1/4 cup finely chopped cucumber
1/4 cup reduced-fat mayonnaise
BURGERS:
1/2 cup chopped roasted sweet red pepper
1 teaspoon garlic powder
1/2 teaspoon Greek seasoning
1/4 teaspoon pepper
1-1/2 pounds lean ground chicken
1 cup crumbled feta cheese
6 whole wheat hamburger buns, split and toasted
Optional: Lettuce leaves and tomato slices

Steps:

  • Preheat broiler. Mix cucumber and mayonnaise. For burgers, mix red pepper and seasonings. Add chicken and cheese; mix lightly but thoroughly (mixture will be sticky). Shape into six 1/2-in.-thick patties., Broil burgers 4 in. from heat until a thermometer reads 165°, 3-4 minutes per side. Serve on buns with cucumber sauce. If desired, top with lettuce and tomato. Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to an airtight freezer container; return to freezer. To use, broil frozen patties as directed, increasing time as necessary.

1 pound ground chicken
½ cup dry bread crumbs
1 egg
1 tablespoon lemon juice
2 tablespoons chopped sun-dried tomatoes
1 tablespoon chopped fresh basil
3 teaspoons chopped fresh oregano
salt and pepper to taste
2 ounces crumbled feta cheese

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Mix the chicken, bread crumbs, egg, lemon juice, sun-dried tomatoes, basil, oregano, salt, and pepper together in a bowl; form the mixture into 5 patties. Divide the feta cheese between the 5 patties; place a portion of the feta cheese atop each patty and fold the chicken mixture around the cheese so that the cheese is in the center.
  • Cook on the preheated grill until no longer pink on the inside and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (75 degrees C).

1 large egg, lightly beaten
1 large shallot, minced
2 tablespoons crushed Ritz crackers
2 tablespoons minced fresh dill
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground chicken
1/2 cup finely crumbled feta cheese
2 tablespoons canola oil
4 hamburger buns, split
Refrigerated tzatziki sauce and sliced tomato, optional

Steps:

  • Combine first 7 ingredients. Add chicken; mix lightly but thoroughly. Gently stir in cheese., Shape into four 1/2-in. thick patties (mixture will be soft). Brush patties with oil. Grill, covered, over medium heat until a thermometer reads 165°, 5-6 minutes per side. Serve on buns. If desired, top with tzatziki sauce and tomato.

1 tablespoon olive oil
2 shallots, chopped
2-1/2 cups fresh baby spinach, coarsely chopped
3 garlic cloves, minced
2/3 cup crumbled feta cheese
3/4 teaspoon Greek seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
8 whole wheat hamburger buns, split
Optional toppings: refrigerated tzatziki sauce, fresh baby spinach and tomato slices

Steps:

  • In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly.
