These chicken rissoles are healthy and easy to make. These chicken patties can be made with turkey, beef or lamb mince too. Serve with a side of fries.

1kg (2lbs) boneless and skinless chicken thighs, minced
1 large carrot, peeled and grated
1 courgette, washed and grated
2 garlic cloves, peeled and crushed
5ml (1 tsp) salt
5ml (1 tsp) onion powder
1 egg

Steps:

  • Preheat your oven to 180°C/355°F/gas mark 4.
  • Mix all the ingredients in a big bowl until everything is well incorporated.
  • Using your hands or a burger press, shape portion-sized patties of equal thickness.
  • Place the rissoles on a lined baking sheet and bake for 30 minutes or until the meat is cooked through.
  • Serve the rissoles with salad and your favourite dips. Alternatively, serve them in burger buns!

Could classic chicken and rice be one of the most beloved comfort dinners to ever hit the plate? We think so. And to blow your mind even more, this version is made in just one skillet. Here we use bone-in, skin on chicken thighs which cook up in exactly the same time as the rice to guarantee juicy chicken. A quick broil at the end creates the perfect crispy skin and gives a little crunch to the rice and vegetables.

2 tablespoons canola oil
4 to 6 bone-in, skin on chicken thighs (about 6 ounces each)
1/2 teaspoon paprika
Kosher salt and freshly ground black pepper
4 medium carrots (about 12 ounces), sliced into 1/4-inch rounds
3 stalks celery (about 9 ounces), sliced 1/4-inch thick
2 large shallots (about 4 ounces), finely diced
2 cloves garlic, minced
1 tablespoon fresh thyme leaves, chopped
1 tablespoon fresh oregano leaves, chopped
2 teaspoons finely grated lemon zest plus 1 tablespoon lemon juice
1 cup long-grain rice
4 cups low-sodium chicken stock
1 tablespoon chopped fresh chives

Steps:

  • Preheat the broiler. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Toss the chicken with the paprika, 1 teaspoon salt and a few grinds of pepper in a large bowl. Place the chicken skin-side down in the skillet and cook undisturbed until the skin is golden but not too dark, 4 to 5 minutes. Remove the chicken to a plate using a metal spatula and add the remaining 1 tablespoon oil to the skillet.
  • Add the carrots, celery and shallots to the skillet and cook, stirring occasionally, until softened but not yet turning golden, 4 to 5 minutes. Stir in the garlic, thyme, oregano, lemon zest, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and cook just until you begin to smell the garlic, about 1 minute. Stir in the rice and cook undisturbed until lightly toasted, about 2 minutes. Pour in the broth, add 1/2 teaspoon salt and stir to combine, then add the chicken thighs back to the pan, skin-side up. Bring the liquid to a boil then cover, reduce the heat to a simmer and cook until the rice is tender and the chicken is cooked through, 15 to 20 minutes.
  • Remove the lid from the pan and broil until the chicken skin is crispy and golden, 2 to 3 minutes. Sprinkle with the chives.

1 1/2 cups cooked brown rice (long cooking)
500 g ground chicken
2 tablespoons rye flour
1/2 cup buttermilk
1 tablespoon fresh sage (finely chopped)
3 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
breadcrumbs
olive oil (or your favourite vegetable oil)

Steps:

  • Mix cooked brown rice, ground chicken, Rye flour, fresh sage, salt and pepper in large bowl.
  • Add buttermilk and half of the beaten eggs stirring well.
  • Cover and refrigerate for 1 hour.
  • Remove from refrigerator and shape mixture into hand sized patties.
  • Dip in remaining beaten egg, roll in bread crumbs and fry in olive oil.
  • May be served hot with vegetables or cold with salad.

1 tbsp olive oil
1 small onion , finely chopped
1 garlic clove , chopped
1½ slices white bread
3 tbsp milk
400g skinless boneless chicken breast fillet
1 small egg , lightly beaten
4 tbsp tomato ketchup
1 tsp Worcestershire sauce
2 tbsp chopped fresh parsley
½ tbsp chopped fresh thyme (optional)
198g can sweetcorn , drained
125g pack low-fat soft cheese with chives
a little milk
cucumber sticks
red pepper strips
baby cherry tomatoes

Steps:

  • Heat the oil in a pan and sauté the onion with the garlic. Soak the bread in the milk.
  • If using the chicken breasts, chop in a food processor. Tear the bread and add to the chicken with the onion, egg, ketchup, Worcestershire sauce, herbs and seasoning. Blitz for a few seconds.
  • Tip the mixture into a bowl and stir in the sweetcorn. Form into 18 round rissoles.
  • For two children, sauté six rissoles in hot oil for 2-3 minutes each side. Beat cheese and milk in a bowl to make a dip for the veg.

6 skinless, boneless chicken breast halves, cut into bite size pieces
2 cups milk
2 cups uncooked white rice
2 (10.75 ounce) cans condensed cream of chicken soup
1 teaspoon seasoned salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine the milk, rice, soup and seasoned salt if desired. Mix well. Pour mixture into a lightly greased 9x13 inch baking dish. Add the chicken pieces.
