CHERRY VINAIGRETTE
This tangy, thick, cherry-colored dressing tastes great on most any tossed salads. It's nice on fresh fruit, too.

- In a small saucepan, heat frozen cherries, uncovered, over medium-low heat for 10 to 15 minutes or until cherries and their juices are reduced to 1/2 cup, stirring occasionally.
- In a food processor or blender, combine cooked cherries, vinegar, dried cherries, shallot, garlic, honey, Dijon-style mustard, dry mustard, salt and black pepper. Cover and process or blend until smooth. With the processor or blender running, add the oil in a thin, steady stream and process for 1 to 2 minutes or until the mixture thickens. Cover and chill for up to 1 week. Use as salad dressing over tossed salads. Makes about 1-1/2 cups.

- Preheat oven to 400°. Scrub beets and trim tops to 1 in. Wrap in foil; place on a baking sheet. Bake 50-60 minutes or until tender. Remove foil; cool completely. Peel beets and cut into 1/2-in. pieces., In a large bowl, combine salad greens, apples, carrot, tomatoes, chickpeas, walnuts, bacon and cooled beets. In a small bowl, whisk vinaigrette ingredients until blended. Serve with salad.,

CHERRY FARRO SALAD WITH SWEET VINAIGRETTE
Here's a delicious salad using a whole grain that not only tastes good but is good for you! The flavors are refreshing and sweet while the crunchy nuts and farro give it wonderful texture!

- Whisk oil, maple syrup, vinegar, sugar, and salt together in a bowl until dressing is smooth.
- Cook and stir walnuts in a small skillet over low heat until toasted and fragrant, 3 to 4 minutes.
- Bring chicken broth, farro, oregano, and basil to a boil in a saucepan. Reduce heat to medium-low and simmer for 10 minutes. Remove saucepan from heat, cover with a lid, and let sit until all the liquid has been absorbed, about 30 minutes. Transfer farro to a glass bowl and cool to room temperature, about 30 minutes more.
- Mix walnuts, green apples, dried cherries, and parsley into farro. Drizzle dressing over farro mixture and toss to coat; refrigerate until chilled, at least 30 minutes.

CHERRY VINAIGRETTE SALAD DRESSING
If you love cherries, this dressing is really yummy! I use Sleeping Bear Farms cherry concentrate (found in the cooler by the fresh OJ at my grocery store)....it is so good. I usually have to triple this recipe for our family of 6, especially if salad is our main dish.
