1 cup canned cherry pie filling
1 cup vanilla frozen yogurt or light ice cream, softened slightly
1 cup nondairy whipped topping or whipped cream
8 tablespoons candied nuts (pecans, walnuts, peanuts)

Steps:

  • Fill 1/2 cup pie filling into 4 tall glasses. Top with 1/2 cup frozen yogurt. Top with remaining pie filling and remaining yogurt and spoon whipped topping over the top. Sprinkle with nuts and serve.

QUICKIE CHOCOLATE CHERRY PARFAIT

This is a quickie dessert recipe I threw together for me and my significant other. It looks good and tastes great, with alternating layers of chocolate pudding and cherries. The evaporated milk makes the pudding extra creamy.

1 (12 fluid ounce) can evaporated milk
1 (3.9 ounce) package instant chocolate pudding mix
½ (21 ounce) can cherry pie filling
1 cup non-dairy whipped topping
⅛ teaspoon ground cinnamon, or to taste

Steps:

  • Pour the evaporated milk and dry pudding mix into a container with a lid, seal it, and shake for 45 seconds to combine. Let the pudding set for 5 minutes.
  • In 2 large parfait glasses, alternate layers of chocolate pudding with layers of cherry pie filling. Top each glass with whipped topping, and sprinkle with cinnamon. Chill for 1 hour before serving.

PEANUT BUTTER PARFAIT WITH CHERRY COMPOTE

This light and sumptuous frozen dessert bar by Jason Atherton is technically tricky but worth it for the stunning finish

100g smooth peanut butter
2 tbsp Frangelico (hazelnut liqueur)
75ml double cream
250g caster sugar
4 eggs , 2 left whole and 2 separated
175g whipping cream , semi-whipped
500g cherry , stoned
100g granulated sugar
1 tbsp Armagnac or brandy
squeeze lemon juice

Steps:

  • Line a 1.2-litre loaf tin with cling film. Whisk together the peanut butter, liqueur and double cream to a smooth paste.
  • To make a sabayon, put 150g of the sugar, the whole eggs and egg yolks in a bowl set over a pan of simmering water. Whisk with an electric hand whisk for 5-7 mins or until the mixture is light and mousse-like, then remove from the heat and continue to whisk for 5 mins until cool. Set aside.
  • Put the remaining sugar in a small saucepan with 3 tbsp water, heat gently to dissolve, then boil for 2 mins until the temperature reaches 115C on a sugar thermometer. Meanwhile, in a large clean bowl, beat the egg whites to stiff peaks, stream in the sugar syrup and continue to beat until the egg white mixture is just stiff and shiny. (It is important that the sugar syrup goes into the egg white at the right temperature, so you may need an extra pair of hands for this.)
  • Fold the egg white mixture into the peanut butter mixture, then fold in the whipping cream and finally the sabayon. Pour into the tin and freeze for 6 hrs or until solid, or up to 2 weeks. Pour any leftover parfait into individual ramekins or dariole moulds and keep in the freezer.
  • To make the cherry compote, put the cherries in a large frying pan, add 100ml water, cook for 10 mins to soften, then add the sugar, Armagnac or brandy and lemon juice. Cook for a further 8-10 mins until syrupy, then allow to cool. Can be made up to 2 days ahead.
  • Take the parfait from the freezer 10 mins before you wish to serve, remove the cling film and cut into slices. Carefully place 1 slice of parfait on each of 6 dessert plates and serve with the cherry compote.

A medley of classic deliciousness served in a cup adult style! :) If you don't have any brandy, plain old dried cherries will do. Also you can sub the amaretto liqueur for almond extract and if you cannot find candied pistachios, unsalted will do. Seasonal fresh fruit like figs would be nummy too!

1 cup confectioners' sugar
1 pint part-skim ricotta cheese
1 tablespoon amaretto liqueur
1 teaspoon cinnamon
1/2 cup candied pistachios, chopped
1/3 toasted almond, sliced
1/2 cup brandy-soaked dried cherries (soak over night)
1/2 cup semisweet mini chocolate chips
4 -6 cannoli shells, crushed (or 6-8 amaretto cookies)

Steps:

  • Start out by crushing your shells or cookies in a large Ziploc baggie. Set aside.
  • In a large bowl, stir ricotta cheese with sugar until combined. Mix in amaretto liqueur and cinnamon.
  • In a small bowl, combine pistachios, almonds, cherries (drained of all liquid), and mini chips.
  • In a clear glass, sprinkle a bit of the shell crumbles in the bottom, spoon cannoli filling on top about 1/2 inches, sprinkle about 2 tbsp of nut mixture and repeat with another layer of of each alternating until the cup is full.
  • Enjoy!

1 (3 ounce) package cherry gelatin
1 1/4 cups hot water
1 cup sweet cherries
1 pint cherry ice cream
1 (8 inch) baked pie shells

Steps:

  • Dissolve gelatin in hot water in a 2 quart saucepan.
  • Add cherries.
  • Add ice cream in pieces and stir until melted.
  • Chill until thickened, but not set, about 10 to 20 minutes.
  • Turn into pie shell.
  • Chill until firm, about 15 to 25 minutes.

Cheesecake layer:
6 oz light cream cheese
3/4 cup light sour cream
1/2 cup confectioners' sugar
1/2 tsp vanilla extract

  • Combine cream cheese and sour cream in food processor and blend until smooth. Add confectioners' sugar and vanilla and again blend until smooth. Make several layers of cherry pie filling and cheesecake filling in parfait or wine glasses. End with a little sauce spooned over last layer of cheesecake filling. Refrigerate until serving. Makes 4 servings.

1 teaspoon unflavored gelatin
4 ounces cream cheese, softened
1/3 cup sugar
1 1/2 teaspoons vanilla extract
1 teaspoon grated lemon peel
3/4 cup sour cream
1 cup non-dairy frozen whipped topping
1 (21-ounce) can cherry pie filling, divided
1 Keebler® Ready Crust® graham cracker pie crust

Steps:

  • 1. In small saucepan combine water and lemon juice. Sprinkle gelatin over water mixture. Let stand for 5 minuteS. Cook and stir over low heat until gelatin dissolves. Set aside.2. In small mixing bowl beat cream cheese on medium speed of electric mixer until fluffy. Add sugar, vanilla and lemon peel. Beat until combined. Gradually beat gelatin mixture into cream cheese mixture. Beat in sour cream. Fold in whipped topping.3. Spoon 1 cup of pie filling into crust. Spread cream cheese mixture on top. DRIED CHERRY PARFAIT

1/2 cup red wine
1 cup dried cherries
2 tablespoons light-brown sugar
1/3 cup fromage blanc or small-curd nonfat cottage cheese
1/3 cup whole-milk yogurt

Steps:

  • Warm the wine in a small saucepan. Add the cherries and set aside for 30 minutes. Drain the cherries and spread them on paper towels to remove excess moisture.
  • Place half the cherries in each of two large-stemmed goblets. Sprinkle with half the brown sugar.
  • If using fromage blanc, beat it lightly to smooth it. With the cottage cheese, puree it in a blender or force it through a sieve to smooth it. Mix either cheese with the yogurt. Spoon the cheese mixture over the sugared cherries in the goblets, then add the remaining cherries and sprinkle with the rest of the brown sugar on top. Serve at once.

2 tablespoons sugar
2 cups cherry brandy or plain brandy
Sugar cubes
1 Lemon extract or orange extract
1 vanilla ice cream

Steps:

  • Heat cherries and sugar till juice thickens slightly; cool; add brandy. Saturate sugar cubes with lemon or orange extract. Place ice cream in parfait glasses; pour some of syrup from cherries over ice cream. Place 4 or 5 cherries on top of ice cream; place sugar cube on a mound of ice cream among but not touching cherries. Hold tip of lighted match to cube to light just before serving.

Duck liver parfait, cherry compote & sourdough croutes image

This smooth duck liver parfait with a hint of Grand Marnier and Morello cherry jam can be made ahead, ready for a dinner party. Serve on toast as a starter or canapé

100g butter , extra for frying
3 shallots , finely chopped
2 thyme sprigs , leaves picked
½ tsp white peppercorns , crushed
pinch of coriander seeds , crushed
400g duck livers , trimmed of sinew and roughly chopped
¼ tsp ground cinnamon
80ml madeira
freshly ground nutmeg
1 tbsp Grand Marnier
80g morello cherry jam
1 tsp sherry vinegar
8 slices of sourdough , cut into bite-sized pieces (if making canapés)
olive oil
sea salt
thyme leaves

Steps:

  • Heat a piece of the butter in a frying pan. Once melted and sizzling, add the shallots, thyme, peppercorns and coriander seeds with a pinch of salt. Cook, stirring, for 3-4 mins, until the shallots begin to colour, then turn up the heat slightly, add the livers and cinnamon and cook for 3-4 mins. Splash in the madeira and bubble until reduced by about half. Transfer to a bowl to cool and grate over some fresh nutmeg.
  • Once cool, transfer the mix to a blender, add the butter and Grand Marnier and blitz. Check for seasoning, then pass through a fine sieve. Pour into ramekins or small bowls, leaving a gap for the cherry topping, and place in the fridge to set.
  • To make the cherry glaze, very gently melt down 80g of the cherry compote with the vinegar and a pinch of salt. Allow to cool slightly, then top the parfait with the cherry mix. Return to the fridge to set for a couple more hours. Can be made up to two days in advance.
  • To make the sourdough croutes, heat oven to 180C/160C fan/gas 4. Toss your sourdough with a really generous pinch of salt, a good drizzle of olive oil and the thyme leaves. Roast in the oven for 15-20 mins until crisp and golden. The croutes can be made a day ahead and kept in an airtight container. Let guests spread the parfait over of the croutes and enjoy.

LEMON - CHERRY YOGURT PARFAIT

This is about as refreshing as it gets. Lemon- Cherry Yogurt Parfait has two layers, both are made with greek yogurt and whipped cream, one layer is flavored with lemon and the other with cherry preserves. The combination of lemon and cherry is outstanding! The layers are alternated in the dessert glass to make a very pretty pale pink and white presentation. I topped each parfait with a cherry from the preserves. The recipe states this serves 4, but I was able to get 6 servings with the glasses I chose to serve them in.

1 cup(s) 2% greek-style plain yogurt
1/4 cup(s) cherry preserves ( i used 1/2 cup of cherry preserves)
1/4 teaspoon(s) unflavored gelatin ( i omitted the gelatin)
1 teaspoon(s) water
1 tablespoon(s) fresh lemon juice
1 teaspoon(s) finely grated lemon zest
3 tablespoon(s) confectioners' sugar

Steps:

  • I did make 2 adaptions, after tasting the cherry cream layer I decided I wanted more cherry flavor so I went from 1/4 cup of cherry preserves to 1/2 cup. I also omitted the gelatin, it was such a small amount and leaving it out didn't effect the dessert setting up at all. We loved this dessert, I hope you do too! Enjoy!
  • In a medium bowl, using an electric mixer, beat the heavy cream at high speed until firm. Add the yogurt and beat just until combined. Transfer half of the mixture to another bowl and fold in the cherry preserves.
  • In a small microwave-safe bowl, sprinkle the gelatin over the water and let stand until softened, about 1 minute. Microwave the gelatin at high power for 5 seconds, just until melted. Add the gelatin to the plain whipped cream mixture along with the lemon juice, lemon zest, and confectioners' sugar and beat at medium speed just until combined.
  • Spoon half of the lemon cream into 4 wineglasses and top with half of the cherry cream. Top with the remaining lemon and cherry creams and refrigerate for 20 minutes before serving.
