1 pound ground beef (80% lean)
2 cups fresh salsa
1 teaspoon taco seasoning mix
⅛ teaspoon ground black pepper
1 ½ cups hot water
1 ½ cups elbow macaroni
1 cup milk
1 (8 ounce) package processed cheese food (such as Velveeta®), cut into cubes
4 ounces shredded sharp Cheddar cheese

Steps:

  • Heat a large, deep skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Return skillet to heat. Stir salsa, taco seasoning mix, and black pepper into the beef; simmer the mixture until hot, about 5 minutes.
  • Stir water, macaroni, and milk into the beef mixture; bring to a boil, reduce heat to medium-low, place a cover on the skillet, and simmer the mixture until the pasta is tender, about 10 minutes.
  • Stir cheese food and Cheddar cheese into the pasta mixture; cook until the cheese melts completely, 5 to 7 minutes.

This Cheesy Salsa and Chicken Pasta Skillet is warm, hearty comfort food that's ready in 30 minutes! Perfect for busy weeknights when you want to get your protein and veggies in without a lot of preparation!

2 C uncooked whole grain pasta of your choice
1 tbsp olive oil
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
1 tsp salt
1 tsp onion powder
1/4 tsp black pepper
1 garlic clove, minced
1 1/2 C chunky salsa of your choice (If your salsa doesn't have much liquid, you may need an additional 1/2 cup of salsa)
1 C fresh or frozen and thawed sweet corn
1/2 C chopped green pepper
1/2 C chopped red pepper
1 C cooked black beans
1/4 C red onion, coarsely chopped
1 1/2 C shredded cheese, I used a combination of cheddar and mozzarella

Steps:

  • Cook pasta according to package directions. Remove from heat. Drain and cover.
  • While pasta is cooking, drizzle olive oil in a large skillet. Add chicken and sprinkle with salt, onion powder, black pepper, and garlic. Cook over medium-high heat until lightly pink.
  • Stir in salsa, corn, green pepper, red pepper, black beans, red onion and 1 1/4 cup cheese. Bring to a boil and allow to simmer on medium-low heat for 5 minutes, or until chicken reaches 165 degrees F.
  • Stir in pasta. Sprinkle with remaining 1/4 cup cheese and let stand for 5 minutes to allow sauce to thicken before serving.

1 (8 ounce) package elbow macaroni, cooked according to package directions and drained
3 dill pickles, finely chopped
3 hard-boiled eggs, finely chopped
2 cups frozen peas, thawed
3 celery ribs, sliced thinly
1/2 medium onion, finely chopped
8 ounces sharp cheddar cheese, diced into 1/4 inch cubes
1 cup mayonnaise (can use low-fat Hellmann's or Kraft)
1/2 cup milk
1/4 cup sugar or 1/4 cup Splenda sugar substitute
1/4 cup cider vinegar
salt and pepper

Steps:

  • Gently toss all the salad ingredients together in a large bowl.
  • Set aside.
  • For the dressing, combine the mayonnaise and milk.
  • Then add the sugar and vinegar.
  • Stir well, and season with salt and pepper to taste.
  • Pour the dressing over the salad, and toss gently to combine.
  • Refrigerate at least 2 hours Overnight is even better.

3/4 lb lean Italian turkey sausage, casings removed
1 large onion, chopped (1 cup)
1 lb fresh mushrooms, sliced (6 cups)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
1/2 teaspoon dried basil leaves
1 package (6 oz) sliced turkey pepperoni
1 bag (8 oz) shredded reduced-fat Italian cheese blend (2 cups)

Steps:

  • Heat oven to 350°F. In 5-quart Dutch oven, cook pasta as directed on package, omitting salt. Drain; return to Dutch oven.
  • Meanwhile, in 12-inch nonstick skillet, crumble sausage. Cook over medium heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain if necessary.
  • Add onion and mushrooms to sausage in skillet; cook 7 to 8 minutes, stirring frequently, or until vegetables are tender. Stir in tomatoes; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes or until slightly thickened. Stir in pasta sauce and basil. Heat just to boiling.
  • Add sausage mixture, pepperoni and 1 1/2 cups of the cheese to pasta in Dutch oven; stir until well mixed. Spread in ungreased 13x9-inch (3-quart) glass baking dish. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down.
  • Bake 30 minutes or until bubbly and thoroughly heated. Remove foil; sprinkle with remaining 1/2 cup cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted.
