Chocolate-Cherry-Coconut Granola Bars image

Chewy and delicious no-bake, homemade granola bars. Perfect for breakfast or a power snack. Will keep for 1 to 2 weeks at room temperature, longer if refrigerated.

2 ¼ cups old-fashioned rolled oats
1 cup puffed rice cereal
1 cup unsweetened coconut flakes
1 cup slivered almonds
1 cup dried tart cherries
⅔ cup honey
½ cup creamy peanut butter
3 tablespoons brown sugar
3 tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon salt
½ cup mini semisweet chocolate chips

Steps:

  • Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
  • Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.
  • Combine honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt in a small saucepan. Heat over medium heat until brown sugar is melted; continue to simmer for 1 minute more. Pour heated mixture into the dry ingredients and stir to fully combine. Stir in chocolate chips.
  • Pour granola into the prepared baking pan and press firmly with a nonstick spatula or lightly oiled hands to tightly compact and distribute evenly throughout.
  • Refrigerate for 2 hours.
  • Remove from the refrigerator and slice into 20 equal portions. Tightly wrap individually in plastic wrap or serve immediately.

1 cup packed brown sugar
1/2 cup nonfat dry milk powder
1/2 cup honey
1/3 cup thawed unsweetened apple juice concentrate
2 tablespoons canola oil
3 teaspoons almond extract
6 cups old-fashioned oats
1-1/2 cups dried cherries or cranberries
1 cup slivered almonds
Fat-free vanilla yogurt, optional

Steps:

  • In a large saucepan, combine the brown sugar, milk powder, honey, apple juice concentrate and oil. Cook and stir over medium heat until sugar is dissolved; stir in extract. In a large bowl, combine the oats, cherries and almonds. Drizzle with sugar mixture and mix well., Spread in a thin layer in two 15x10x1-in. baking pans coated with cooking spray. Bake at 375° for 15-20 minutes or until golden brown, stirring occasionally. Cool completely. Serve with yogurt if desired. Store in an airtight container.

Number Of Ingredients 12

1/4 cup apple juice
3 tablespoons honey
2 tablespoons packed light-brown sugar
1 tablespoon canola oil
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
3 cups rolled oats
1/2 cup whole almonds, coarsely chopped
1/2 cup pecans, coarsely chopped
1/2 cup dried cherries
1/4 cup dried currants

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together apple juice, honey, brown sugar, canola oil, vanilla, cinnamon, and salt until combined. Add oats, almonds, and pecan; toss until mixture is well combined and evenly moistened. Divide mixture between 2 baking sheets and transfer to oven. Bake, shaking pans occasionally, until light golden brown, 15 to 18 minutes.
  • Transfer warm granola to a large bowl and stir in cherries and currants. Let cool completely; store in an airtight container up to 1 week.

COCONUT SOUR-CHERRY GRANOLA

2 3/4 cups organic rolled oats
1 cup unsweetened coconut flakes
1 cup unsalted pistachios
1/3 cup unsalted pepitas (hulled green pumpkin seeds)
1 tablespoon kosher salt (or 1 1/2 teaspoons fine salt)
1/2 cup packed light brown sugar
1/3 cup maple syrup
1/3 cup extra-virgin olive oil
3/4 cup dried sour cherries

Steps:

  • Preheat the oven to 300 degrees F. Line 2 rimmed baking sheets with parchment paper. Toss the oats, coconut, pistachios, pepitas and salt in a large bowl. Warm the brown sugar, maple syrup and olive oil in a small saucepan over low heat, stirring, until the sugar dissolves. Fold the sugar mixture into the oat mixture to evenly coat.
  • Spread the granola on the prepared baking sheets and bake, stirring often, until dry and lightly golden, 20 to 25 minutes. Remove from the oven and toss with the dried sour cherries. Let cool to room temperature. Store in an airtight container for up to 1 week or freeze for up to 1 month.

4 cups old-fashioned rolled oats
2 cups sweetened, shredded coconut
2 cups sliced almonds
1 1/2 cups dried cherries, chopped
1/2 cup vegetable oil
1/3 cup good honey
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.
  • Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.
