Maple Dressing
1/4 cup mayonnaise
1/4 cup pure maple syrup
3 tablespoons Champagne vinegar or other white wine vinegar
2 teaspoons sugar
1/2 cup vegetable oil
Salad
1 5-ounce bag mixed baby greens (about 10 cups lightly packed)
2 Granny Smith apples, peeled, cored, cut into matchstick-size strips
1/2 cup dried tart cherries
1/2 cup chopped walnuts, toasted

Steps:

  • For dressing:
  • Whisk mayonnaise, maple syrup, vinegar, and sugar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper. (Dressing can be prepared 3 days ahead. Cover and refrigerate. Rewhisk before using.)
  • For salad:
  • Toss greens, apples, cherries, and 1/4 cup walnuts in large bowl to combine. Toss with enough dressing to coat. Divide salad equally among plates. Sprinkle with remaining 1/4 cup walnuts and serve.

¼ cup raspberry vinaigrette
¼ cup walnut pieces
2 tablespoons dried tart cherries
4 ounces goat cheese, sliced
¼ pound cooked chicken breast strips

Steps:

  • Toss the salad greens, raspberry vinaigrette, walnut pieces, and dried cherries together in a large bowl. Divide the salad into individual salad bowls or plates. Garnish each salad with two slices of goat cheese and a few strips of chicken breast.

Steps:

  • Dressing: Whisk mayonnaise, syrup, vinegar, and sugar in medium bowl to blend, gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper, if desired.
  • Salad: toss greens, apples, cherries, and 1/4 cup walnuts in large bowl to combine. Toss with enough dressing to coat. Divide salad onto plates. Sprinkle with remaining walnuts and serve.

1 tablespoon white wine vinegar
2 teaspoons mayonnaise or salad dressing
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
Dash of pepper
3 tablespoons olive or vegetable oil
1 bag (10 ounces) romaine and leaf lettuce salad mix (about 4 cups)
1/2 cup dried cherries
1/2 cup crumbled Gorgonzola cheese (2 ounces)
1/2 cup coarsely chopped walnuts

Steps:

  • Beat vinegar, mayonnaise, mustard, salt and pepper in small bowl with wire whisk until blended. Gradually beat in oil until well blended. Cover and refrigerate until serving.

2 C. pitted and cut in half fresh cherries
3/4 C. packed cilantro, diced (I use about 1/4 C. then adjust to taste)
1/2 C. sour cream
1/2 C. mayonnaise
1/4 C. chopped green onions

Farro is a quick-cooking grain with a mild flavor. This summer salad is great with grilled meat, poultry, or fish. If you can't find farro, you can substitute wheat berries or quinoa. When fresh cherries are out of season, try this with dried sweetened cranberries.

1/4 teaspoon(s) salt, divided
1/2 pound(s) cherries (sweet cherries, pitted and halved-about 1 cup)

1/4 cup(s) walnuts, toasted and chopped
1/8 cup(s) flat-leaf parsley leaves, packed
1 tablespoon(s) fresh lemon juice
1/2 tablespoon(s) whole-grain mustard

Steps:

  • Bring water to a boil in a medium saucepan.
