This fun and hearty pull-apart bread is prime game-day food.

8 ounce bulk Italian sausage
0.25 cup finely chopped onion
3.25 - 3.75 cup all-purpose flour
1 package active dry yeast
2 teaspoon dried Italian seasoning, crushed
1 cup milk
0.333 cup butter
0.25 cup sugar
0.75 teaspoon salt
1 egg
1.5 cup shredded fontina cheese (6 ounces)
1.5 cup shredded mozzarella cheese (6 ounces)
0.5 cup finely shredded Parmesan cheese (2 ounces)
1 cup basil pesto

Steps:

  • In a large skillet cook sausage and onion over medium-high heat until meat is brown, using a wooden spoon to break up meat as it cooks. Drain off fat. Cover and chill sausage mixture until needed.
  • In a large mixing bowl stir together 1 1/4 cups of the flour, the yeast, and Italian seasoning. In a medium saucepan heat and stir milk, butter, sugar, and salt just until warm (120°F to 130°F) and butter almost melts. Add milk mixture to flour mixture; add egg. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.
  • Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover and let rise in a warm place until double in size (about 1 hour).
  • Punch dough down. Turn out onto a lightly floured surface. Divide dough in thirds. Cover and let rest for 10 minutes. Meanwhile, preheat oven to 350°F. Line two 9x5x3-inch loaf pans with parchment paper; set aside. In a medium bowl combine sausage mixture, fontina cheese, mozzarella cheese, and Parmesan cheese; set aside.
  • Roll each portion of dough into a 30-inch-long rope. Cut ropes into 1-inch pieces. Divide one-third of the pieces between the prepared loaf pans. Divide one-third of the cheese mixture between pans. Repeat layers two more times.
  • Bake for 35 to 40 minutes or until golden. Cool in pans on wire racks for 5 minutes. Remove loaves from pans; peel off parchment paper. Serve warm with pesto.

Case in point: this incredibly easy, incredibly cheesy sausage penne casserole. It has all of the ingredients you'd see in a larger 13x9 version of this dish-Italian sausage, pasta sauce, mozzarella cheese-without the overwhelming amount of leftovers.

4 oz uncooked penne pasta (1 1/4 cups)
1 tablespoon butter
1/4 cup Progresso™ Panko Italian style crispy bread crumbs
1/4 lb bulk Italian pork sausage
3/4 cup diced onions
1 1/2 cups Muir Glen™ organic tomato basil pasta sauce (from 24.5-oz jar)
1 1/2 cups shredded mozzarella cheese (6 oz)
Small fresh basil leaves, if desired

Steps:

  • Heat oven to 350°F. Spray 8x4-inch loaf pan with cooking spray. Cook and drain pasta as directed on package, using minimum cook time.
  • Meanwhile, in 10-inch nonstick skillet, melt butter over medium heat. Add bread crumbs; cook 2 to 4 minutes, stirring frequently, until toasted. Pour into small bowl. Wipe out skillet.
  • In same skillet over medium heat, add sausage and onions; cook 7 to 8 minutes, stirring occasionally, until sausage is no longer pink. Drain, if necessary.
  • In large bowl, stir together sausage, sauce and 1 cup of the cheese. Add cooked pasta; toss gently. Spoon mixture into loaf pan. Top with remaining 1/2 cup cheese. Cover with foil.
  • Bake 35 to 40 minutes or until thoroughly heated and cheese is melted. Top with toasted bread crumbs and basil.

1 pound ground pork
1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 ½ cups dry bread crumbs
ground black pepper to taste
¾ cup water
2 cups shredded mozzarella cheese, divided

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.

Spicy Italian Sausage and Cheese Bread image

1 recipe Basic Pizza Dough, recipe follows, or storebought refrigerated pizza dough from a can or tube
2 tablespoons yellow cornmeal
1 tablespoons olive oil
3/4 pound mild Italian sausage, remove from the casings
1 cup diced yellow onions
1 teaspoon chopped garlic
1/2 teaspoons crushed red pepper flakes
3 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh parsley leaves
1 1/2 cups shredded mozzarella
1 egg plus 2 teaspoons water, beaten together
1 cup warm (110 degrees F) water
1 (1/4-ounce) envelope active dry yeast
1 teaspoon sugar
1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil
3 cups bleached all-purpose flour
1 teaspoon salt

Steps:

  • Preheat oven to 375 degree F, and sprinkle 1 tablespoon of the cornmeal onto a large baking sheet pan.
  • Heat the olive oil in a medium skillet over medium-high heat. Add the sausage and cook until browned and no pink is left, about 5 minutes. Add the onions and cook, stirring occasionally, until the onions are softened, about 3 minutes. Add the garlic and crushed red pepper and cook for 1 minute, stirring constantly. Remove the skillet from the heat and add the basil and parsley, stirring to combine. Cool the sausage mixture completely.
  • Sprinkle the remaining tablespoon of cornmeal onto a lightly floured surface and place the pizza dough on top of the cornmeal. Roll the dough into a 10 by 14-inch rectangle. Spread the cooled sausage mixture over the dough, leaving a 1-inch border around the edges. Sprinkle the shredded cheese over the sausage. Brush the 1-inch border of the dough with the egg wash. Starting at a long end, roll the dough, jelly roll-style, into a log shape, pinching the edges closed as you roll. Place the bread, seam side down, on the prepared baking sheet and brush the top of the bread with the remaining egg wash.
  • Bake the sausage bread for 35 to 40 minutes, or until golden brown and cooked through. Allow bread to stand 10 to 15 minutes before slicing. To serve, slice the bread into 1-inch pieces and serve warm.
  • In a large bowl, combine the water, yeast, sugar, and 1 tablespoon oil and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with the remaining 1 1/2 teaspoons olive oil. Place the dough in the bowl and turn to oil all sides. Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours. Use as directed.

1-1/2 cups shredded part-skim mozzarella cheese

1 tube (10 ounces) refrigerated pizza dough

Steps:

  • In a large skillet, saute the sausage; cool. In a large bowl, combine the sausage, cheese, one egg, parsley, onion salt and garlic salt., Unroll pizza dough; roll into a 12x8-in. rectangle. Spread sausage mixture down the center of dough. Bring dough over filling; pinch seams to seal. , Place seam side down on a greased baking sheet; tuck ends under. Beat remaining egg; brush over top. Bake at 350° for 25-30 minutes or until golden brown. Let stand for 5 minutes before slicing.
