OVERNIGHT CHERRY DANISH
Steps:
- In a small bowl, dissolve yeast in warm milk. In a large bowl, combine flour, sugar and salt. Cut in butter until crumbly. Add yeast mixture, cream and egg yolks; stir until mixture forms a soft dough (dough will be sticky). Refrigerate, covered, overnight., Punch down dough. Turn onto a lightly floured surface; divide into 4 portions. Roll each portion into an 18x4-in. rectangle; cut into 4x1-in. strips. , Place 2 strips side by side; twist together. Shape into a ring and pinch ends together. Place 2 in. apart on greased baking sheets. Repeat with remaining strips. Cover with kitchen towels; let rise in a warm place until doubled, about 45 minutes., Preheat oven to 350°. Using the end of a wooden spoon handle, make a 1/2-in.-deep indentation in the center of each Danish. Fill each with about 1 tablespoon pie filling. Bake 14-16 minutes or until lightly browned. Remove from pans to wire racks to cool., For icing, in a bowl, beat confectioners' sugar, butter, vanilla, salt and enough cream to reach desired consistency. Drizzle over Danish.

CHERRY CHEESE DANISH
This is an awesome dessert...reminds me of cherry-topped cheesecake, but MUCH easier to make:) Every time I take this dessert to a party, I ALWAYS get asked for the recipe (I just take a few copies with me/lol). I also like it with blueberry pie filling, but the fam. likes cherry, so that's usually what I use.

Steps:
- Heat oven to 350 degrees.
- Lightly butter 15 1/2" by 10 1/2" jelly-roll pan (cookie sheet with sides).
- In medium bowl, mix cream cheese, sugar, egg, and vanilla with mixer until smooth.
- Remove dough from one tube of crescent rolls.
- Unroll and place in middle of pan.
- Pat out with fingers, pressing perforations together, until dough completely covers bottom of pan.
- Place in oven 4 minutes, or until slightly dry.
- Cool slightly and spread cream cheese mixture evenly over dough.
- Spread pie filling over cheese.
- Unroll remaining sheet of crescent rolls and separate into 8 triangles along perforations.
- Arrange triangles on top of cherries, spaced evenly (will not cover surface completely).
- Brush with egg glaze.
- Bake 30 minutes or until golden brown and cheese mixture is set.
- Let cool and dust with powdered sugar, if desired.
- Cut into squares and refrigerate until serving.

DANISH CHRISTMAS RICE PUDDING WITH ALMONDS AND WARM CHERRY SAUCE
Danish Christmas rice pudding with warm cherry sauce or Risalamande is traditionally served on Christmas Eve. Whoever finds the hidden almond receives a small gift. I like this recipe because it is cooked entirely on the stove top and cooks in one hour, rather than in the oven for two hours or more. Can be made in advance and refrigerated until serving time. The Danes often buy a store bought cherry sauce, but I've included a recipe for home-made. :) Adapted from an online source.

Steps:
- Split half of the vanilla pod length ways, scrape out the seeds.
- Place the milk and vanilla in a heavy-bottomed pan. Bring to a boil.
- Reduce the heat. Add the rice gradually, stirring constantly.
- Increase the heat and bring to a boil again.
- When the milk boils, reduce the heat, cover and simmer on a very low heat for about 1 hour or until the rice is cooked. Stir from time to time, making sure that the rice doesn't stick too much to the bottom.
- Leave to cool completely.
- Whip the cream together with sugar. Fold the whipped cream and almonds into the rice. You can add more sugar or more almonds if you wish. Serve with warm cherry sauce.
- Now make the cherry sauce. Place the cherries in a medium saucepan. Add sugar and 1 1/2 cups water. Add the vanilla pod. Simmer until the cherries are tender.
- Combine the potato starch with 2 tablespoons cold water.
- Bring the cherries to a boil. Remove the vanilla pod from the pot. Reduce the heat, and , stirring constantly, slowly pour the water with the starch. Simmer for a few minutes until the sauce thickens slightly.
- Stir in the lemon juice and serve warm over the rice pudding. Garnish with a fresh mint leaf, if desired.
- * I used frozen sour cherries in this recipe, but regular sweet cherries should work as well.
DANISH RICE PUDDING WITH DRIED CHERRY SAUCE
Steps:
- Cook the rice, milk, and sugar in a heavy-bottomed 2-quart saucepan over medium heat until the rice is tender and the milk is absorbed, 30-40 minutes. Remove from the heat and stir in the almond extract, almonds, and sherry. Using a rubber spatula, scrape the pudding into a bowl and chill for at least 1 hour. Whip the cream in an electric mixer on high speed (or by hand) until soft peaks form and then get a little firmer, and fold into the chilled pudding. Serve immediately or refrigerate until ready to serve. Top with warm or cold cherry sauce.
- Dried Cherry Sauce
- Place the cherries in a small saucepan with the wine, 1/2 cup water, and the sugar or jelly. Bring to a boil, reduce heat, and simmer until the cherries are tender and the juice is syrupy (approximately 10 minutes).

- In a large bowl, dissolve yeast in water. Add the milk, 1/4 cup shortening, sugar, 2 eggs, salt, mace, extracts and 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. On a large floured surface, roll dough out to a 24x16-in. rectangle. Dot half of the dough with 1/4 cup shortening; fold dough lengthwise. Fold the dough 3 times lengthwise, then 2 times widthwise, each time dotting with some of the remaining shortening. Place dough in a greased bowl; cover and let rise 20 minutes., On a floured surface, roll dough into a 16x15-in. rectangle. Cut into 8x3/4-in. strips; coil into spiral shapes, tucking ends underneath. Place in 2 greased 15x10x1-in. baking pans. Cover and let rise in a warm place until doubled, about 1 hour. , Beat remaining egg. Make a depression in the center of each roll; brush with egg. Fill with 1 tablespoon pie filling. Bake at 375° for 15-18 minutes or until golden brown. Cool on a wire rack.Combine confectioners' sugar, vanilla and milk; drizzle over rolls. Sprinkle with almonds.

- Preheat oven to 350 degrees F.
- To make the icing: In a small microwave-safe bowl, combine powdered sugar, cornstarch, vanilla extract, and 1 1/2 teaspoons of cold water. Mix until the ingredients have dissolved.
- Add marshmallow creme and microwave for 5 seconds, or until the creme is soft enough to fold into the mixture. Stir until smooth. Add whipped topping and stir again, until evenly combined. Cover and refrigerate the icing until you're ready to ice the Danish.
- To make the Danish: In a medium bowl, combine cream cheese, oats, granulated sugar, soymilk, and almond extract, and stir until thoroughly mixed. Fold in cherries and set aside. This is your filling.
- Spray a large baking sheet with nonstick spray. Roll out the dough on the sheet into a large rectangle of even thickness. If using crescent roll dough, pinch together perforated seams to seal. Arrange baking sheet in front of you so that the short sides are on the left and right and the long sides are on the top and bottom. Spoon the cherry filling lengthwise across the middle third of the dough, leaving 1/2-inch borders on the left and right of the filling.
- Starting from the top, make 12 vertical cuts-about 1 inch apart-along the top section of the dough, stopping about 1/2 inch from the filling. Repeat with the bottom section of the dough. This will create 1-inch-wide strips of dough on both the top and bottom of the filling.
- Alternate folding the 1-inch strips from the top and the bottom over the filling, covering the filling completely and creating a crisscrossed, "braided" appearance. When you reach the last few strips, cross them toward the middle of the Danish. After all the strips have been folded, fold the left and right sides of the dough in toward the filling, so the filling cannot escape, and pat firmly to seal.
- Bake in the oven for 15 to 20 minutes, until pastry is crispy and golden brown. Allow it to cool completely.
- Just before serving, stir icing and drizzle it over the entire Danish. Cut Danish into 8 slices and indulge! (P.S. Refrigerate leftovers.)

- Preheat oven to 350 degrees.
- Unroll 1 of the cans of crescent dough into 2 long rectangles.
- Place in greased 13x9-inch baking pan; press onto bottom of pan to form crust, pressing seams together to seal.
- Beat cream cheese, 3/4 cup of the sugar, egg white and vanilla with electric mixer on medium speed until well blended.
- Spread onto crust and then cover the cream cheese mixture with pie filling.

- 1. Preheat oven to 375 degrees. Grease cookie sheet.
- 2. Unroll dough onto cookie sheet forming a 13x7" rectangle. Seal all perforations with your fingers.
- 3. In medium bowl, beat cream cheese and 2 T. sugar by hand. Add slightly beaten egg yolk and mix thoroughly. Spoon lengthwise down center of dough in a 2 1/2" strip. Spoon pie filling on top of cream cheese mixture.

- Wash and pit cherries (if you don't have a pitter, a sturdy straw works).
- In a large saucepan combine sugar, cinnamon sticks, almond extract, water and corn syrup.
- Over medium high heat bring to a boil, stirring often to prevent scorching.
- Reduce heat to a simmer and add cherries.
- Simmer for 5 minutes.
- Remove cinnamon sticks.
- Ladle hot sauce into hot sterile jars, leaving 1/2 inch head space.
- Wipe rims and adjust 2 piece caps.
- Process 10 minutes in a boiling water canner.
- **To thicken sauce for serving, combine 1 T cornstarch and 2 T's water in a medium saucepan.
- Whisk well to remove any lumps.
- Add 1 pint Danish Cherry Sauce and bring to a boil, cooking until sauce reaches desired thickness.

- 1. Lightly grease a jelly roll pan. Blend the following ingredients with a mixer: sugar, butter, shortening, baking powder, vanilla, almond extract and eggs. If you aren't in the habit of keeping almond extract around, just replace it with vanilla. If a little vanilla is good, more is better! Blend on low, then turn up the mixer to high for 3 minutes.
- 2. Add the flour and blend by hand. Spread 2/3 of the batter in the jelly roll pan. Spread the pie filling over the batter and then, drop the remaining batter by spoonfuls onto the pie filling.
- 3. Bake for 35-40 minutes in a 350 degree oven. Don't let it brown too much! While the cake is still slightly warm, drizzle with glaze.

- 5. 1 Mix the confectioners' sugar, butter, and vanilla together.
- 6. 2 Adding half the milk (or orange juice) to start with, stir in to make a thick glaze, adding just a drop at a time more until you get a nice thick glaze.

- Fold remaining dough over, gently pressing to attach.
- Line baking sheet with parchment paper.
- Shape roll, seam side down, into ring on baking sheet; press ends together to seal.
- With scissors cut about 3/4" through outer edge every 1" all the way around to allow filling to peak through while it bakes.
- Using knife to help separate, twist each piece slightly to expose filling inside.
- Beat remaining yolk with 1 tbsp water; brush over ring.
- Bake 40 minutes until golden brown (cover edges with foil if browning too quickly).
- Remove from oven; spoon cherry filling over top of each cut.
- Bake until filling is hot, about 5 minutes.
- Cool on pan on rack 10 minutes.
- Remove from pan; cool completely on rack.

- Pit one cup of cherries and reserve.
- Cook remaining cherries in 3 quarts water; when tender, press through a sieve.
- Add the cup of pitted cherries, cinnamon stick, and lemon slices to the juice.
- Cook slowly for a few minutes.
- Make a paste of cornstarch and a little juice or water; add to soup, stirring constantly.
- Bring to a boil and add the sugar.
- Serve hot or cold.
