cooking spray (such as Pam®)
3 cups bite-sized cauliflower florets
1 egg
½ tablespoon all-purpose flour
½ cup milk
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
1 pinch ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  • Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
  • Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

1 large head cauliflower, cut into florets with stems cut into bite-size pieces
1 cup shredded Cheddar cheese, divided
½ cup reduced-fat sour cream
4 ounces reduced-fat cream cheese, softened
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until very tender, about 5 minutes.
  • Transfer cauliflower to a bowl and mash with a potato masher until few chunks remain; add 1/2 cup Cheddar cheese, sour cream, cream cheese, and Parmesan cheese and mix thoroughly. Spread the mixture into a 8-inch square casserole dish; top with remaining Cheddar cheese. Cover dish with aluminum foil or lid.
  • Bake in preheated oven until hot and bubbling, 20 to 25 minutes. Remove cover and continue baking until the top is browned, about 10 minutes more.

1 large head cauliflower, chopped
1 ½ cups shredded reduced-fat Cheddar cheese
½ cup bacon bits (such as Hormel®)
½ (8 ounce) package low-fat cream cheese
½ cup low-fat sour cream
¼ cup minced green onions
3 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a saucepan of water to a boil. Add cauliflower and cook until tender, but not overly soft, 3 to 5 minutes. Drain well and transfer cauliflower to a large bowl. Mash, using a potato masher, leaving some chunks.
  • Reserve 1/2 cup Cheddar cheese and 1 tablespoon bacon bits. Mix remaining Cheddar cheese, remaining bacon bits, cream cheese, sour cream, green onions, butter, salt, and pepper into the mashed cauliflower in the bowl. Transfer mixture to an 8-inch square baking dish. Sprinkle reserved Cheddar cheese and bacon bits on top.

1 head cauliflower
¼ cup butter, cut into pieces
1 teaspoon mayonnaise
1 teaspoon prepared mustard
½ cup grated Parmesan cheese

Steps:

  • Steam whole head of cauliflower for 30 minutes. Drain and place on a pie plate.
  • Preheat oven to 375 degrees F (190 degrees C).
  • In a mixing bowl, combine mayonnaise and mustard; spread the mixture over cauliflower and dot with pats of butter. Sprinkle generously with Parmesan cheese.
  • Bake at 375 degrees F (190 degrees C) uncovered, for about 30 minutes, or until the cheese is brown.

1 large head cauliflower, cut into florets
salt and pepper to taste
2 medium tomatoes, sliced
½ cup butter, melted
8 ounces Swiss cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cauliflower in a microwave-safe baking dish with just enough water to cover bottom of dish. Cook in the microwave on High for 5 minutes, or until slightly tender. Drain, and season with salt and pepper. Arrange tomato slices around the cauliflower. Drizzle cauliflower and tomatoes evenly with melted butter, and top with cheese.

1/2 head cauliflower (6-7" diameter)
1 cup reduced-fat shredded Cheddar cheese
1 Tbsp chopped chives
1/2 tsp black pepper
1 Tbsp salted butter
1/4 cup plain low-fat yogurt
2 Tbsp bacon bits
1 tsp minced garlic
1/4 cup reduced-fat sour cream
Tips
Squeeze moisture out of cauliflower with a kitchen towel or cheese cloth so that it's more the consistency of potatoes before mixing.
Mix a little olive oil and grated Parmesan cheese. Spread on top and broil until golden brown

Steps:

  • 1. Cook cauliflower until tender (Microwave and cover with NO water added for approximately 6 minutes on high). 2. Preheat oven to 400F. 3. *Process cauliflower until smooth with a food processor. Add yogurt, sour cream, and butter and process until creamy and smooth. 4. Mix remaining ingredients together in a medium bowl. 5. Use cooking spray on 4 seven-ounce ramekins or other small oven-safe dishes and spoon mixture into dishes. 6. Place all small dishes on a cookie sheet for easier handling. 7. Bake for 15 minutes on middle rack and then **broil for a few minutes until top is golden brown.
