CHEESY TACO CEREAL NACHOS
Nachos like you've never seen them before! Chex cereal is the base for these super shareable taco style nachos.

Steps:
- Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper. In large bowl, mix melted butter and taco seasoning mix. Add cereal; toss to coat. Spread mixture in single layer in pan. Bake 3 minutes.
- Sprinkle evenly with cheese. Bake 3 to 4 minutes or until cheese is melted.
- Top with lettuce, tomato, cilantro and ripe olives. Drizzle with salsa and sour cream. Serve immediately.

- In a bowl, combine the first five ingredients. Spread in two ungreased 15x10x1-in. baking pans. Combine the taco seasoning, oil and butter; pour over cereal mixture and toss to coat., Bake at 200° for 2 hours, stirring every 30 minutes. Cool. Store in airtight containers.

CHEESY PICKLE NACHOS

- For the cheese sauce: In a medium saucepan over medium heat, melt the butter with the flour. Cook, whisking continuously, until the roux starts to smell toasty but has not taken on any color yet, about 5 minutes. Carefully whisk in the milk until there are no lumps. Add the beer, mustard powder, salt and nutmeg. Bring to a boil, whisking, then cook until thick enough to coat a spoon, 5 to 7 minutes. Add the grated cheese and cream cheese and whisk until melted. Turn the heat to very low and keep warm.
- For the cheesy pickle nachos: Score the brats and char in a grill pan heated over medium-high for a few minutes on each side or in a saute pan under the broiler. (This can also be done on the grill outside.) Remove from the heat and slice on a hard bias. Set aside and keep warm.
- Dump the bag of chips into a serving dish. Top with the warm cheese sauce, sliced brats, pickle chips and chopped dill. Drizzle on the sriracha and ranch dressing and serve immediately.

- Brown meat in large skillet; drain. Return meat to skillet. Add tomatoes, water and seasoning mix; stir. Cook 10 min., stirring occasionally. Stir in 1/4 cup sour cream.
- Place half the chips in 13x9-inch baking dish; cover with layers of half each of the meat mixture and cheese. Repeat layers.
