CHERRY TOMATO & OLIVE SALAD

I haven't tried this yet but it does sound like a nice summer salad to use up all those cherry tomatoes from the garden! Don't forget to leave an hour aside for chilling, after you've put the dish together.

40 cherry tomatoes, halved
1 cup pitted and sliced green olives
1 (6 ounce) can black olives, drained and sliced
2 green onions, minced
3 ounces pine nuts
1/2 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon white sugar
1 teaspoon dried oregano
salt and pepper

Steps:

  • Take a big bowl and mix together cherry tomatoes, green olives, black olives, and spring onion.
  • In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently.
  • Stir into tomato mixture.
  • Separately, mix together olive oil, red wine vinegar, sugar, and oregano.
  • Season to taste with salt and pepper.
  • Pour over salad, and gently stir to coat.
  • Chill for 1 hour.

  • In a medium bowl, whisk together vinegar, olive oil, 1/2 teaspoon salt, and 1/8 teaspoon pepperuntil combined and thickened. Add tomatoes, red onion, and parsley; toss to combine all ingredients.

This salad from Dona Hoffman, of Addison, IL is amazingly simple and surprisingly sweet with a little brown sugar in the dressing. And as an addition, she suggests topping it with either fresh mozzarella or feta cheese.

1/2 cup cherry tomatoes
1/3 cup sliced red onion
1 can (2-1/4 ounces) sliced ripe olives, drained

This is so simple to make. It's worth it to allow some time for this to sit in the fridge - the olives will infuse the tomatoes with a wondeful salty tang.

1 pint cherry tomatoes (try an heirloom mix)
1/2 cup pitted kalamata olive
herb-flavored vinegar
extra virgin olive oil
basil

Steps:

  • Rinse the tomatoes well with cold water. I normally cut them in half, and also cut off any stems or blemishes, then add them to a bowl. Roughly chop the olives and add to the tomatoes.
  • Squish the mixture with your fingers so the tomatoes give off some juice and everything is nicely mixed.
  • Drizzle in a very little bit of the vinegar and olive oil.
  • Stash this in the fridge for a while if you have time, then top with some shredded basil just before eating.
  • Another great way to serve this is to toast some slices of cheese bread (try my recipe #138924), rub both sides with a cut garlic clove, then mound the tomato mixture on top. Lay very thin slices of the fresh mozarella on top, and broil for a minute or two. Garnish with shredded basil and freshly ground black pepper.

¼ cup vegetable oil

A generous handful of basil leaves, sprinkled atop just before serving, gives everything a bright, herbal finish. You'll want to make this all summer long.

1 pound cherry or grape tomatoes, a mixture of colors, halved
Salt and black pepper
3/4 cup olives, such as Moroccan or niçoise
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 garlic clove, smashed to a paste
Pinch of dried oregano
Pinch of red-pepper flakes
1 pound fresh mozzarella, cut into ¼-inch slices
Basil leaves, for garnish

Steps:

  • Put cherry tomatoes in a large bowl. Season with salt and pepper. Add the olives and toss.
  • In a small bowl, stir together olive oil, vinegar, garlic, oregano and red-pepper flakes. Pour mixture over tomatoes and olives. Toss well to coat and let sit for at least 10 minutes and up to an hour.
  • When ready to eat, arrange mozzarella in the center of a large platter (or arrange on individual plates). Spoon tomato and olive mixture over mozzarella. Garnish with lots of basil leaves.
