Make these easy Grilled Cheesy Potatoes on the grill or right over the campfire with these foil packed potatoes.

4 Baking Potatoes (Diced)
1 Green Peppers (Diced)
1 Cup Mushrooms (Sliced)
1 Cup Onion (Diced)
Spices
Oil
Velveeta Cheese

Steps:

  • Start by putting all of your ingredients on greased sheet of foil.
  • Then wrap up and place on the grill.
  • These will cook until fairly tender, then add in the chunks of Velveeta. I typically use about 8 ounces of cheese. (1/2 a block of Velveeta)
  • Next wrap them up and put back on the grill until the cheese is melted and the potatoes are soft.

1/4 cup butter, softened
1/2 cup shredded Cheddar-American cheese blend (2 oz)
2 tablespoons chopped fresh parsley
4 medium baking or russet potatoes
1 tablespoon butter, melted
1/2 teaspoon seasoned salt
1/2 teaspoon garlic-pepper blend

Steps:

  • Heat gas or charcoal grill. In small bowl, mix cheesy butter ingredients until blended. Refrigerate until serving time.
  • Pierce potatoes to allow steam to escape. Brush outside of potatoes with melted butter; sprinkle with seasoned salt. Place potatoes on microwavable plate or in shallow microwavable dish. Microwave on High 6 to 8 minutes, turning once, until fork-tender.
  • Place potatoes on grill over medium heat. Cover grill; cook 8 to 12 minutes, turning occasionally, until crisp and browned.
  • Cut large X in top of each baked potato; press sides slightly to fluff. Top each with cheesy butter; sprinkle with garlic-pepper blend.

You can make these in a large heavy disposable foil pan or wrapped in heavy-duty foil and can also be cooked in the oven, you may adjust the amount of cheeses to taste

6 medium potatoes (thinly sliced)
1 -2 medium onion, sliced
1/4 cup grated parmesan cheese (optional)
1/3-1/2 cup butter (cut into small cubes)
1/2 cup shredded cheddar cheese
1/2 cup mozzarella cheese
1 -2 teaspoon dried parsley (or use 1-2 tablespoons chopped fresh parsley)
1 tablespoon Worcestershire sauce
1 teaspoon seasoning salt (or to taste)
1 teaspoon fresh coarse ground black pepper (or to taste)
1/2-1 teaspoon garlic powder
1/3 cup canned chicken broth

Steps:

  • Prepare a 20 x 20-inch piece of heavy-duty foil or a 13 x 9-inch disposable foil pan (I prefer to make these in a pan).
  • Generously spray the inside of the foil or pan with cooking spray.
  • Toss the potatoes with sliced onions and Parmesan cheese (if using) then place on top and in the middle part of the foil, or place into the foil pan.
  • Sprinkle the butter cubes over the potatoes.
  • In a bowl combine cheddar and mozzarella cheeses, parsley, Worcestershire sauce, seasoned salt, black pepper and garlic powder; sprinkle over the potatoes and onions.
  • Slightly wrap up the ends of the foil then drizzle the broth over the top of the mixture.
  • Seal up the foil completely.
  • Make one or two very small pin-holes in the top of the foil to allow heat to escape (or cover the foil pan tightly with a sheet of foil, then make a small hole/s in the top of the foil).
  • Place the foil packet or foil pan on the grill, cover with the grilling lid and cook for about 40 minutes or until the potatoes are tender.

8 slices bacon, cut into 1-inch pieces
3 russet potatoes, thinly sliced
Kosher salt and freshly ground black pepper
8 ounces Cheddar, grated
2 tablespoons sour cream
3 scallions, sliced

Steps:

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
  • Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
  • Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

4 cups frozen potatoes O'Brien with onions and peppers (from 24-oz bag)
1 tablespoon vegetable oil
1/2 teaspoon seasoned salt
3/4 cup shredded Cheddar cheese (3 oz)

Steps:

  • Heat gas or charcoal grill. Spray 1 (18x13-inch) sheet of heavy-duty foil with cooking spray. Place potatoes on center of foil. Drizzle with oil; sprinkle with seasoned salt.
  • Bring up 2 sides of foil over potatoes so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packet on grill over medium heat. Cover grill; cook 30 minutes, turning once. Carefully open packet; sprinkle cheese over potatoes. Cover loosely; let stand 4 to 5 minutes or until cheese is melted.

What a great way to have potatoes off the grill. Great for a camping trip! If no is grill available you could use a campfire! This was so yummy.

2 large red potatoes
3 tablespoons butter, sliced fairly thin
2 tablespoons onions, minced
1 garlic clove, minced
salt and pepper
1/4 cup parmesan cheese, grated
1/4 cup mozzarella cheese, shredded
1/4 cup cheddar cheese, shredded

Steps:

  • You will need 2 large pieces of heavy duty aluminum foil.
  • Spray the bottom layer of the foil packet heavily with non-stick spray.
  • Scrub potatoes well and slice fairly thick.
  • Layer in a slightly overlapping way on top of one of the pieces of foil, but not piled up in a bunch.
  • Sprinkle the onion and garlic over the potatoes.
  • Season liberally with salt and pepper.
  • Layer slices of butter all over the potatoes.
  • Sprinkle the Parmesan, Mozzarella and Cheddar cheese on the potatoes.
  • Lay the other piece of foil over the potatoes and fold all the edges in all the way up to the potatoes inside the packet. You don't want the top layer of foil to be touching the cheese inside too much so do not mash it down.
  • With a small knife or scissors cut 3 tiny holes in the top center of the foil packet.
  • Lay packet on a hot grill and cook over medium heat for about 30 minutes.
  • Remove and let sit for about 5 minutes.
  • Be careful when tearing off the foil top because steam could burn you.
