My mother used to make these at Christmas every year. After dusting them with powdered sugar she would pipe N-O-E-L in green icing on the tops of each one.

Number Of Ingredients 8

2 tablespoons butter
1 cup packed brown sugar
5 tablespoons all-purpose flour
1/8 teaspoon baking soda
2 eggs, beaten
1 teaspoon vanilla extract
1 cup chopped walnuts
1/4 cup confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Melt the butter in a 7x11 inch baking dish, and tilt the pan to coat all of the sides; set aside.
  • In a medium bowl, stir together the brown sugar, flour, and baking soda.
  • Mix in the eggs and vanilla until smooth, then stir in the walnuts. Pour over the melted butter.
  • Bake in the preheated oven for 20 minutes, or until the edges begin to brown.
  • Cool, then cut into squares, and dust with confectioners sugar.

1/3 cup butter, softened
2/3 cup packed brown sugar
1 large egg
3/4 cup all-purpose flour
2/3 cup whole wheat flour
2 teaspoons grated lemon zest
1-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup fat-free milk
1 cup chopped dates

Steps:

  • In a bowl, cream butter and brown sugar. Add egg; mix well. Combine the flours, lemon zest, baking powder, cinnamon, nutmeg and salt; add to creamed mixture alternately with milk, beating well after each addition. Stir in dates., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 325° for 13-15 minutes or until golden brown. Remove to wire racks to cool. Store in an airtight container.

Number Of Ingredients 9

2 tablespoons butter
1 cup packed brown sugar
1 cup chopped walnuts
⅓ cup all-purpose flour
⅛ teaspoon baking soda
⅛ teaspoon salt
2 eggs
1 teaspoon vanilla extract
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x9x2 inch baking pan, melt the butter or margarine.
  • Stir together the brown sugar, nuts, flour and salt. Add the eggs and vanilla. Carefully pour the flour and egg mixture oven the melted butter. DO NOT STIR!
  • Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Sift confectioners'' sugar over top. Placed waxed paper under wire rack, immediately invert pan onto rack. Let bars cool then dust again with confectioners' sugar. Cut into bars and write Noel on each bar with green decorator icing.
