TERIYAKI BURGERS RECIPE

It may not be a traditionally Japanese combination, but that's not to say that teriyaki sauce doesn't go well with hamburgers. It does. Spectacularly so. But you can't just go to the store, buy a bottle of sauce, and start dousing your burger in it willy-nilly. There's technique at the heart of a good teriyaki-glazed burger-here's how to make it the right way.

1 1/2 pounds fresh ground beef chuck (about 80% lean)
Kosher salt
2 teaspoons shichimi togarashi (see note)
1 cup thinly sliced scallions
1 recipe Teriyaki Sauce (I strongly advise homemade over any store-bought brand)
4 soft hamburger buns
4 tablespoons mayonnaise, preferably Japanese-style
2 cups finely shredded green cabbage

Steps:

  • Form beef into 4 patties, about 1/2 inch wider than the burger buns, with a slight depression in the center to account for bulging as they cook. Season generously with salt and togarashi and refrigerate until ready to cook. Sprinkle scallions evenly over a large plate or a cutting board.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate. Place burgers directly over hot coals, cover with vents open, and cook, turning occasionally, until burgers are well charred and burgers' centers register 110°F on an instant-read thermometer for medium rare or 120°F for medium, 5 to 7 minutes total.
  • Brush burgers on both sides with teriyaki sauce and continue cooking, flipping and brushing occasionally, until they register 120°F for medium rare or 130°F for medium. Remove from grill and transfer to scallion-covered plate or cutting board. Brush with more sauce and flip burgers, brushing with sauce until well glazed and coated in scallions.
  • Toast burger buns over grill until well browned and crisp. Spread bottom and top buns with mayonnaise. Divide half of cabbage over bottom buns. Top with cooked burgers. Brush with more teriyaki sauce. Top with remaining cabbage, close buns, and serve.

This recipe uses some of the same techniques and seasonings as the shish kebab to improve the dull turkey burger. For something made with meat that is 95% fat free this is pretty good!

1 ½ pounds ground turkey
1 ½ tablespoons plain bread crumbs
1 ½ tablespoons ground almonds
1 teaspoon chile paste
2 cloves garlic, crushed and minced
1 ½ teaspoons finely grated fresh ginger
1 ½ teaspoons salt
1 ½ teaspoons garam masala
1 tablespoon lemon juice
2 tablespoons plain yogurt
2 tablespoons chopped fresh cilantro

Steps:

  • Combine ground turkey, breadcrumbs, almonds, chili paste, garlic, ginger, salt, garam masala, lemon juice, yogurt, and cilantro; mix thoroughly with a spatula or clean hands.
  • Shape ground turkey mixture into a ball and divide in 4 even pieces; refrigerate for 1 hour. Form each piece into a patty with damp hands.
  • Preheat grill to medium heat and refrigerate turkey burger patties until the grill is hot. Grill turkey burgers until patty appears to be cooked about half way up the side and then flip, grilling each side for about 4 to 5 minutes. Burger is done when surface is cracked and juices start to rise to the top.

This is my quick and easy version of Boston's Parker House Hotel's famous cake.

1 (18.25 ounce) package yellow cake mix
3 eggs
1 ¼ cups water
⅓ cup vegetable oil
3 eggs
2 tablespoons cornstarch
6 tablespoons white sugar
1 cup heavy whipping cream
1 cup whole milk
½ tablespoon butter
1 teaspoon vanilla extract, or to taste
1 pinch salt
4 ounces dark chocolate, chopped
1 teaspoon butter
½ cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray 2 (8-inch) cake pans with cooking spray.
  • Stir yellow cake mix, 3 eggs, water, and vegetable oil in a bowl until moistened. Beat with an electric mixer on medium speed for 2 minutes, scraping bowl occasionally.
  • Divide cake batter between the two prepared cake pans.
  • Bake in the preheated oven until cakes have risen and are lightly golden brown, 33 to 38 minutes. Check for doneness after 25 minutes. A toothpick inserted into the center of the cakes should come out clean. Allow cakes to cool for about 10 minutes before removing from the pans. Cool cakes completely, about 40 minutes.
  • Whisk 3 eggs, cornstarch, and sugar in a large bowl until well mixed and lemon colored, 2 to 3 minutes. Set aside.
  • Heat 1 cup heavy whipping cream, whole milk, and 1/2 tablespoon butter in a large saucepan over medium heat until it just begins to boil.
  • Reduce heat to low; pour egg mixture into cream mixture and whisk until thick, about 1 minute.
  • Pour egg and cream mixture through a fine mesh strainer into a large bowl; discard any chunks.
  • Whisk vanilla and salt into the egg and cream mixture until combined. Cover with a layer of plastic wrap pressed against the surface. Chill in refrigerator to form a pastry cream texture, 3 to 4 hours.
  • Place chocolate in a large bowl. Heat 1 teaspoon butter and 1/2 cup heavy whipping cream in a saucepan over medium heat until butter is melted. Pour cream mixture over chocolate and whisk until smooth. Set aside until cooled, but still pourable, about 20 minutes.
  • Place one cake layer on a plate, flat side up. Spread pastry cream to within 1-inch of the edge of cake. Place second cake layer on top, rounded side up. Press gently to push pastry cream to the edge. Pour chocolate mixture over top of the cake and spread so it drips over the edge.

Easy Teriyaki Chicken Burgers image

A super simple way to make a chicken burger that zings with flavor! Sometimes it's referred to as "hawaiian-style." This has been my husband's favorite for a long time, especially at Red Robin. That got too expensive after a while so I thought I'd try making it at home instead. He loves it! These burgers have been a big hit whenever we have friends over for a barbeque.

4 boneless skinless chicken breasts
1/2 cup teriyaki sauce
4 hamburger buns, potato or gourmet style
4 slices pineapple, drained
2 tablespoons mayonnaise

Steps:

  • Place chicken breasts in glass dish and smother with teriyaki sauce; turn breasts over to cover thoroughly.
  • Marinate as long as possible, preferably in the fridge overnight.
  • 15-30 minutes if you're in a hurry.
  • On stovetop or grill, cook chicken about 12 to 14 minutes.
  • (7-8 minutes in a George Foreman grill).
  • Chicken breasts (bone-in and boneless) should be cooked to an internal temperature of 170 F.
  • Exact grilling times will depend on the heat of your grill/pan as well as on the thickness of the chicken breast.
  • Chicken is done if, when pierced, the juices run clear or the breast is no longer pink inside.
  • Spread mayonnaise on each bun, top& bottom.
  • Place each cooked chicken breast on a bun and top with a pineapple slice.
  • Serve alongside a summer salad or veggies and don't forget a tall glass of iced tea!
