With spaghetti and mushroom sauce, and light and dark meat chicken with bell peppers, Ree Drummond's casserole is like two meals in one. Cooking the spaghetti in the same liquid as the chicken infuses it with flavor, and the Cheddar thickens the sauce so it coats each piece of meat.

1 whole raw chicken, cut into 8 pieces
1 pound thin spaghetti, broken into 2-inch pieces
2 1/2 cups shredded sharp Cheddar
1/4 cup finely diced green bell pepper
1/4 cup finely diced red bell pepper
1 teaspoon seasoned salt
1/8 to 1/4 teaspoon cayenne pepper
Two 10 3/4-ounce cans cream of mushroom soup
1 medium onion, finely diced
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of water to a boil. Add the chicken pieces to the boiling water and boil for a few minutes, then return the heat to medium-low and simmer, 30 to 45 minutes.
  • Remove the chicken and 2 cups of the chicken cooking broth from the pot. When the chicken is cool, remove the skin and pick out the meat (a mix of dark and white) to make 2 generous cups.
  • Cook the spaghetti in the same chicken cooking broth until al dente. Do not overcook. When the spaghetti is cooked, combine with the chicken, mushroom soup, 1 1/2 cups cheese, the green peppers, red peppers, onions, seasoned salt, cayenne, and sprinkle with salt and pepper. Stir in 1 cup of the reserved chicken cooking broth, adding an additional cup if needed.
  • Place the mixture in a casserole pan and top with the remaining 1 cup cheese. Cover and freeze up to 6 months, cover and refrigerate up to 2 days or bake immediately until bubbly, about 45 minutes. (If the cheese on top starts to get too cooked, cover with foil).

1 tablespoon butter
2/3 cup chopped onion
2 cloves garlic, minced
1 (15-ounce) jar alfredo sauce
1 (8-ounce) package processed cheese product, cubed
2 (15.5-ounce) cans fire-roasted diced tomatoes, drained
1 (16-ounce) package spaghetti, cooked according to package directions
3 cups shredded cooked chicken
1/3 cup chopped green onion
1 teaspoon dried Italian seasoning
1 1/2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350°. Spray a 3-quart baking dish with cooking spray. In a large skillet, melt butter over medium heat. Add onion and garlic; cook, stirring frequently, for 7 minutes or until onion is tender. Stir in alfredo sauce and cheese product until melted and smooth. Stir in tomatoes and next 4 ingredients until well combined. Spoon into prepared pan, and sprinkle with Cheddar. Bake for 20 to 30 minutes or until hot and bubbly. Let stand for 5 minutes before serving.

3 (12.5 fl oz) cans chicken chunks, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
4 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and transfer pasta to a large bowl.
  • Mix chicken, cream of mushroom soup, and cream of chicken soup into spaghetti. Transfer mixture to a 9x13-inch baking dish and top with Cheddar cheese.

16 ounces spaghetti (cooked al dente according to package)
21 ounces cream of mushroom soup (2 cans)
1 cup low-sodium chicken broth
1 cup cheddar cheese (shredded)
1 cup Velveeta cheese (shredded)
1 teaspoon salt
½ teaspoon black pepper
2 cups shredded cooked chicken
1 green bell pepper (diced)
1 white onion (diced)
8 ounces diced pimentos (2 jars)
½ cup Parmesan cheese (shredded)
Parsley garnish
½ teaspoon cayenne pepper for some kick!

Steps:

  • Preheat oven to 375°F and spray a 9x13-inch casserole dish.
  • Cook and drain the spaghetti according to the directions on the package for al dente. Return the cooked pasta to the pot.
  • While the pasta is cooking, combine the cream of mushroom soup, chicken broth, cheddar cheese, Velveeta cheese, salt, pepper, and cayenne pepper (optional) in a medium bowl.
  • Add the diced chicken, pepper, onion, pimentos, and cream mixture to the pasta. Toss to combine.

1 small onion
14 ounces cream of mushroom soup
14 ounces cream of chicken soup
2 (20 ounce) cans white meat chicken (or more)
1 lb Velveeta cheese
1 lb spaghetti
1 cup parmesan cheese

Steps:

  • Preheat Oven to 350 Degrees.
  • Boil Spaghetti in pan until its flexable.
  • Melt Velveeta cheese, cream of chicken, cream of mushroom, and broth in medium size sauce pan.
