1 medium head cauliflower, broken into florets
2 tablespoons extra-virgin olive oil, divided
salt and ground black pepper to taste
3 large cloves garlic
1 ¼ cups shredded sharp white Cheddar cheese
1 (6 ounce) container plain 2% Greek yogurt
1 tablespoon sliced green onions

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Coat cauliflower with 1 tablespoon olive oil. Season with salt and pepper and spread out onto a baking sheet.
  • Chop tops off garlic cloves and place on a sheet of aluminum foil. Drizzle cloves with remaining olive oil and wrap foil to create a pouch; place on the baking sheet with the cauliflower.
  • Roast in the preheated oven, tossing cauliflower halfway through, until tender, about 25 minutes.
  • Remove from the oven and allow cauliflower to cool slightly. Unwrap garlic cloves and discard foil. Reduce oven temperature to 375 degrees F (190 degrees C).
  • Combine 1 cup Cheddar cheese and yogurt in a food processor; blend until smooth. Add cauliflower and squeeze garlic cloves in as well. Process, scraping down the sides as needed, until creamy, 1 to 2 minutes. Transfer to a baking dish and top with remaining Cheddar.
  • Bake until top begins to brown, about 15 minutes. Remove from the oven, garnish with green onions, and serve.

1-1/2 cups gemelli pasta, uncooked
1 Tbsp. olive oil
6-1/2 oz. (1/2 of 13-oz. pkg.) OSCAR MAYER Natural Uncured Roasted Peppers & Onions Sausage, sliced
2 cups small cauliflower florets
1 VELVEETA Fresh Packs (4 oz.), cut into 1/2-inch cubes
1 Tbsp. chopped fresh parsley

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt.
  • Meanwhile, heat oil in large nonstick skillet on medium heat. Add sausage and cauliflower; cook 8 to 10 min. or until cauliflower is crisp-tender and golden brown, stirring frequently.
  • Drain pasta, reserving 1/2 cup cooking water. Add pasta and reserved water to sausage mixture; mix lightly. Stir in VELVEETA; cook 3 min. or until completely melted, stirring frequently. Remove from heat.
  • Sprinkle with parsley.

25 g butter
80 g cashew nuts, roughtly chopped
1 medium onion, chopped
1 garlic clove, crushed
1 medium potato, diced
1 medium cauliflower, divided into florets
850 ml vegetable stock
115 g cheddar cheese, grated

Steps:

  • Melt the butter in a large lidded saucepan and brown the chopped cashew nuts for about 1 minute.
  • Stir in the onion, garlic and potato, cover and sweat for 10 mins, shaking the pan occasionally.
  • Add the cauliflower and stock, bring to the boil, cover and simmer for 20 mins or until the cauliflower is tender.
  • remove from heat and blend in the cheese, allow to cool slightly.
  • Blend half of the mixture and then stir this through the rest of the soup so that you can actually see pieces of cauliflower and nut.

1 head of cauliflower
8 oz cheddar cheese cut into sticks
1/4 c heavy cream
2 clove garlic minced
2 tsp paprika
salt and pepper
1 c mozzarella cheese shredded
fresh dill for garnish

Steps:

  • 1. Place enough water in a large pot to cover the head of cauliflower. Add some salt and bring to a boil. Add the whole head of cauliflower to the boiling water. Boil for 10 minutes. Drain and set the cauliflower on a cutting board.
  • 2. Bore enough holes in the cauliflower to add the cheddar sticks and push into the cauliflower.
  • 3. Mix the heavy cream, garlic, paprika, salt and pepper. Brush on to the cauliflower.
  • 4. Preheat oven to 325 degrees. Place the cauliflower in a sprayed baking dish. Bake for 45 minutes. Add the Mozzarella cheese and bake until melted. Garnish with the fresh dill.
