Served warm, this cherry sauce makes a wonderful topping for sponge cake, pound cake or ice cream. You could also try it as a filling for crepes or blintzes.

Number Of Ingredients 7

1 can (16 ounces) pitted tart red cherries
1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon butter
1/4 teaspoon vanilla extract
Few drops red food coloring, optional
Sponge cake, pound cake or ice cream

Steps:

  • Drain cherries, reserving juice. Set cherries aside. Add enough water to juice to equal 1-1/4 cups. In a saucepan, combine sugar and cornstarch. Stir in juice. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat. Stir in the butter, vanilla, cherries and food coloring if desired. Serve warm over cake or ice cream.

This delicious cherry sauce is the perfect accompaniment for your cheesecake, pound cake, waffles, rice pudding, ice cream and more!

1 1/2 cups canned cherries plus 1/2 cup of the light syrup from the can (or fresh or frozen cherries plus 1/2 cup water)
3 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon butter (vegans: use an oil-based spread)
1 tablespoon cornstarch dissolved in 1/4 cup water
1/2 teaspoon quality pure almond extract

Steps:

  • Place the cherries and the syrup or water in a small saucepan along with the sugar, butter and lemon juice. Bring to a boil. If using fresh or frozen cherries, reduce the heat and simmer for another 3 minutes. Stir in the cornstarch mixture, stirring continually until the sauce is thickened, about 1 minute. Remove from heat and stir in the almond extract.
  • Cover and store in the fridge where it will keep for up to a week.
  • Serve warm or at room temperature.

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 ½ cups white sugar, divided
½ cup butter, softened
1 cup milk
1 teaspoon vanilla extract
4 cups halved and pitted cherries
1 ¼ cups cherry juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a deep 9x13-inch baking dish.
  • Whisk flour, baking powder, and salt together in a bowl.
  • Place 1 cup sugar and butter in a separate bowl; beat with an electric mixer until light and fluffy, 4 to 5 minutes. Stir in milk and vanilla extract. Add flour mixture to butter mixture; mix until batter is well blended and thick, 2 to 3 minutes.
  • Spread batter in the prepared baking dish; arrange cherries on top. Drizzle cherry juice over the cherries. Sprinkle remaining 1/2 cup sugar over the surface.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

A childhood favorite that my mother used to make. If you don't want to use the sauce on the cake-although it's sure good-it would be nice on ice cream as well.

1/3 cup shortening
1 1/4 cups sugar
2 eggs, well beaten
2 1/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1 can sour pitted cherries, well drained (retain juice)
1/2 cup chopped nuts (optional)

Steps:

  • Cream shortening; add sugar gradually and cream until fluffy.
  • Blend in eggs.
  • Combine dry ingredients and stir into creamed mixture alternately with milk.
  • Stir in cherries (and nuts, if using).
  • Pour into a 9x13 pan that has been sprayed with nonstick spray.
  • Bake at 350° for about 50 minutes.
  • Serve warm with: HOT CHERRY SAUCE: Mix together in a saucepan 1/2 cup sugar, 2 Tbsp cornstarch and a dash of salt.
  • Blend in the juice from the can of cherries and 1 cup water.
  • Bring to a boil, stirring constantly.
  • Boil, stirring occasionally, until the mixture thickens and the starchy taste disappears, probably about 10 minutes.
  • Remove from heat and blend in 1/4 tsp almond extract.
  • Note: Sauce thickens unacceptably as it cools, so it really needs to be served hot.

Nonstick cooking spray
1/2 cup unsweetened cocoa powder
2 sticks unsalted butter
1 1/2 cups granulated sugar
4 large eggs
1/2 cup sour cream
1 teaspoon orange zest
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 cup whole milk
2 cups dried cherries
1/4 cup confectioners' sugar
2 tablespoons dark rum
1/2 teaspoon vanilla extract
One 1-inch strip lemon peel
Juice of 1/2 lemon
Juice of 1/2 orange
1 cinnamon stick
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 325 degrees F. Spray a 14-cup Bundt pan with nonstick spray.
  • For the cake: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on high speed until pale yellow, 3 to 4 minutes. Scrape down the sides of the bowl regularly. With the mixer on low, add the eggs, one at a time, until fully incorporated. Add the sour cream, orange zest and vanilla, and then mix until smooth. Sift together the flour, cocoa powder and baking powder. Fold in half the sifted dry ingredients, and then half the milk. Mix together, and then add the remaining dry ingredients and milk.
  • Scrape the batter into the greased Bundt pan and bake in the center of the oven for 1 hour. When done, a cake tester inserted into the center of the cake will come out clean. Cool in the cake pan for 10 minutes before inverting and carefully removing the cake from the pan.
  • For the cherry sauce: Combine the cherries with 1/3 cup water, confectioners' sugar, rum, vanilla, lemon peel, lemon juice, orange juice and cinnamon stick in a medium saucepan. Simmer until the cherries are tender and the sauce is lightly syrupy (it will thicken further when cooled), 12 to 15 minutes. Remove from the heat, discard the lemon peel and cinnamon stick. Add the butter and stir to combine and melt. Serve with the sliced chocolate Bundt cake.

1 egg, beaten
1 can (14-1/2 ounces) pitted tart cherries, drained
BUTTER SAUCE:
1 cup sugar
1/2 cup butter, cubed
1/2 cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, baking soda and salt. Combine the egg and cherries; add to dry ingredients. Stir until well combined and batter no longer appears dry. Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool on a wire rack., For sauce, combine the sugar, butter and milk in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Cook and stir for 5 minutes or until thickened. Remove from the heat; stir in vanilla. Serve warm over cake.
