½ teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ cup packed brown sugar

1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
  • In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

½ cup butter
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup crushed cornflakes cereal
1 cup rolled oats
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 ⅓ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla. Sift together the flour, baking soda, salt and baking powder; stir into the creamed mixture. Add the oatmeal, crushed cereal and coconut and mix until combined.
  • Drop dough by teaspoonfuls onto a cookie sheet. Cookies should be about 2 inches apart. Bake for 10 to 12 minutes in the preheated oven. Cookies should be light brown at the edges and on the bottom. Remove from baking sheets to cool on wire racks.

  • In a medium bowl, whisk together flour, cocoa, and salt.
  • In the bowl of a mixer fitted with the paddle attachment, beat butter with brown sugar on medium-high speed until light and fluffy, about 5 minutes. Add egg and vanilla; beat on medium speed just to combine. Reduce speed to low and slowly add flour mixture, beating until combined. Fold in chocolate and almonds. I got this recipe from an email from King Arthur Flour and as I love all of their recipes, and specially love coconut and chocolate - this has got to be a winner. UPDATE: Finally made these and so glad I did - they don't flatten out and turn hard like so many of my cookies and the taste is very rich so one goes a long way. I think next time I'll add walnuts to make it even better.

1 cup thawed COOL WHIP Whipped Topping
2 egg whites
1 pkg. (7 oz.) BAKER'S ANGEL FLAKE Coconut, divided
2 Tbsp. granulated sugar
1/4 cup butter, softened
1 tsp. milk
1 cup powdered sugar

Steps:

  • Beat dry cake mix, COOL WHIP, egg whites and 1-1/2 cups coconut in large bowl with mixer until blended. Refrigerate 2 hours.
  • Heat oven to 375°F. Roll dough into 84 balls, using 1 tsp. dough for each. Place, 1 inch apart, on parchment-covered baking sheets. Spray bottom of drinking glass with cooking spray. Dip in granulated sugar, then use to flatten each ball to 1-1/2-inch diameter.

1/2 cup whole wheat flour
1 cup quick-cooking rolled oats
1 cup unsweetened shredded coconut
1 teaspoon baking soda
1 teaspoon kosher salt
1 stick (4 ounces) unsalted butter, at room temperature
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg, at room temperature, plus 1 egg yolk
1/2 cup semisweet chocolate chips

Steps:

  • In a medium bowl, whisk together the flour, oats, coconut, baking soda, and salt.
  • In a stand mixer fitted with the paddle attachment, cream the butter, brown sugar, and granulated sugar on medium-high speed fluffy and yellow.
  • Add the vanilla and the eggs, one at a time, beating after each addition for 30 seconds.
  • Reduce the speed to medium-low and add the flour mixture in three parts, beating for about 10 seconds after each addition. Add the chocolate chips and mix until just combined.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or overnight. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper.
  • Scoop out portions of dough the size of golf balls, roll them between your palms loosely, and place them 2 inches apart on the baking sheet (you'll need to bake the cookies in several batches). Halfway through baking, remove the pan from the oven and drop it onto a heat-safe flat surface, such as the open oven door (this deflates the cookies, creating a deliciously chewy center and crisp edges-in other words . . . perfect!). Immediately return the cookies to the oven, rotating the pan 180 degrees, and complete baking, until the center resists light pressure but is still somewhat soft.

  • To store extra dough and make future cookie baking a breeze, roll out balls and freeze them on a cookie sheet. Once they're set, transfer them to a resealable freezer bag or airtight container and keep them frozen for up to 3 months.   • Adjust oven rack to middle position and heat oven to 350 degrees. Line 2 large rimmed baking sheets with parchment paper. Whisk flour, coconut, baking soda, baking powder, and salt together in medium bowl. Set aside. Place 1½ cups sugar, lime zest, and cream cheese in large bowl. Place remaining 1/3 cup sugar in shallow baking dish or pie plate and set aside. Pour warm butter over sugar and cream cheese and whisk to combine (some small lumps of cream cheese will remain but will smooth out later). Whisk in oil until incorporated. Add egg, milk, and lime juice; continue to whisk until smooth. Add flour mixture and mix with rubber spatula until soft homogeneous dough forms. I love coconut, and these cookies are the perfect way to satisfy my craving! This recipe makes six dozen chewy treats that are perfect with a nice cup of hot tea or coffee. These are the perfect treat for unexpected guests, OAMC, bake sales, or give some away as a sure-fire Pick-Me-Up to a friend who needs to smile. Dough must chill for at least 2 hours before baking, which has not been included in prep time.

1/2 cup butter, softened
1/2 cup shortening, such as crisco
2 cups brown sugar, packed
2 eggs
1/4 cup water
1 teaspoon vanilla extract
4 cups flour, all purpose
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup coconut, flaked

Steps:

  • In large mixing bowl, cream butter, shortening, and sugar until fluffy, about 2 minutes.
  • Add eggs one at a time, mixing well.
  • Gradually add water and vanilla.
  • Sift together dry ingredients (flour, baking soda, baking powder, salt), and add to batter.
  • Fold in coconut, then cover and refrigerate dough for at least 3 hours; this is a very sticky dough.
  • Shape dough into 1 inch balls and place 2 inches apart on baking sheet that has been lined with parchment paper (or greased).
  • Flatten dough using a fork, the back of a metal spoon, or your fingertips--this dough is very sticky--dip the fork, spoon, or fingertips in a bit of flour before you flatten each cookie.
  • Bake at 400 degrees for 8-10 minutes, or until lightly browned.
  • Cool for 2 minutes before removing to wire rack.
  • Store in airtight container at room temperature, or freeze for future enjoyment!

1/2 t baking soda
1 t baking powder
1/2 t salt
1 1/2 C sugar, plus 1/3 C for rolling
2 oz cream cheese, cut into 8 pieces
1/2 C sweetened shredded coconut, chopped fine
1 t finely grated lime zest
6 T unsalted butter, melted and still warm
1/3 C vegetable oil
1 large egg
1 T milk
1 T lime juice

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 350. Line 2 large rimmed baking sheets with parchment. 2. Whisk flour, coconut, baking soda, baking powder, and salt together in medium bowl. Set aside. 3. Place 1 1/2 C sugar, lime zest, and cream cheese in large bowl. Place remaining 1/3 C sugar in a pie plate. Pour warm butter over sugar and cream cheese and whisk to combine. Whisk in oil. Add egg, milk, and lime juice; continue to whisk until smooth. Add flour mixture and mix with rubber spatula until soft homogenous dough forms. 4. Divide dough into 24 pieces, about 2 T each. Using hands, roll dough into balls and roll in sugar. Place 12 balls on each cookie sheet. Using the bottom of a drinking glass, flatten dough balls until 2 inches in diameter. Sprinkle tops with more sugar. 5. Bake until edges are just beginning to brown, 11-13 min., rotating after 7 min. Cool on baking sheets for 5 min. Transfer to wire rack to cool to room temperature.

1 1/4 cups all-purpose flour
Scant 1/4 teaspoon salt
1/2 teaspoon baking soda
1 stick (1/2-cup) unsalted butter, softened
1/2 cup sugar
1/2 cup light brown sugar, packed
1 extra-large egg
1/2 teaspoon vanilla extract
1 cup sweetened flaked coconut*, lightly packed
1/4 cup ground pecans (I used a nut grinder)

Steps:

  • In a mixing bowl, stir together the flour, salt, and baking soda. Set aside. In another mixing bowl and using a hand mixer, beat together the butter and both sugars until creamy. Beat in the egg and vanilla until fluffy. Add the flour mixture to the creamed mixture and stir until well combined. Fold in the coconut and pecans. Lightly cover the bowl of dough and put in the freezer for about 20 minutes. (Rolling into balls will be easier.) Preheat oven to 350°F. Roll dough into 1-inch balls and place about 2 inches apart on an ungreased baking sheet. Bake for 9 to 12 minutes, or until set. They will look a bit undercooked and won't be brown. (If you bake them until they begin to brown, the cookies will turn out crispy instead of chewy.) Let stand on baking sheet for 1 minute, then carefully transfer cookies with a flat metal spatula to a wire rack to cool. Note: These cookies spread out to almost flat when they bake, that's the way they should be because they don't have any baking powder in them. *Most flaked coconut has long strands that I didn't want in the cookies so I pulsed it in the food processor using the steel blade until desired size.

  • Preheat the oven to 350°F degrees. Line baking sheets with parchment paper or a silicone baking mat. In a large bowl beat the butter, sugars & honey together until light and fluffy. Add in the egg and vanilla and continue mixing. In a separate medium sized bowl, whisk together the flour, baking soda and salt. Add the flour mixture to the butter mixture and beat on low to low-medium speed until almost combined. Then beat in the boiling water and coconut. Drop the cookie dough into small balls (slightly under a tablespoon) on your prepared cookie sheet 3 inches apart. Bake for 8 to 10 minutes until the edges are just starting to brown and the tops are beginning to set. Allow to cool on the cookie sheet for about 5 to 10 minutes, then continue cooling on a wire rack.

How to make Chewy Coconut Lime Sugar Cookies

2 3/4 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
1 ½ cups white sugar
1 egg
½ teaspoon vanilla extract
zest of one large lime, finely minced
3 tbsp lime juice
½ cup unsweetened toasted coconut
½ cup sugar for rolling cookies

Steps:

  • Preheat oven to 350 degrees. Line cookie sheets with parchment paper. If you haven't already toasted your coconut just put a layer of coconut on a cookie sheet and bake it at 350 degrees for 5-7 minutes. Watch out. It goes from white to burnt really quick if you aren't watching closely.
  • In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
  • Using a mixer, beat together the butter and sugar until smooth and very fluffy.
  • Beat in egg, vanilla extract, lime juice and lime zest.
  • Gradually blend in the dry ingredients and toasted coconut.
  • Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart. I made mine too big and they ran together. These do spread quite a bit.
  • Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
  • Let stand on cookie sheet two minutes before removing to cool on wire racks.
