Shredded coconut and macadamia nuts give this surprisingly simple cherry pineapple cake a delicious island flavor.

1 (20 ounce) can crushed pineapple
1 (21 ounce) can LUCKY LEAF® Regular or Premium Cherry Fruit Filling
1 (18.25 ounce) package yellow cake mix
1 cup melted butter or margarine
1 (7 ounce) package shredded coconut*
1 cup chopped macadamia nuts**

Steps:

  • Preheat oven to 350 degrees F.
  • Lightly grease a 13x9-inch baking pan. In the prepared baking pan, layer undrained crushed pineapple, then LUCKY LEAF Cherry Fruit Filling. Sprinkle dry cake mix over the top, smoothing evenly and covering the top.
  • Pour the melted butter or margarine over the top, covering evenly. Top with the coconut and nuts.
  • Bake for 50 to 60 minutes or until brown on top and bubbly.
  • Let cool 30 minutes. Serve warm or cooled.

1 can(s) cherry pie filling
1 can(s) crushshed pineapple
1 pkg yellow cake mix
2 stick butter, cut into patties
1 can(s) coconut
8 oz pecans, chopped

Steps:

  • 1. Preheat oven to 325. DO NOT MIX ANYTHING!
  • 2. Place ingredients into pan in order listed: pie filling, pineapple, cake mix placed even over filling, butter, coconut and pecans.
  • 3. Bake for 1 hour. Keep refrigerated. You could substitute other pie fillings like apple, peach or blueberry.

1 stick butter cut into thin slices

  • 1. Dump undrained pineapple into pan, spread evenly, dump in pie filling, spread evenly
  • 2. Dump dry cake mix onto cherry layer, spread evenly
  • 3. Sprinkle pecans over cake put butter on top. Bake 350 degrees for 45 to 53 minutes. Serve

21 ounces cherry pie filling
18 1/4 ounces yellow cake mix
1/2 cup butter
1 1/2 cups sugar
1 tablespoon cinnamon

  • In a 9x13 glass baking dish pour pineapple, then layer on cherry pie filling, sprinkle cake mix.
  • Cut butter up in slivers and layer on top, then sprinkle sugar and top with cinnamon.
