SCAMPI SAUCE:
5 tablespoons butter
2 tablespoons garlic, crushed
3/4 teaspoon crushed red pepper
1 tablespoons Italian seasoning
Black pepper to taste
1 1/2 cups white wine
1 1/2 cups chicken broth
WHITE SAUCE:
1 tablespoon butter
2 tablespoons flour
3/4 cup milk, hot
ASSEMBLY:
4 chicken breasts, sliced
Olive oil
Butter
2 lemons, zested and juiced
1/4 cup chicken broth
1 red pepper, sliced (optional)
1 package angel hair pasta, cooked and drained
Parmesan

Steps:

  • SCAMPI SAUCE: Heat butter over low heat; add the garlic, Italian seasoning, crushed red pepper and black pepper. Cook for about 2 minutes on low heat. Add the wine and chicken broth. Stir until combined and simmer about 30 minutes. WHITE SAUCE: Heat 1 tablespoon butter in a sauce pan, add 2 tablespoons flour and cook for 2 minutes on medium heat stirring constantly. Slowly add 3/4 cup hot milk. Set aside. Keep the white sauce hot until you add to the scampi sauce. In a large skillet, saute chicken in two batches in a little olive oil and butter until almost done. You want the outside nicely browned. If using, add the peppers and saute for 2 minutes. Return all chicken to the skillet. Add 1 tablespoon of butter and increase heat to medium high. Add lemon juice and broth and boil for 1 minute, stirring constantly. Turn off heat and add the zest. Once the scampi sauce has simmered for 30 minutes, add the white sauce and cook till slightly thickened. Reserve about 1/2 cup of the sauce and toss the remaining sauce and pasta together and place in a large serving plate. Arrange chicken on top, pouring over any remaining pan juices. Serve with reserved sauce and parmesan.

1 tablespoon minced garlic
1 teaspoon salt
1/4 cup fresh parsley
1/2 teaspoon pepper
1 (14 1/2 ounce) can petite cut tomatoes, drained and rinsed
1 lemon, juice of
cooked noodles (I prefer bowtie)

Steps:

  • In skillet, heat together butter and olive oil and saute green onions and garlic.
  • Add lemon juice, salt, pepper and parsley. Continue cooking for a few minutes.
  • Add tomatoes and heat through. Serve over buttered noodles.

The garlic amount may be adjusted to taste, and use whipping cream only for this!

1/2 cup butter
2 tablespoons olive oil
2 green onions, chopped
1/2 teaspoon dried red pepper flakes (to taste, or use pinch cayenne) (optional)
2 teaspoons dried Italian seasoning
2 tablespoons fresh minced garlic (can use less)
3 tablespoons lemon juice (or to taste)
4 boneless skinless chicken breasts
1 teaspoon seasoning salt (or to taste)
black pepper
1/2-3/4 cup whipping cream (use whipping cream only!)
1/4-1/3 cup grated parmesan cheese (or to taste, more for topping)
1 lb thin spaghetti, cooked (or to taste, or use penne pasta)

Steps:

  • Slice the chicken breasts into four long strips; set aside.
  • In a large skillet melt 1/2 cup butter with the olive oil over medium heat; add green onions, red pepper flakes, Italian seasoning and garlic; cook stirring for 2 minutes no more than 2 minutes or the garlic will start to burn) then stir in lemon juice.
  • Add in chicken strips then sprinkle with seasoned salt and black pepper; cook stirring with wooden spoon over medium heat for 3-4 minutes.
  • Reduce heat to low and cook for about 15-20 minutes or until the chicken is thoroughly cooked through.
  • Add in whipping cream and Parmesan cheese, stirring continuously until heated and mixed through, about 6-8 minutes (there might be traces of butter around the edges of the skillet, don't worry everything will mix in together once it is tossed with the pasta).
  • Add in cooked pasta; toss with the cream sauce to coat, then sprinkle with more Parmesan cheese.
