1 pound ground beef
1 pound ground pork
1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 ½ cups dry bread crumbs
ground black pepper to taste
¾ cup water
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

I came up with this recipe today, and it has turned out great! I wanted to make something simple and inexpensive, that the kids would like. It's always a battle getting my eldest son to eat meat, so this was one of my great triumphs! Lol

300 g ground beef
500 g sausage, casings removed
2 cups Stove Top stuffing mix
1 egg
1 cup water
2 garlic cloves, crushed
2 tablespoons ricotta cheese, low-fat
1 cup low-fat tasty cheese, shredded

Steps:

  • Combine meat, stuffing mix, water and egg in a bowl. Make sure it is well mixed, then set aside for 15 minutes.
  • Lay out a rectangle of baking paper, and press the meatlof mixture out to form on large flat rectangle, on the paper.
  • Combine the ricotta and garlic, and spread over the meat. Sprinkle with shredded cheese.
  • Using the paper to help, roll the meat, swiss roll style.
  • Place in a greased baking dish, and bake at 180C for 30-40 minutes, or until cooked through and browned on top. Slice to serve.

TUSCAN GARLIC SPICE MIX
4 tsp dried rosemary
2 Tbsp dried thyme
4 tsp fennel seeds
4 tsp garlic powder
3 tsp dried marjoram
2 tsp dried sage
MEATLOAF
2 Tbsp italian seasoning,divided
1 Tbsp olive oil
1 large vidalia onion,peeled and sliced
1 (14 ounce) can artichoke hearts,drained and chopped
2 lb ground sirloin
1 Tbsp garlic pepper
2 egg whites
3/4 c italian bread crumbs
2 Tbsp dijon mustard
2 c shredded italian 5 cheese blend

Steps:

  • 1. To make Tuscan Garlic Spice Mix;in a small bowl,combine dried rosemary,thyme,fennel seeds,garlic powder,marjoram and sage,whisk together with a fork,until blended and set aside.
  • 2. Preheat oven to 350 degrees F.Grease a 9x5-inch loaf pan.Season with 1 tablespoon italian seasoning.
  • 3. Heat olive oil in a large skillet over medium-low heat.Add sliced vidalia onion and chopped artichoke hearts,saute for 4 minutes until are tender.Remove from heat,season with Tuscan Garlic Spice Mix and set aside.
  • 4. In a large bowl,combine ground sirloin,garlic powder,egg whites,bread crumbs,dijon mustard and Tuscan Garlic Spice Mix;mix together until blended.
  • 5. Transfer the meat mixture to a piece of waxed paper and flatten to a 1/2-inch thick rectangle.
  • 6. Sprinkle with 1 cup shredded italian 5 cheese blend into the center of meat rectangle.Add sauteed onion mixture over the cheese and sprinkle remaining cheese on the onion mixture.
  • 7. Pick up the edge of the waxed paper to roll the flattened meat into a log around the filling.Seal the ends and seam and place the loaf into a prepared loaf pan.Sprinkle with italian seasoning on top.
  • 8. Bake in the preheated oven,about 30 minutes or until the meat is no longer pink in the center.Let stand for 10 minutes before slicing.

I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

1 egg
1 cup seasoned dry bread crumb
1 teaspoon minced garlic
1/2 cup of your favorite pasta sauce, homemade or in the jar
1 cup chopped onion
1/4 cup chopped fresh basil
3/4 lb lean ground beef
1/2 lb hot Italian sausage
1 cup cubed mozzarella cheese, in about 1/4 inch pieces
additional pasta sauce, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
  • Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
  • Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
  • Serve with rice, spaghetti, or scalloped potatoes.

MEAT LOAF MIXTURE
3/4 c italian bread crumbs, or any you desire
1 c milk
1 lb lean ground beef
1 lb mild italian sausage
2 Tbsp olive oil
3/4 c each of chopped carrots, celery, and onion
3 clove garlic
1/2 tsp seasoning salt
1/2 Tbsp black pepper
2 eggs, beaten
about 4 oz jack, provolone, mozzarella or asedero cheese cut into 12 cubes
ITALIAN TOMATO SAUCE
1 can(s) 1 can progresso fire roasted tomato recipe starter cooking sauce
1 tsp each of dried basil and oregano
1/4 tsp garlic powder
salt and pepper to taste

Steps:

  • 1. Mix together milk and bread crumbs and set aside to soak. Place carrots, celery and onion in food processor. Pulse till finely chopped. Saute veggies in 2 Tbl EVOO until softened. Grate in 3 cloves of garlic while cooking. Set aside to cool a little.
  • 2. Mix together ground beef, sausage, bread crumb/milk mixture, cooled veggies, eggs and seasonings in bowl until well blended. Heat oven to 425 degrees. Spray a large 12 hole muffin pan with non stick spray. Fill each cavity with meatloaf mixture, packing it in tightly. Make a hole in the center of each. Press a cube of cheese in middle. Pack rest of meat mixture on top to cover cheese.
  • 3. Place muffin pan on foil lined baking sheet to catch drips. Bake 30 minutes. Drain drippings from pan and return to oven for another 10 minutes. If you want them more brown, broil for a few minutes. Serve with Italian tomato sauce. Enjoy!
  • 4. Italian Tomato Sauce: Heat sauce, oregano, basil, garlic powder, salt & pepper to taste...simmer 20 minutes until it reduces and thickens. Serve over mini meat loaves.

½ sweet onion, chopped
1 tablespoon minced garlic
2 pounds ground turkey
1 pound processed cheese (such as Velveeta®), cubed
½ cup crushed buttery round crackers
⅓ cup ketchup
1 egg
1 pinch garlic salt, or to taste
salt and ground black pepper to taste
aluminum foil
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Spray a medium skillet with cooking spray. Add onion and garlic and saute until the onion is tender, about 5 minutes. Set aside to cool.
  • Mix ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, and pepper in a large bowl. Add cooled onion and garlic mixture and mix until well combined. Transfer to the prepared loaf pan. Place the loaf pan on a baking sheet and cover with aluminum foil.
  • Cook in the preheated oven for 1 hour. Remove foil and drain any excess juices from the loaf pan. Top meatloaf with ketchup and cook, uncovered, until no longer pink in the center, about 30 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

1 lb ground beef
1 cup breadcrumbs
6 ounces tomato juice
1/4 cup onion, chopped
1 egg
4 olives, sliced
1/8 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon italian seasoning
1/2 cup mozzarella cheese, shredded

Steps:

  • Mix first nine ingredients.
  • Put half of meat mixture into loaf pan.
  • Top with shredded mozzarella.
  • Then cover with rest of the meat mixture.
  • Bake at 350°F oven for 1 hour and 15 minutes.
  • If you freeze it (raw), double wrap in foil.
  • To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.
