hours.
  • For the sauce: Bring the soy sauce, brown sugar, mirin, vinegar and sambal to a simmer in a small saucepan. Cook for 5 to 7 minutes. Set aside to cool.
  • For the meatballs: In a large bowl, combine the chicken, panko, garlic, ginger, soy sauce, sesame oil, egg, scallions and some salt and pepper. Mix well to combine, but don't overwork. Form the mixture into eight 2-inch balls.
  • Heat a grill pan over medium-high heat. Drizzle the pan with canola oil. Add the meatballs and cook for about 4 minutes per side, or until cooked though. Baste generously with sauce during the last 3 minutes of cooking.
  • To assemble the sliders: Serve the meatballs on the buns, topping each with a tablespoon of the quick-pickles (drained) and some cilantro leaves. Secure with bamboo skewers and serve on a large platter with extra sauce on the side.

Steps:

  • Cut block of rolls horizontally in half. (Do not separate rolls.)
  • Place bottom halves of rolls in 13x9-inch pan sprayed with cooking spray; top with chicken, cheese and spinach.
  • Spread 1/4 cup dressing onto cut sides of top halves of rolls; place, dressing sides down, on sliders.
  • Mix remaining dressing with remaining ingredients until blended; brush over sliders.
  • Refrigerate 20 min.

¼ cup butter
2 tablespoons maple syrup
1 tablespoon canola oil
1 tablespoon brown sugar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray.
  • Place 20 chicken nuggets in a single layer on the prepared baking sheet. Reserve any remaining nuggets for another use.
  • Bake nuggets in the preheated oven for 6 minutes. Flip and bake until crispy, 5 to 7 minutes more.
  • Meanwhile, prepare sauce: Heat butter, maple syrup, canola oil, brown sugar, paprika, cayenne, kosher salt, garlic powder, and black pepper in a small saucepan over medium-low heat, stirring constantly, until smooth and well combined, 3 to 5 minutes. Steps:

  • Coat a medium saucepan with cooking spray. Cook bell pepper, onion and garlic in pan over medium heat, stirring, 3 minutes. Add chicken, barbecue sauce, chipotles and 1/4 cup water; cover and simmer until chicken reaches an internal temperature of 165°:F, 25 to 30 minutes.   • For the waffle batter: Combine the flour, sugar, baking powder, salt and baking soda. In a separate bowl, beat together the buttermilk, butter and eggs. Make a well in the center of the dry ingredients and add the wet ingredients to the dry while stirring with a whisk. Mix until well combined and there are no lumps. Cover with plastic wrap.

6 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup vegetable oil
1 teaspoon ground cumin
Zest of 1 lime plus 1 tablespoon fresh lime juice
1/4 cup loosely packed fresh cilantro leaves
4 strips crisp-cooked bacon, chopped
3 avocados, flesh mashed
2 Roma tomatoes, seeded and chopped
1 tablespoon hot sauce (I like Cholula here), optional
Kosher salt
2 onions, thinly sliced
1/4 cup olive oil
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
12 slider buns
3 slices pepper Jack cheese, cut into quarters to make 12 squares

Steps:

  • For the chicken and marinade: Gently press each thigh between 2 pieces of plastic wrap to flatten (do this with a rolling pin, it's less brutal than pounding). Season the chicken on both sides with salt and pepper. Place the chicken in a large resealable plastic bag with the oil, cumin and lime zest and juice. Seal the bag and squish everything around until everything is coated by everything. Rest on the counter for 1 hour.
  • For the spread: In a medium bowl, add the cilantro, bacon, avocado, tomatoes and hot sauce if using. Fold to combine gently so the tomatoes don't get mashed, then taste and season with a pinch of salt if needed. Cover by placing plastic wrap directly on the top of the spread and refrigerate until using.
  • For the caramelized onions: In a large pot on low heat (or in a pot over the indirect heat area of a grill), add the onions, olive oil, butter, a pinch of salt and a few grinds of pepper. Cook, stirring every other minute or so, until the onions are tender and a deep golden brown, about 30 minutes.
  • Preheat a grill or grill pan to medium-high heat.
  • Remove the chicken from the bag, shaking off excess marinade. Place the chicken over the direct heat of the grill (or on the grill pan). Once the chicken releases from the grill and can be flipped, flip it to the indirect heat side of the grill (or lower the heat on the grill pan) and grill until cooked through, just 3 to 4 minutes more. Remove the chicken to a cutting board and cover with aluminum foil for 10 minutes. Roughly chop the chicken.
  • To assemble and serve. Build each burger in this order, starting at the bottom with: the bottom bun, slice of cheese, big scoop of chicken and caramelized onions and the top roll slathered with tons of avocado spread.

1/2 cup mayonnaise
1/2 cup chopped green onion
2 tablespoons pickle juice (from a jar of pickles)
2 tablespoons cider vinegar
2 tablespoons sugar
1/2 teaspoon coarse salt
fresh ground black pepper
1 (16 ounce) package shredded coleslaw mix
chicken
1 cup bottled barbecue sauce
3 tablespoons cider vinegar
3 cups roughly shredded rotisserie chicken

Steps:

  • To prepare slaw, whisk all ingredients together, except cole slaw mix, in a large bowl. Add cole slaw mix and toss to coat. Refrigerate until ready to serve.
  • To prepare chicken, combine barbecue sauce, vinegar and chicken in a bowl. Microwave about 3 minutes or until thoroughly heated.
  • To serve, place chicken on bun bottoms. Spoon slaw on top of chicken. Place remaining bun halves on top.

1 cup barbecue sauce
1 1/2 cups lager beer, such as a pilsner
2 tablespoons whiskey
1 teaspoon seasoned salt
1 teaspoon garlic-pepper blend
1/2 teaspoon ground mustard
1 to 2 teaspoons Buffalo wing sauce or other hot sauce
1 deli rotisserie chicken, skin and bones removed, shredded (about 4 cups)
12 slider buns, split
12 pimiento-stuffed green olives, if desired

Steps:

  • In 2-quart saucepan, heat sauce ingredients to boiling over medium heat, stirring frequently. Reduce heat to medium-low and simmer 20 minutes, stirring occasionally to prevent scorching.
  • In medium microwavable bowl, place chicken; cover. Microwave on High 4 to 5 minutes or until hot. Add shredded chicken to sauce in saucepan, stir to coat.
  • Place about 1/3 cup chicken mixture on bottom of each slider bun; top with bun top. Garnish each sandwich with green olive.

1/4 cup honey
2 tablespoons cider vinegar
2 tablespoons Sriracha chili sauce
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
2 pounds boneless skinless chicken thighs (about 8 thighs)
3/4 cup brown ale
3 tablespoons cornstarch
3 tablespoons water
12 slider buns
Sweet pickles and additional Sriracha sauce, optional

Steps:

  • In a 3- or 4-qt. slow cooker, combine the first 8 ingredients. Add chicken and ale; toss to coat. Cook, covered, on low until chicken is tender, 6-8 hours. Remove meat; when cool enough to handle, shred with 2 forks., Strain cooking juices; skim fat. Transfer juices to a small saucepan; bring to a boil. In a small bowl, mix cornstarch and water until smooth; stir into saucepan. Return to a boil, stirring constantly; cook and stir until thickened, about 5 minutes. Add chicken to the sauce; toss to coat. Serve on buns, with pickles and additional Sriracha sauce if desired.
