You'll need just six ingredients, including a convenient boxed cake mix, to bake up these chewy bars chock-full of walnuts and dates. They are my husband's favorite snack, and he loves to take them to work. I often whip up a batch for bake sales or to share with my co-workers at our local car dealership.

1 package yellow cake mix (regular size)
3/4 cup packed brown sugar
3/4 cup butter, melted
2 eggs
2 cups chopped dates
2 cups chopped walnuts

Steps:

  • In a large bowl, combine cake mix and brown sugar. Add butter and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Combine dates and walnuts; stir into batter (batter will be stiff). , Spread into a greased 13x9-in. baking pan. Bake at 350° for 35-45 minutes or until edges are golden brown. Cool on a wire rack for 10 minutes. Run a knife around sides of pan to loosen; cool completely before cutting.

1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup quick-cooking oats
3/4 cup butter or margarine, melted
1 tablespoon grated orange peel
3 eggs
2 cups chopped dates (from two 8-oz packages)
2 cups chopped walnuts

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom and sides of 15x10x1-inch pan with baking spray with flour.
  • In large bowl, beat cake mix, oats, butter, orange peel and eggs with electric mixer on medium speed about 1 minute or until batter is thick. Stir in dates and walnuts. Spread in pan.
  • Bake 22 to 26 minutes or until top is golden brown and toothpick inserted in center comes out clean. Cool on cooling rack 10 minutes. Run knife around sides of pan to loosen bars. Cool completely, about 1 hour 30 minutes. For bars, cut into 8 rows by 6 rows. Store covered.

◾3/4 C. melted butter
◾2 eggs
◾2 C. chopped dates
◾2 C. chopped walnuts

Steps:

  • Preheat oven to 350. Grease a 13x9" pan and dust with flour; set aside. Combine cake mix and sugar in a large bowl and blend well. Add butter and eggs and mix until batter forms. By hand, stir dates and nuts into batter. Spread in prepared pan. Bake bars at 350 for 35 to 40 minutes until edges turn golden brown. Cool 10 minutes, then run knife around edges of pan to loosen sides. Cool 1 hour and then cut into bars.
