CHEWY CHERRY VANILLA OATMEAL COOKIE BARS
This is my variation on the Quaker Oatmeal Vanishing Oatmeal Raisin Cookie recipe. Sometimes you just want something a little different! These are great for breakfast or a snack!

Steps:
- Preheat oven to 350°F
- In large bowl, beat shortening and sugars until creamy.
- Add eggs and vanilla. Beat well.
- Add flour, baking soda, cinnamon and salt. Mix well.
- Add oats, cherries, and pecans. Mix well.
- Spread mixture in an ungreased 9 x 13 metal baking pan.
- Bake 30 to 35 minutes or until a toothpick comes out clean.
- Cool for 15 to 30 minutes before cutting into bars.
- Store tightly covered.

CHERRY VANILLA BARS
You could use whatever dried fruit you prefer: Blueberries, cranberries, a mix... Got the idea from my Land O'Lakes baking book. Followed the original recipe quite closely.

Steps:
- Heat oven to 350. Grease 8" square pan.
- Combine sugar, butter, brown sugar, egg and vanilla in large bowl. Add flour and baking powder. Beat until well mixed.
- Stir in cherries, chips and pecans.
- Spread evenly into prepared pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.
- Make drizzle by melting chips and shortening in microwave, stirring every 30 seconds until mostly melted; then stir until smooth.
- Drizzle over bars. Cool completely and cut into bars.
