Nachos like you've never seen them before! Chex cereal is the base for these super shareable taco style nachos.

3 tablespoons butter, melted
1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz package)
5 cups Corn Chex™ cereal
2 cups shredded Mexican cheese blend (8 oz)
3/4 cup shredded lettuce, roughly chopped
1 plum (Roma) tomato, chopped
3 tablespoon chopped fresh cilantro
3 tablespoons sliced ripe olives
Salsa, if desired
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper. In large bowl, mix melted butter and taco seasoning mix. Add cereal; toss to coat. Spread mixture in single layer in pan. Bake 3 minutes.
  • Sprinkle evenly with cheese. Bake 3 to 4 minutes or until cheese is melted.
  • Top with lettuce, tomato, cilantro and ripe olives. Drizzle with salsa and sour cream. Serve immediately.

1 can (4-1/2 ounces) crisp cheese ball snacks
3 cups corn chips
2 cups pretzel sticks
1 cup cheese-flavored snack crackers
2 tablespoons taco seasoning
1/2 cup vegetable oil
1/2 cup butter, melted

Steps:

  • In a bowl, combine the first five ingredients. Spread in two ungreased 15x10x1-in. baking pans. Combine the taco seasoning, oil and butter; pour over cereal mixture and toss to coat., Bake at 200° for 2 hours, stirring every 30 minutes. Cool. Store in airtight containers.

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2/3 cup whole milk
1/2 cup light lager style beer
1 teaspoon mustard powder
1/2 teaspoon kosher salt
1/8 teaspoon freshly grated nutmeg
4 ounces Havarti cheese, grated (1 1/2 cups)
2 tablespoons cream cheese
3 jalapeno-Cheddar brats
One 8-ounce bag kettle chips
8 to 10 pickle chips
2 tablespoons chopped fresh dill
Sriracha, as desired
Ranch dressing, as desired

Steps:

  • For the cheese sauce: In a medium saucepan over medium heat, melt the butter with the flour. Cook, whisking continuously, until the roux starts to smell toasty but has not taken on any color yet, about 5 minutes. Carefully whisk in the milk until there are no lumps. Add the beer, mustard powder, salt and nutmeg. Bring to a boil, whisking, then cook until thick enough to coat a spoon, 5 to 7 minutes. Add the grated cheese and cream cheese and whisk until melted. Turn the heat to very low and keep warm.
  • For the cheesy pickle nachos: Score the brats and char in a grill pan heated over medium-high for a few minutes on each side or in a saute pan under the broiler. (This can also be done on the grill outside.) Remove from the heat and slice on a hard bias. Set aside and keep warm.
  • Dump the bag of chips into a serving dish. Top with the warm cheese sauce, sliced brats, pickle chips and chopped dill. Drizzle on the sriracha and ranch dressing and serve immediately.

1/4 cup water
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream, divided
6 oz. tortilla chips (7 cups)
1-1/2 cups KRAFT Shredded Mild Cheddar Cheese
1 green onion, sliced

Steps:

  • Heat oven to 350°F.
  • Brown meat in large skillet; drain. Return meat to skillet. Add tomatoes, water and seasoning mix; stir. Cook 10 min., stirring occasionally. Stir in 1/4 cup sour cream.
  • Place half the chips in 13x9-inch baking dish; cover with layers of half each of the meat mixture and cheese. Repeat layers.
  • Bake 20 min. or until heated through. Top with onions and remaining sour cream.
