CHEESY RICE-STUFFED ACORN SQUASH

2 small acorn squash, halved lengthwise and seeded
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
1/2 onion, finely chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups milk
1 cup shredded cheddar cheese (about 4 ounces), plus more for topping
1/4 teaspoon ground nutmeg
2 cups cooked brown rice
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
Chopped fresh parsley, for topping

Steps:

  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Put the squash, cut-side up, in a large microwave-safe dish with 1 tablespoon water; dot with 1 tablespoon butter and season with salt and pepper. Cover with plastic wrap and pierce with a knife to vent. Microwave until tender, about 15 minutes.
  • Meanwhile, heat the remaining 2 tablespoons butter in a large pot or Dutch oven over medium heat. Add the onion; cook, stirring, until softened, about 5 minutes. Add the garlic and cook 1 minute. Add the flour and cook, stirring, 3 minutes. Whisk in the milk until smooth, then bring to a simmer and cook until thickened, about 5 minutes. Add the cheese, stirring to melt. Add the nutmeg, 3/4 teaspoon salt and a few grinds of pepper. Stir in the rice and spinach.
  • Transfer the squash to a rimmed baking sheet and fill with the rice mixture. Sprinkle with more cheese and bake until lightly browned, about 15 minutes. Top with parsley.

2 acorn squash, halved lengthwise and seeded
1 pound bulk pork sausage
2 tablespoons butter
1 cup diced celery
1 cup finely chopped onion
1 cup chopped fresh mushrooms
1 teaspoon chopped fresh parsley
⅛ teaspoon salt
1 pinch ground black pepper
½ cup shredded Cheddar-Jack cheese, divided
aluminum foil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Slice a small piece off the rounded side of each acorn half so it will sit evenly; place on the prepared baking sheet, flesh-sides up.
  • Roast in the preheated oven until tender, 45 to 60 minutes. Remove squash and reduce heat to 350 degrees F (175 degrees C).
  • Meanwhile, cook sausage in a nonstick skillet over medium heat until until browned and just done, about 5 minutes. Transfer sausage to a bowl and keep warm. Drain and discard grease from skillet. Melt butter in the skillet, then add celery and onion. Saute until onions are soft and transparent, about 5 minutes. Stir in mushrooms and cook until softened, 2 to 3 minutes. Add parsley, salt, and pepper.
  • Stir sausage into the mushroom-onion mixture. Turn off heat and mix in 1/4 cup Cheddar-Jack cheese. Divide mixture evenly amongst the 4 squash halves and sprinkle with remaining Cheddar-Jack cheese. Cover the baking dish with foil.
  • Bake in the preheated oven until cheese is melted, about 15 minutes.

1 (1 pound) acorn squash, halved and seeded
3 tablespoons olive oil, divided
8 medium button mushrooms, chopped
1 medium onion, chopped
3 cloves garlic, thinly sliced
2 sprigs fresh thyme, leaves stripped and chopped
½ cup uncooked white rice
1 cup chicken broth
1 cup shredded Cheddar cheese
salt and ground black pepper to taste
1 tablespoon panko bread crumbs, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Brush cut sides of squash with 1 tablespoon olive oil and place, skin-side up, on a baking sheet.
  • Bake in the preheated oven until tender and lightly browned, about 40 minutes.
  • While squash bakes, heat 1 tablespoon olive oil in a skillet over medium heat; stir in mushrooms, onion, garlic, and thyme. Cook and stir until soft, about 5 minutes. Add rice; cook and stir until rice is coated, about 1 minute. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer, stirring occasionally, until rice is tender and liquid has been absorbed, about 15 minutes. Remove from the heat and stir in Cheddar cheese.
  • Remove squash from the oven, flip over, and season with salt and pepper. Fill squash with rice mixture, sprinkle with panko, and drizzle with remaining olive oil.
  • Return to the oven and bake until heated through, about 10 minutes. Turn on the broiler and broil until panko is brown and crispy, 2 to 3 minutes.

6 squash
1/2 lb bacon
1/4 cup chopped onion
3/4 cup breadcrumbs
1 cup shredded cheddar cheese
paprika
salt and pepper

Steps:

  • Boil the squash 10 minutes until softened.
  • When cooled enough to handle, remove the stems and cut in half lengthwise.
  • Remove the pulp.
  • Cook the bacon until crisp.
  • Saute the onion in 2T bacon drippings.
  • Add crumbled bacon, breadcrumbs and squash pulp.
  • Fill the squash shells.
  • Top each shell with cheese.
  • Broil until melted.
  • Sprinkle with paprika.

WILD RICE, CHERRIES, APRICOTS AND CHEESY STUFFED ACORN SQUASH

Easy nice comfort food. Acorn squash stuffed with wild rice, cherries, pecans and a creamy cheesy topping. I prefer a blend of wild and white for this, but you can really use any rice if you don't like wild rice. And hey, this is the time to take advantage of the boxed rice. Uncle Bens is what I use, but there are many brands available, and I just use the quick cooking kind, but any will work. My favorite is to serve this with roast chicken, but if you want something lighter ... serve with a fresh green salad topped with roasted pears.

2 acorn squash, cut in half and seeds removed
1 (6 ounce) box white and wild rice
1/4 cup dried cherries, rough chopped
1/4 cup dried apricot, rough chopped
1/2 cup pecans, rough chopped
1 cup provolone cheese, shredded (monterey jack or white cheddar will also work)
2 scallions, fine chopped
2 shallots, very fine chopped (you can also use a small onion)
2 teaspoons minced garlic
2 tablespoons olive oil
1 1/2 tablespoons butter
salt
pepper

Steps:

  • Squash -- Drizzle the olive oil the inside of the squash and sprinkle with sald and pepper. Place flesh side down on a baking sheet lined with parchment or even foil in a 400 degree oven, middle shelf for about 30-40 minutes depending on the size of the squash. Just poke with a knife and it should be tender but no falling apart. Remove from the oven so you can add the stuffing.
  • Rice -- As the squash is baking, cook the rice according to the package directions. But as the rice cooks, add if your garlic and shallots, so it will cook right along with the rice. TIP: I always cook my rice in broth rather than water, so if you want to add some more flavor, rather than water, use chicken or vegetable broth.
  • Finishing -- Once the rice is done, remove from the heat and stir in the butter, scallions, cherries, apricots and nuts. Then stuff the squash! I fill each squash half way, and then add a little cheese, add the rest of the rice and top with the remainder of the cheese.
  • Bake -- 400 degrees for about 15 minutes. This will reheat the squash, rice, and melt the cheese.
  • Serve -- ENJOY! 1 squash half per person is healthy and filling. As I mentioned, roast chicken is great with this or go lighter with a salad.

1 large acorn squash
2 tablespoons butter
2 tablespoons onions, chopped
1/2 cup broccoli floret, chopped
1/4 cup mushroom, chopped
2 tablespoons celery, chopped
2 tablespoons walnuts, chopped
1/2 teaspoon brown sugar
1/2 teaspoon soy sauce
1 tablespoon fresh basil, chopped
1/4 cup muenster cheese, grated

Steps:

  • Heat oven to 400°F.
  • Cut squash in half and remove the seeds.
  • Rub the cut flesh with salt and place flesh side down in a baking dish and bake for about 35 minutes.
  • While the squash is baking, sauté onion in butter until clear and add chopped broccoli florets, mushrooms and celery.
  • Sauté about 4 minutes.
  • Stir in walnuts and fresh basil, then sprinkle with brown sugar and soy sauce, adjust seasoning to taste. Toss to mix well.
  • Check baking squash with a fork to see if it glides through the flesh.
  • Stuff with vegetable mixture, top with equal amounts of grated cheese and return to oven for about 5 minutes.

This easy cheesy mince and squash recipe makes a fab family meal

2 butternut squash , halved and seeded
2 tbsp olive oil
500g pack minced lamb
1 tbsp tomato purée
1 tsp ground cumin
100g couscous
100g goat's cheese or feta, crumbled
mint leaves, to serve (optional)

Steps:

  • Heat grill to high. Place squash on a baking sheet, drizzle with 1 tbsp olive oil, season and pop under the grill. Cook for 15 mins, turn and cook 15 mins more until softened. Scoop out the fl esh, and chop.
  • Meanwhile, heat remaining oil in a pan over a high heat. Cook the mince for 10 mins. Mix in the purée, cumin and couscous. Add 100ml/3½fl oz water. Cover, remove from heat. Leave for 10 mins.
  • Tip in the squash with most of the cheese. Fluff up the couscous. Pile into the hollow squash. Top with remaining cheese and grill until bubbling.

3/4 c. water
1 c. orzo pasta
2 c. chicken broth
2 chorizo sausages(fresh/ raw) out of the casing
1 c. fat-free milk
1/2 c. shredded cheddar cheese
1/4 c. grated Parmesan cheese
1/4 c. shredded Mozzarella cheese
salt and pepper
olive oil

Steps:

  • 1) Preheat the oven to 400 F 2) place halved squash cut-side down in a baking dish and add 3/4 c. water. Cover tightly with foil and bake until fork-tender( about 35 min.) 3) Bring the chicken broth to a boil in a med pot and add the orzo. Cover and reduce to a simmer for about 15-20 min, the pasta should be al dente, and will have absorbed some of the broth) 4) Cook up the chorizo in a pan until done.(Crumble it as it cooks) 5) When the pasta is done add the milk and bring to a simmer. Once hot, stir in the cheeses, reserving some to sprinkle on top. 6) Stir the cooked chorizo into the orzo 7) When the squash is tender, remove form the oven and drain the remaining water. Turn the squash so the cut side is facing up. Drizzle with a little olive oil and season with salt and pepper. 8) Divide the orzo mixture between the 4 squash halves and sprinkle each with the reserved cheese. 9)Bake uncovered for about 25 minutes or until cheese on top is slightly brown

1 (2½ to 3 pound) spaghetti squash, cut in half lengthwise and seeds removed
3 tablespoons water, divided
1 (5-ounce) package baby spinach
1 (10-ounce) package frozen artichoke hearts, thawed and chopped
4 ounces reduced-fat cream cheese, cubed and softened
1/2 cup grated Parmesan cheese, divided
1/4 teaspoon salt
1/4 teaspoon ground pepper
Crushed red pepper & chopped fresh basil for garnish

Steps:

  • Place squash cut-side down in a microwave-safe dish; add 2 tablespoons water. Microwave, uncovered, on High until tender, 10 to 15 minutes. (Alternatively, place squash halves cut-side down on a rimmed baking sheet. Bake at 400°F until tender, 40 to 50 minutes.) Meanwhile, combine spinach and the remaining 1 tablespoon water in a large skillet over medium heat. Cook, stirring occasionally, until wilted, 3 to 5 minutes. Drain and transfer to a large bowl. Position rack in upper third of oven; preheat broiler. Use a fork to scrape the squash from the shells into the bowl. Place the shells on a baking sheet. 1 butternut squash (2 lb.)
1 cup water
3/4 cup KRAFT Shredded Sharp Cheddar Cheese
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 Tbsp. chopped fresh chives
1/8 tsp. smoked paprika
6 round buttery crackers, crushed (about 1/4 cup)
1 Tbsp. butter, melted

Steps:

  • Heat oven to 425ºF.
  • Cut squash lengthwise in half; scoop out seeds. Add water to 13x9-inch baking dish; place squash, cut sides down, in dish. Cover.
  • Bake 40 min. or until squash is tender when pierced with knife. Cool 10 min. Transfer squash to cutting board; drain liquid from dish.
  • Scoop out squash into medium bowl, leaving 1/4-inch-thick shells. Add cheese, sour cream, chives and paprika to squash flesh; mix well. Spoon into shells.
  • Combine cracker crumbs and butter; sprinkle over squash. Return to baking dish.
  • Bake 22 to 24 min. or until heated through.
