CHICKEN AND ASPARAGUS
With this recipe, you'll see fancy foods don't necessarily mean a lot of fuss. These "bundles" are prepared in no time and bake in the oven for a quick tasty dinner.

Steps:
- Cut each chicken breast half into 1/2-in. wide strips. Wrap two or three strips around three asparagus spears. Repeat with the remaining chicken and asparagus. Arrange in a greased 13-in. x 9-in. baking dish. combine salad dressing, soy sauce, ginger, salt if desired and pepper. Pour over the chicken bundles. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with sesame seeds and bake 15 minutes longer or until chicken juices run clear. Serve over rice if desired.

CHICKEN AND ASPARAGUS OLE`
My friend Pat Fair made this casserole for us when we first moved to Alabama. It quickly became a favorite in our house. I don't know exactly why it is called OLE`, but it sure is tasty. Pat served it to us for Lunch after Church and the tradition continues at our house.

Steps:
- 1. Boil the chicken breasts in seasoned water until tender. Cool and tear into bite-size pieces. Set aside.
- 2. In a large saucepan, saute the onion in butter and add the remaining ingredients except for the whole asparagus and almonds. Simmer the sauce until the cheese melts.
- 3. To assemble: Place a layer of chicken in the bottom of a large casserole dish. Top the chicken with a layer of asparagus tips, then a layer of asparagus spears. Top asparagus layers with about 1/2 of the sauce mixture. Repeat the layers, ending with sauce.
- 4. Top with almonds if. Bake at 350-degrees until bubbly, about 30 minutes. Do not add liquid, even if it looks dry.
- 5. This dish can be prepared ahead of time and then frozen. It freezes well.
BIG OLE BILL'S CHICKEN ASPARAGUS BAKE
A warm and comforting dish that is perfect year-round!

Steps:
- Preheat oven to 350 degrees.
- Rub Chicken with a Tablespoon of Olive Oil. Season with Salt and Pepper. Place on a baking sheet and bake for 30 to 40 minutes or until cooked through. Let cool and chop.
- Cook Egg Noodles according to package, drain and set aside.
- Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish and set aside.
- Drain Chopped Asparagus and set aside.
- Heat the 2 teaspoons of Olive Oil in a medium skillet over medium heat. Add the chopped Bell Pepper, Onion and Garlic. Cook until crisp-tender.
- Mix Soup, Eggs, Ricotta, salt, pepper and 1 cup Cheddar Cheese in a large bowl mix well.
- Add Onion mixture, Chicken, Asparagus and Noodles; mix well.
- Spread evenly in greased baking dish. Sprinkle evenly with remaining Cheddar Cheese.
- Bake until center is set and cheese is bubbly, about 30 minutes.
- Remove from oven a and let stand for 5 minutes.
- Serve with Red Bell Pepper strips or Fresh Italian Parsley if desired.

- If desired, partially cook asparagus; drain. Place the asparagus in a greased 9-in. square baking dish. In a skillet over medium heat, brown the chicken in oil on both sides. Season with salt and pepper. Arrange chicken over asparagus. , In a bowl, mix soup, mayonnaise, lemon juice and curry powder; pour over chicken. Cover and bake at 375° for 40 minutes or until the chicken is tender and juices run clear. Sprinkle with cheese. Let stand 5 minutes before serving.
