CHRISTMAS CHERRY CREAM CHEESE-JELLO MOLD



Christmas Cherry Cream Cheese-Jello Mold image

This makes a wonderful dessert for the holidays, and is very easy to prepare, just make sure that you chill it well before serving --- you might want to make two of these to serve if you have a larger dinner party, you can make this in single serving bowls also instead of a large mold :)

1 (3 ounce) package cherry Jell-O
1 (8 ounce) package cream cheese, softened
1/2 cup nuts (optional)
8 ounces cola (very cold)
1 cup dark sweet cherry, pitted and drained

Steps:

  • Dissolve Jell-O in boiling water, as directed on pkg (don't add in any extra cold water).
  • Cool to room temperature.
  • Add cola, cream cheese, cherries and nuts.
  • Mix until completely smooth, then pour into 6-cup mold.
  • Chill until completely set.
  • Unmold to serve.
  • Note: this can be served in single serving dishes if desired.

Cherries and honey-roasted almonds add a subtle sweet flavor to a spread featuring three cheeses.

1 package (8 oz) cream cheese, softened
4 oz Muenster cheese, shredded (1 cup)
4 oz white Cheddar cheese, shredded (1 cup)
2 tablespoons finely chopped onion
2 tablespoons cherry-flavored liqueur
1 cup pitted fresh or frozen (thawed and drained) dark sweet cherries
3/4 cup honey-roasted sliced almonds
3 packages (2.82 oz each) mini toasts (96 toasts)

Steps:

  • In food processor, place cheeses, onion and liqueur. Cover; process until smooth and well mixed; spoon into large bowl. Chop 3/4 cup of the cherries. Reserve remaining 1/4 cup cherries and 2 tablespoons of the almonds. Stir chopped cherries and remaining almonds into cheese mixture until well mixed and mixture is pink.
  • Line 3-cup bowl or heart-shaped mold with double layer of cheesecloth. Spoon cheese mixture into mold. Cover; refrigerate at least 1 hour but no longer than 24 hours.
  • Unmold cheese mixture onto serving plate. Cut reserved cherries in half. Garnish top of cheese mold with halved cherries and reserved almonds. Serve with mini toasts.

Wilton's heat pan is great for Valentine's or Anniversary, but use other molds for any time. There is no time of year this is not good. Mom passed this down and I don't know original date it ran in the newspaper.

3 package(s) (envelopes) knox unflavored gelatine
1/2 cup(s) sugar
2 cup(s) milk, divided
2 can(s) (21 oz) cans cherry pie filling
2 package(s) (8 oz) cream cheese, softened
1/4 cup(s) almond-flavored liquer (amarettto) **
3 cup(s) frozen whipped topping, thawed, divided
1/3 cup(s) sliced almonds for garnish, if desired
- ** 1 to 2 tablespoons almond extract may be substituted; increase milk to 2 1/2 cups

Steps:

  • Mix gelatin and sugar in small saucepan; stir in 1 1/2 cups milk. Stir over medium heat until gelatin dissolves completely. Remove from heat.
  • Drain 1 can cherry pie filling, reserving syrup, Cover and refrigerate cherries for garnish. Blend remaining cherries, reserved cherry syrup and cream cheese in good processor or blender until smooth. Pour into large bowl, beating in remaining milk, liqueur and gelatin mixture until smooth. Refrigerate until slightly thickened
  • Fold 2 cups whipped topping into gelatin mixture. Spread into lightly greased pan. Refrigerate until firm, at least 4 hours. Run tip of small knife around top edge of gelatin mixture; dip mold in war water, just up to top edge of mold, for 10 seconds to loosen. Place large serving plate over mold and carefully invert to unmold. Garnish with remaining whipped topping, drained cherries and almonds.
