2-1/4 cups cold whole milk, divided
1 package (3.4 ounces) instant vanilla pudding mix
1 envelope whipped topping mix (Dream Whip)
1/2 teaspoon vanilla extract
1 prepared angel food cake (8 to 10 ounces)
2 tablespoon maraschino cherry juice
1 can (21 ounces) cherry pie filling
3/4 cup chocolate syrup
1/2 cup sweetened shredded coconut, toasted
1/4 cup sliced almonds, toasted

Steps:

  • In a large bowl, combine 1-3/4 cups of milk and pudding mix. Beat on low speed for 2 minutes. Let stand for 2 minutes or until soft-set. In another large bowl, beat the whipped topping mix, vanilla and remaining milk until stiff peaks form., Cut cake into 1/2-in. cubes; place half in a 3-qt. glass bowl. Sprinkle with 1 tablespoon cherry juice. Top with half of the pie filling, half of the pudding and 1/4 cup of chocolate syrup. Repeat layers. Top with whipped topping and remaining syrup. Sprinkle with coconut and almonds. Cover and refrigerate for at least 4 hours.

2 (approximately 12 ounces each) chocolate pound cakes
1/2 cup black cherry jam
1/2 cup cherry brandy
2 cups drained bottled sour cherries (recommended: Morello)
4 ounces bittersweet chocolate, minimum 70 percent cocoa solids, chopped
1 1/3 cups plus 1 tablespoon milk
1 1/3 cups plus 1 tablespoon heavy cream
8 egg yolks
1/2 cup plus 1 tablespoon sugar
1/3 cup cocoa
3 cups heavy cream
1-ounce bittersweet chocolate
Special Equipment: Large wide trifle bowl

Steps:

  • Slice the chocolate pound cake and make jam sandwiches with the cherry jam, and layer the bottom of a large wide trifle bowl. Pour over the cherry brandy so that the cake soaks it up, and then top with the drained cherries. Cover with plastic wrap and leave to macerate while you make the custard.
  • Melt the chocolate on low to medium heat in the microwave, checking after 2 minutes, though it will probably need 4 minutes. Or you can place it in a bowl over a pan of simmering water. Once the chocolate is melted, ser aside while you get on with the custard.
  • In a saucepan warm the milk and cream. Whisk the egg yolks, sugar, and cocoa in a large bowl. Pour the warm milk and cream into the bowl whisking it into the yolks and sugar mixture. Stir in the melted chocolate, scraping the sides well with a rubber spatula to get all of it in, and pour the custard back into the rinsed saucepan. Cook over a medium heat until the custard thickens, stirring all the time. Make sure it doesn't boil, as it will split and curdle. Keep a sink full of cold water so that if you get scared you can plunge the bottom of the custard pan into the cold water and
  • whisk like mad, which will avert possible crisis.
  • The custard will get darker as it cooks and the flecks of chocolate will melt once the custard has thickened. And you do need this thick, so don't panic so much that you stop cooking while it is still runny. Admittedly, it continues to thicken as it cools and also when it's chilling in the refrigerator. Once it is ready, pour into a bowl to cool and cover the top of the custard with cling wrap to prevent a skin from forming.
  • When the custard is cold, pour and spread it over the chocolate cake layer in the trifle bowl, and leave in the refrigerator to set, covered in plastic wrap overnight.
  • When you are ready to decorate, softly whip the cream for the topping and spread it gently over the layer of custard. Grate the chocolate over the top.

Steps:

  • Tear the angel food cake into 1 inch cubes. Place them in a single layer in a 13x9 inch pan.
  • (The pudding amount is 2 small boxes or 1 large US box pudding, either instant or cooked.) Pour the pudding over the cake; top with the cherry pie filling.
  • Can also be layered in a trifle bowl or in individual parfait glasses.
  • I've never tried it but I bet chocolate pudding would be good too. :).

MARY'S ROYAL CHERRY TRIFLE

450g cherry , reserve a few lovely cherries for the top and stone the rest
340g jar cherry jam or conserve
450g madeira cake , cut int 1cm-thick slices
100ml kirsch or cherry brandy
10 ratafia biscuits or 5 amaretti biscuits, broken
300ml double cream , whipped lightly
50g caster sugar
50g cornflour
1 tsp vanilla extract
2 large eggs , plus 1 egg yolk
300ml milk
300ml whipping cream

Steps:

  • First, make the custard. Tip the caster sugar, cornflour and vanilla into a mixing bowl and add the eggs and egg yolk. Whisk with a hand whisk until smooth and blended.
  • Pour the milk and double cream into a pan and heat gently until hot, but do not boil. Pour this over the egg mixture and immediately whisk until blended. Wash the pan to remove any scum from the milk and pour the custard back into the clean pan. Heat gently, stirring constantly until thickened. Don't panic if the custard starts to look lumpy as it thickens, just continue to heat and whisk until the custard is thick and smooth. Pour into a jug and cover the surface of the custard with cling film to prevent a skin from forming. Set aside to cool.
  • Tip the stoned cherries into a pan with half the jam or conserve and cook over a medium heat for 5-10 mins until softened and saucy. Remove from the heat and leave to cool slightly.
  • Spread half the slices of Madeira cake generously with the remaining cherry jam. Sandwich with the remaining cake slices, then cut in half. Pour the kirsch or brandy into a shallow bowl, dip each sponge sandwich into the liqueur, then arrange in the base of the trifle dish (you will need a shallow, straight-sided, 20cm round glass dish about 5cm deep). Line the edges of the dish first to create a stripy effect, then fill in the centre with the remaining sandwiches, pouring over any remaining liquid.
  • Spoon over the cherries and any juice from the pan, then scatter over the broken biscuits. Pour over the cooled custard, then spread whipped cream over the top. Decorate with fresh whole cherries and chill for a few hours, or make it a day ahead and chill for up to 24 hours before serving.

Steps:

  • Place cake cubes in large bowl. Sprinkle with liqueur if desired; let stand 30 minutes. In a medium bowl, combine confectioners' sugar and cream cheese; beat until blended. Reserve 2 tablespoons whipped topping; fold remaining topping into cheese mixture. Stir topping mixture and pecans into cake cubes; mix well. Spoon cake mixture into a pretty glass or crystal bowl.   • In a medium bowl, combine cream cheese and sweetened condensed milk.
  • Beat with an electric mixer until smooth.
  • Stir in 1/2 of whipped topping and almond extract; set aside.
  • Tear angel food cake into 1 inch pieces.
  • Place 1/3 of cake pieces in bottom of a trifle bowl.
  • Spoon 1/3 of cream cheese filling over cake, and top with 1/3 of pie filling.

1/4 cup granulated sugar
One .14-ounce packet unsweetened cherry-flavored soft drink mix
Two 8-ounce tubs whipped topping
Two 14.5-ounce cans red tart cherries in water, drained, cherry water reserved, cherries chopped
1/2 teaspoon almond extract
16 creme-filled chocolate cake treats, such as Suzie Q's
1 cup toasted sliced almonds
Cherry ice cream or sorbet, for serving

Steps:

  • For the whipped layer: In a stand mixer or with an electric hand mixer, blend the cream cheese, sugar and soft drink mix powder until smooth. Scrape down the insides of the bowl intermittently to fully mix. Add the whipped topping and mix until one color, scraping down the sides to incorporate. Gently fold in the chopped cherries.
  • For the cake layer: Add the reserved cherry water and almond extract to a spray bottle and shake to combine (see Cook's Note).
  • Layer the bottom of a trifle dish with one layer of the chocolate cake treats. Spray the cake layer with a few nice spritzes of the cherry water mixture; this shouldn't make them dripping wet--just moist with a light saturation (think about how you use cooking spray). Top the cake layer with half of the whipped layer, then repeat with another cake layer, cherry water spritz and whipped layer. Top with the almonds.
  • Refrigerate at least 1 hour. Serve with ice cream or sorbet.

2 cups fresh cherries (about 12 ounces), pitted, coarsely chopped
1 cup sugar
1/4 cup water
For cake
1 7-ounce package almond paste, cut into small pieces
1 1/4 cups sugar
1 1/4 cups (2 1/2 sticks) unsalted butter, cut into pieces
2 teaspoons vanilla extract
6 large eggs
1 cup all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
For custard
1/2 cup sugar
2 tablespoons cornstarch
6 large egg yolks
2 teaspoons vanilla extract
2 cups half and half
3 cups fresh cherries (about 18 ounces), pitted, coarsely chopped
1 cup chilled whipping cream
1/4 cup powdered sugar
Cherries with stems
Slivered almonds, toasted

Steps:

  • Make jam:
  • Combine all ingredients in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture boils. Reduce heat to medium-low and simmer until jam is thick, stirring often, about 22 minutes. Transfer to small bowl. Cover and chill up to 3 days.
  • Make cake:
  • Preheat oven to 325°F. Butter 9-inch-diameter springform pan. Line bottom with parchment; butter parchment. Blend almond paste and sugar in processor until mixture resembles fine meal, about 1 minute. Add butter and vanilla and blend well, occasionally scraping down sides of bowl. Blend in eggs 1 at a time. Using on/off turns, blend in flour, baking powder and salt (do not overmix). Transfer batter to prepared pan. Place pan on baking sheet; bake cake until tester inserted into center comes out clean and top is golden, about 1 hour 10 minutes. Cool cake in pan on rack. Cover; let stand at room temperature 1 day.
  • Make custard:
  • Whisk 1/2 cup sugar and cornstarch in heavy medium saucepan to blend. Beat in yolks and vanilla. Gradually whisk in half and half. Stir over medium heat until custard thickens and boils. Transfer to bowl. Press plastic wrap directly onto surface; chill 1 day.
  • Cut around pan sides to loosen cake; release pan sides. Cut cake horizontally into 3 layers; discard parchment. Spoon thin layer of custard over bottom of 3- to 3 1/2-quart trifle bowl. Trim 1 cake layer to fit, if necessary; place in bowl. Spread with 1/3 of custard. Mix chopped cherries into jam. Spoon 1/3 of jam mixture atop custard; spread to edge of bowl so that jam shows. Top with second cake layer, half of remaining custard and half of remaining jam mixture; spread to edge of bowl. Top with third cake layer. Spread with remaining custard, then jam mixture.
  • Beat whipping cream and powdered sugar until stiff peaks form. Transfer to pastry bag fitted with star tip. Pipe cream in center of trifle. Pipe rosettes around edge; top rosettes with whole cherries. Sprinkle trifle with almonds. Cover; chill at least 3 hours and up to 1 day.

TOWERING CHERRY TRIFLE

Trifle is very traditional British dessert, all about generosity and layers. It's the perfect chilled make-ahead dessert of fruit jelly, sponge cake covered with layers of custard and jelly, and topped with whipped cream.

One 10-ounce bag frozen pitted dark sweet cherries, thawed, not drained
2 teaspoons cornstarch mixed with 2 teaspoons water
1 teaspoon orange zest (save the rest of the orange for assembling the trifle)
One 3-ounce (85-gram) packet vegan raspberry jelly granules
2 to 2 1/2 cups boiling water
One 10-ounce bag frozen pitted dark sweet cherries, thawed and drained
2 cups vegan heavy cream
1 pound vanilla pound cake (I use a vegan cake mix)
Zest of the remaining orange
3 ounces (90 grams) dark chocolate, thinly sliced
32 ounces store-bought or homemade Vanilla Custard, recipe follows
2 tablespoons store-bought toasted flaked almonds
4 cups cashew milk
1/2 cup superfine sugar
2 teaspoons vanilla extract
1/8 teaspoon ground turmeric
1/2 cup cornstarch mixed with 2 tablespoons cashew milk

Steps:

  • For the cherry compote: Tip the cherries into a medium saucepan along with any juices, and bring to a gentle bubbling simmer over medium-high heat, about 2 minutes. Press down using a masher or fork. Stir in the cornstarch mixture and the orange zest. Simmer for about 3 minutes, then turn off the heat and leave to cool, about 10 minutes.
  • For the jelly: Put the jelly granules into a liquid measuring cup and top up with boiling water according to the packet's instructions. Stir until the granules dissolve.
  • Assembling the trifle: Pour half of the jelly into the bottom of a 2-quart (2-liter) trifle bowl. Scatter in half of the drained and thawed cherries. Leave to one side to set according to the directions of the packet of jelly granules. Set aside the remaining jelly.
  • Whip the heavy cream in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form, and set to one side.
  • Once the jelly has firmed up, break the pound cake up into rough pieces and scatter half on top of the jelly. Grate over some orange zest and scatter over half of the chocolate pieces.
  • Spoon over half of the custard, starting at the edges and working your way into the center to ensure defined layers around the edge of the bowl.
  • Next pour over the cherry compote, again starting at the edges.
  • Stir the reserved jelly to break it up and spoon it on top of the compote layer.
  • Now add the rest of the cake and another grating of orange zest. Scatter over the remaining drained and thawed cherries, sprinkle over some of the remaining chocolate and then pour on the rest of the custard again, starting at the edges. Pile the whipped cream on top. Zest over the remaining orange, scatter the remaining chocolate and finish with the toasted almonds.
  • Add the cashew milk, sugar, vanilla extract and turmeric to a large saucepan and slowly heat over medium-low heat. Once hot, pour in the cornstarch slurry and stir continuously until thickened. Remove from the heat and set aside to cool. Chill in the fridge overnight.

A no cook summer desert - perfect for any occasion. Quick and easy to make. The fruit pie filling can be changed to your favorite - peach is great too. The chilling time is not included in prep time.

2 (20 ounce) cans cherry pie filling (I use Lite)

Steps:

  • Beat cream cheese till light and fluffy, blend in vanilla yogurt.
  • In a smaller bowl mix pudding mix and milk till thickened, blend into cream cheese mixture- fold in all the whipped topping except about 1 Cup.
  • In a 4 quart bowl (or trifle bowl) evenly spread half the cream cheese mixture in bottom of bowl, top with half the angel food cake cubes, press these down lightly with the back of a spoon.
  • Spread 1 can of cherry pie filling over cake, covering completely.
  • Repeat layers.
  • Spread the reserved 1 cup whipped topping over last layer of cherry filling.
  • Cover and chill overnight before serving.
  • This will keep in the fridge for 2 weeks-- IF it lasts that long!

5 c angel food cake, cubed
1/4 c cherry liqueur, optional
1 c confectioners' sugar
1--------8 oz cream cheese
1 pkg whipped topping, thawed, divided
1/2 c toasted pecans
1 can(s) cherry pie filling, 21oz.

Steps:

  • 1. Place cubes in a large bowl. Sprinkle with liqueur and let stand for 30 minutes. In medium bowl combine confectioners sugar and cream cheese, beat until well blended. Reserve 2 Tbsp. whipped topping. Fold remaining topping into cheese mixture. Stir topping mixture and pecans into cake cubes. Spoon cake mixture into trifle dish or deep salad bowl. Spread cherry filling over top or alternate layers with cherries. Put 2 Tbsp. whipped topping on top. Chill at least 3 hours.

6 cups angel food cake, cubes
1 cup powdered sugar
3 ounces softened cream cheese
8 ounces thawed whipped topping
1/2 cup chopped pecans
1 (21 ounce) can cherry pie filling

Steps:

  • Place cake cubes in large bowl; let stand 30 minutes.
  • In medium bowl, combine sugar and cream cheese. Beat until blended. Fold whipped topping into cheese mixture.
  • Stir topping mixture and pecans into cake cubes; combine well.
  • Spread 1/2 cake mixture into trifle bowl. Spread 1/2 pie filling over cake mixture. Repeat layers.
  • Refrigerate.

1 (3.5) box instant vanilla pudding prepared
1/2 c sour cream
1 can(s) extra cherry pie filling

Steps:

  • 1. Cut or break apart angel food cake into pieces and place half the pieces in a large, clear, glass bowl.
  • 2. Prepared pudding according to package directions. Then mix in sour cream, blending well.
  • 3. Pour half of mixture over cake pieces.
  • 4. Repeat steps, making a second layer and top with cherry pie filling.
  • 5. Refrigerate until ready to serve.
  • 6. NOTE: As pictured, I used two cans of pie filling, making a second layer of cherry because my husband loves cherry pie filling, but the original recipe only called for 1 can on top.

This extra-special chocolate and cherry trifle is the ultimate decadent dessert for a crowd. This clever recipe is simple to make but looks impressive

1 tin or jar black cherries in syrup (about 400g)
150ml whipping cream
80g chocolate brownies or muffins
200g dark chocolate , chopped
150g mascarpone
2 tbsp icing sugar

Steps:

  • Line a 900g loaf tin or terrine with baking parchment. Tip the cherries into a sieve over a saucepan and drain off the syrup. Bring the syrup to a boil and simmer until it thickens and is reduced by half, about 5 mins, and stir back in the cherries. Spoon the cherries and syrup into the base of the tin and leave to cool.
  • Whip half of the cream until it thickens but is not stiff, spoon this in a layer over the cherries. Cut the brownie or cupcake into pieces and make a layer on top of the cream. Melt 100g chocolate carefully in a small pan and leave to cool a little.
  • Tip the mascarpone into a bowl and add the remaining cream and the icing sugar, whisk together with electric beaters until they are just combined and the mixture is thick, stir in the melted chocolate with a spatula. Spoon the chocolate mixture on top and smooth the surface. Put the trifle into the fridge for 30 mins.
  • Melt the remaining chocolate in the same way, leaving to cool a little and pour it onto the trifle, tip the loaf tin back and forth to make a thin, even layer. Wait for the chocolate to set and then cover the tin or terrine and put it into the freezer. Freeze for up to 1 week.
  • To serve, take the tin or terrine out of the freezer and leave it to sit for 10 mins, then tip it out onto a serving plate. The syrup from the cherries will run down the sides a little, leave the trifle to sit for another 20 mins before cutting into slices to serve.

I made this recipe up my self. I love chocolate cherries at Christmas time. This is kind of like the black forest desserts.

1 (20 ounce) can cherry pie filling
1 (3 ounce) package chocolate pudding
1 (12 ounce) package Cool Whip
1 loaf chocolate pound cake
1 teaspoon almond flavoring
1 1/2 cups milk

Steps:

  • Make pudding with the milk. Let chill a few hours.
  • Cut up the chocolate pound cake and put half in a medium to large pretty glass bowl.
  • Mix cherries and flavoring.
  • After pudding has thickened, layer 1/2 the cherries over the cake in the bowl.
  • Cover that with half of pudding.
  • Cover that with half the whipped cream.
  • Repeat layers. You may need more whipped cream to cover the whole bowl if you are more generous with the whipped cream.
  • To step up the chocolate a notch you could use a package of mini chocolate chips to make one more layer on top of the whipped cream, for decoration.
  • Chill for about a half hour or so, then serve.
  • Doubled with everything but the cake, this overfilled a 9x13 pan, to estimate size. Cooking includes chill time.

2 (12 ounce) chocolate pound cake
1/2 cup black cherry jam
1/2 cup cherry brandy
2 cups drained bottled sour cherries (recommended ( Morello)
4 ounces bittersweet chocolate, minimum 70 percent cocoa solids, chopped
1 1/3 cups milk, plus
1 tablespoon milk
1 1/3 cups heavy cream, plus
1 tablespoon heavy cream
8 egg yolks
1/2 cup sugar, plus
1 tablespoon sugar
1/3 cup cocoa
3 cups heavy cream
1 ounce bittersweet chocolate
1 large wide trifle bowl

Steps:

  • Slice the chocolate pound cake and make jam sandwiches with the cherry jam, and layer the bottom of a large wide trifle bowl.
  • Pour over the cherry brandy so that the cake soaks it up, and then top with the drained cherries.
  • Cover with cling wrap and leave to macerate while you make the custard.
  • Melt the chocolate on low to medium heat in the microwave, checking after 2 minutes, though it will probably need 4 minutes. Or you can place it in a bowl over a pan of simmering water. Once the chocolate is melted, ser aside while you get on with the custard.
  • In a saucepan warm the milk and cream.
  • Whisk the egg yolks, sugar, and cocoa in a large bowl.
  • Pour the warm milk and cream into the bowl whisking it into the yolks and sugar mixture.
  • Stir in the melted chocolate, scraping the sides well with a rubber spatula to get all of it in, and pour the custard back into the rinsed saucepan.
  • Cook over a medium heat until the custard thickens, stirring all the time. Make sure it doesn't boil, as it will split and curdle.
  • Keep a sink full of cold water so that if you get scared you can plunge the bottom of the custard pan into the cold water and whisk like mad, which will avert possible crisis.
  • The custard will get darker as it cooks and the flecks of chocolate will melt once the custard has thickened. And you do need this thick, so don't panic so much that you stop cooking while it is still runny. Admittedly, it continues to thicken as it cools and also when it's chilling in the refrigerator. Once it is ready, pour into a bowl to cool and cover the top of the custard with cling wrap to prevent a skin from forming.
  • When the custard is cold, pour and spread it over the chocolate cake layer in the trifle bowl, and leave in the refrigerator to set, covered in cling wrap overnight.
  • When you are ready to decorate, softly whip the cream for the topping and spread it gently over the layer of custard. Grate the chocolate over the top.
