1/2 cup unsalted butter melted (, cooled to room temperature)
1/2 cup granulated sugar
1.5 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 cups fresh cherries (, pitted, each sliced in half)
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1 tsp granulated sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Line a square 8" baking pan with parchment paper. Butter the sides and bottom of lined pan. Set aside.
  • In a medium mixing bowl, stir together cherries, cornstarch and lemon juice.
  • In a large mixing bowl, stir together melted butter and sugar. Add flour, baking soda, baking powder and salt and stir with a fork until the mixture resembles crumbs.
  • Reserve 3/4 cup of mixture.
  • Press remaining crumb mixture into the bottom of prepared pan.
  • Spread cherry filling over the crust.
  • Sprinkle remaining crumb mixture over cherries.
  • Sprinkle sugar over crumb topping.
  • Bake bars for 23 to 25 minutes OR until the top is golden.
  • Cool completely before cutting.

2 cups sugar
1 teaspoon salt
4 large eggs (, room temperature)
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups flour
2 cans cherry pie filling (, 21 ounces each )
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2-3 tablespoons whole milk

Steps:

  • Preheat oven to 350 degrees. Spray a 15x10 sheet pan with baking spray.
  • In a stand mixer, cream butter, sugar, and salt on medium speed until light and fluffy.
  • Add eggs, one at a time, then add extracts.
  • Gradually fold in flour to butter mixture until combined and dough forms.
  • Press 3 cups dough into prepared pan.
  • Spread with cherry pie filling covering all the dough evenly.
  • Drop remaining dough by teaspoonfuls over filling.
  • Bake 35-40 minutes, or until golden brown.

These quick and easy crumb bars are made with fresh cherry jam, a buttery and coconut crumb topping and sweet fruit filling. It's a perfect family dessert!

Nonstick cooking spray
2 cups (270 grams) flour
1/2 cup (60 grams) rolled oats
1/4 cup (25 grams) unsweetened desiccated coconut
1/2 cup (100 grams) packed brown sugar
3/4 teaspoon (3 grams) kosher salt
1 cup (250 milliliters) coconut oil, melted
1/2 teaspoon (21/2 milliliters) vanilla extract
1/2 teaspoon (2 1/2 milliliters) coconut extract
1 cup (370 grams) cherry jam

Steps:

  • Set your oven rack to the lowest level and preheat to 350 degrees F (175 degrees C). Lightly grease a 9-inch square baking pan with nonstick cooking spray and line the bottom and sides with parchment paper.
  • In the bowl of a food processor, pulse together the flour, oats, coconut, brown sugar and salt once or twice to combine. Pour over the melted coconut oil, vanilla extract and coconut extract and pulse just until combined.
  • Press two thirds of the dough into the bottom of your prepared baking pan. Spread an even layer of jam onto the base layer of dough, then squeeze and crumble the remaining dough overtop.
  • Bake for 30 to 35 minutes, or until golden brown and jam is bubbling. Allow the bars to cool completely before lifting out of the pan and cutting into squares.

1 cup sugar
2 cups unbleached all-purpose flour

1 pound sour cherries (3 cups), pitted
3/4 cup sugar
2 tablespoons unbleached all-purpose flour
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt (we use Diamond Crystal)

Steps:

  • Crust: Preheat oven to 375°F. Butter an 8-inch square cake pan. Line with parchment, leaving a 2-inch overhang on two sides; butter parchment.
  • Beat butter with sugar on medium-high speed until pale and fluffy, about 3 minutes, scraping down bowl as needed. Reduce speed to medium-low, add flour and salt, and beat until dough forms clumps but does not completely hold together. Press 2 1/2 cups flour mixture into bottom and 1 inch up sides of prepared pan.
  • Filling: In a medium bowl, stir together cherries, sugar, flour, lemon juice, and salt. Pour into crust. Crumble remaining flour mixture (about 1/2 cup) evenly over top, squeezing to create clumps.
