3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 teaspoon honey
½ teaspoon dijon mustard
¼ teaspoon salt
1 pinch ground black pepper
1 boneless, skinless chicken breast, sliced into 1/2-inch (1 cm) pieces
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon paprika
1 tablespoon olive oil
1 pear, sliced
2 cups baby spinach
1 tablespoon dried cranberry
2 tablespoons toasted unsalted walnut, chopped

Steps:

  • Add the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper together in a small bowl. Set aside.
  • On a cutting board, season the chicken with salt, pepper, and paprika.
  • Heat olive oil in a pan over medium heat. Once the oil begins to shimmer, add the chicken and cook until browned on all sides, about 4 minutes.
  • In a large bowl, add the sliced pear, spinach, cranberries, walnuts, and cooked chicken, and dress with the vinaigrette.

1 (2 to 3-pound) whole chicken
1 gallon water
2 carrots, cut in 2-inch pieces
3 celery stalks, cut in 2-inch pieces
1 onion, halved
1 head garlic, halved horizontally
2 turnips, halved
4 fresh thyme sprigs
2 fresh rosemary sprigs
10 peppercorns
3 bay leaves
1/2 cup walnuts, roughly chopped
Kosher salt
About 1 cup mayonnaise
1 heaping tablespoon Dijon mustard
1/2 lemon, juiced
2 celery stalks, small diced
2 tablespoons freshly chopped parsley leaves plus sprigs, for garnish
2 tablespoons extra-virgin olive oil
Freshly ground black pepper
2 cups shredded chicken meat, roughly chopped
8 slices sourdough bread, cut 1/2-inch thick
4 tablespoons unsalted butter, room temperature
1/4 cup cranberry sauce
1/2 pound brie
1 green apple, thinly sliced

Steps:

  • Begin by poaching the chicken. Put the chicken in a large stockpot and cover with 1 gallon of cool water. Add the vegetables and herbs and bring the pot up to a boil over medium-high heat. Skim well; then simmer, uncovered, for 45 minutes, skimming frequently as the oil rises to the surface. When done, remove to a platter and set aside to cool. Strain the liquid and reserve it for use as chicken stock. Shred the chicken meat and discard the skin and bones.;
  • Preheat oven to 325 degrees F.
  • Roughly chop the walnuts and then gently toast in a dry skillet over medium heat until they brown and are slightly fragrant. Season walnuts with salt once they are finished toasting. Add the walnuts, mayonnaise, mustard, lemon juice, celery, parsley, olive oil, and salt and pepper, to taste, in a large mixing bowl and combine. Fold in the shredded chicken and set aside while you prepare the bread.
  • Toast the bread in a hot oven until golden. Smear each piece with a little butter and then a tablespoon of cranberry sauce over 4 of the pieces. Lay the 4 cranberry-smeared pieces out on a sheet tray and top each piece with 2 to 3 slices of thick-cut brie. Pop this back in the oven for a minute or 2 so the cheese is slightly melted and creamy. Remove from the oven and top with a few slices of green apple. Top with a scoop of the chicken salad and cover with the other half of the bread to complete the sandwich. Serve.

1 can of swanson canned chicken (or course you can double the recipe if you have more than 4 people)
1/2 cup dried cranberries
1/3 cup pine nuts
3/4 cup mayonnaise
1 cup shredded swiss cheese (I found a swiss & gruyere blend!) or 1 cup monterey jack cheese (I found a swiss & gruyere blend!)
salt and pepper
1 loaf of fresh ciabatta
tomatoes & lettuce (optional)
1/4 cup olive oil
1/4 teaspoon basil
1/4 teaspoon oregano
2 garlic cloves (crushed or minced)

Steps:

  • Begin by mixing the last four ingredients. This mixture is what you will brush on the Ciabatta bread slices. In small bowl, measure olive oil, add spices and crush garlic. Blend well and let sit.
  • In a separate large bowl, drain and add chicken, cranberries, pine nuts, mayo, cheese, salt and pepper. Mix well and refrigerate.
  • Heat large skillet or griddle to medium.
  • Slice Ciabatta bread into 1/4 inch slices. Liberally brush or spoon olive oil mixture on each slice and place this side down on griddle. Cook until light brown and slightly crispy.
  • For your picnic, you can bring the cooled bread slices in a plastic bag, and the chicken salad mixture in a disposable container. It's quick and easy to make the sandwiches right on the spot! When assembling the sandwiches, place the filling on the toasted sides of the bread, so the outside of the sandwich will be soft.

Per the website, "Executive chef Ford Fry, who came to EatZi's via the Ritz-Carlton in Aspen, Colo., says this is one of the most popular dishes at EatZi's, which specializes in salads, pastries and breads, all prepared on site. "The secret to its success is in the citrus dressing, " Fry said. "It's really light and doesn't absorb a lot of oil like other pasta salads."

1 1/4 lbs gemelli pasta (I only used 12 oz which worked great)
1/4 cup pine nuts
1/4 cup frozen corn (I used fresh corn, cut off the cobb)
10 ounces chicken (I used precooked chicken instead of poaching it)
1/4 lb asparagus
2 tablespoons minced fresh rosemary (I only used 1 T and it was very strong in this recipe)
2 tablespoons apple cider vinegar
salt and pepper
6 tablespoons honey (I only used 3 T and it was VERY SWEET, I caution you if you choose to use more)
3 tablespoons Dijon mustard
1/4 orange, Juice and zest of (I used the juice of half the orange)
1/2 cup olive oil
1/2 cup dried cranberries

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions.
  • Meanwhile, toast pine nuts in a single layer in preheated oven for 10 minutes.
  • Remove corn from freezer and set aside to thaw.
  • Poach chicken in a small amount of water until no longer pink. Remove from water and drain. When cool enough to handle, cut chicken into 1/2-inch cubes.
  • Blanch asparagus until of desired doneness. Drain and cool. When cool enough to handle, slice into 1-inch pieces.
  • In a large bowl, mix rosemary, vinegar, salt, pepper, honey, mustard, orange juice and olive oil.
  • In another bowl, combine pasta, pine nuts, thawed uncooked corn, chicken, asparagus, orange zest and dried cranberries. When well-mixed, add to bowl with dressing and toss to combine.
  • NOTE: I enjoyed the salad best when just slightly warm to room temp about 15 minutes after I made it. I didn't care for it cold and I don't think it was near as good on day two as it was on day one. Just personal preferences :).
